morning all...

Well dinner was Chicken soup, but I need something to eat now.... Breakfast should be something to hold me until lunch.

How about Greek Yogurt with homemade peach preserves, and some honey bunches of oats sprinkled in?

Yum! That sounds really good!!! I just had a protein bar and coffee while freezing my bum off at the ice rink. DS11 figure skates on Saturday mornings.... BRRR!!!!

We had meatball subs from Subway last night, so the stuffed peppers will probably be for tonight.
 
Quiche for lunch.

Grilled salmon for dinner.

Boring... I've got to figure out some new stuff to cook. :(

Quiche and Grilled Salmon does not sound boring to me, Tracey.

I'm heading out to have lunch with relatives. I doubt that we'll be hungry for dinner after that. So WFDT? Something light. Might put some soup on if I need to. I have a quick standby soup recipe.....

Quick tomato soup
Tinned Tomato, 2 cans
Lentils, 1 can - drained
1 onion - diced
Herbs and spices - whatever combination you like
Water, 1 - 2 cups
Stock, 1 - 2 teaspoon


Heat a pot on a medium flame.
Fry the onions in a little oil until just wilted.
Empty the contents of the tinned tomato, juice and all into the pot, add the water, stock and herbs/spices.
Cook for about 30 minutes.

Add the drained lentils and cook for another 10 minutes.
Season with salt and pepper to taste.
 
Tonight was pizzza.

Made the whole wheat crust, used fat free blue cheese dressing for the sauce, shredded chicken breasts drenched in hot suce, layer on crust and blue cheese.

Sprinkled with onions and mozzarella, cooked till perfect...21 minutes in 400 degree oven on bottom rack with pizza stone.... Oh so good

Dinner tonight was a bit of this and that.

I bought some chinese BBQ Roast pork to have with some leftover beef curry that my relative passed on to me. Cooked some rice and stir fried a vegetable and tofu dish for DH.

Back to the work routine tomorrow.
 
We. Ate McRibs from McDonald's. The night before was Hometown Buffet. Tonight I am making meatloaf.
 
...wfdt? Roasted turkey thighs wrapped with bacon, garlic mashed potatoes, corn, and broccoli....
