Last night was the first night this week that we had take-out for dinner. We ended up with sushi; so this Diner is still on the healthy food, health-kick band wagon.

WFDT? I have no idea. But I might pull out some hamburger patties to defrost for DS and myself. I'll go get some vegie patties for DH......could make a reasonably healthy meal.

Kung Pao Chicken

Ingredients

1 pound skinless, boneless chicken breast halves - cut into chunks
2 tablespoons white wine
2 tablespoons soy sauce
2 tablespoons sesame oil, divided
2 tablespoons cornstarch, dissolved in 2 tablespoons water
1 ounce hot chile paste
1 teaspoon distilled white vinegar
2 teaspoons brown sugar
4 green onions, chopped
1 tablespoon chopped garlic
1 (8 ounce) can water chestnuts
4 ounces chopped peanuts

Directions

Marinade: Combine 1 tbs wine, 1 tbs soy sauce, 1 tbs oil and 1 tbs cornstarch/water mixture and mix together. Place chicken pieces in a bag and add marinade. Toss to coat and place in refrigerator for about 30 minutes.
Sauce: In a small bowl combine 1 tbs wine, 1 tbs soy sauce, 1 tbs oil, 1 tbs cornstarch/water mixture, chili paste, vinegar and sugar. Mix together and add green onion, garlic, water chestnuts and peanuts. In a medium skillet, heat sauce slowly until aromatic.
Meanwhile, remove chicken from marinade and saute in a large skillet until meat is white and juices run clear. When sauce is aromatic, add sauteed chicken to it and let simmer together until sauce thickens.

Quick Chicken & Dumplings

½ cup milk
1 cup frozen green beans, corn, and carrots
1 cup cut up cooked chicken
2 cans Cream of Chicken Soup
1 cup Chicken Stock (as needed)
1 cup Bisquick mix
1/3 cup milk

Heat the milk, frozen vegetables, chicken and soup to a boil in a 5-quart saucepan, stirring frequently. Add chicken stock as needed to reach desired consistency.

In a separate bowl stir Bisquick mix and 1/3 cup milk until soft dough forms. If needed add more milk 1 tsp at a time.

Drop dough in eight spoonfuls onto chicken mixture. Cover and cook on low to medium heat for 10 minutes.

This is perfect for the two of us. There might be half a serving leftover. Next time I am going to try adding celery to this too.

WFDT? I have no idea. But I got some snapper fillets from the market last weekend. Might pull them out of the freezer and work out dinner.
 
Tonight it will be a great Prime Rib, Baked Potatoes and Green Beans! :thumbsup2 We got to the room pretty late. Guess what we were doing? :rolleyes1....Kimmar, I need your smiley guy rolling/tapping his fingers on the counter with the other had holding up the head! :rotfl2:

It was almost 7PM by the time I got dinner in the oven, but our body clocks are so out of whack and we have been eating at all hours, it won't matter!

BTW is it wrong to eat Cow while you are watching Ankole Cattle out your window? :confused3
