The What's for Dinner Thread- June 2012 (recipe index in OP)

Last night I went out with my mom and my brother's family to the local burger/seafood joint. Had the whole belly clam dinner. ::yes::

Today we're heading over to our good friends, across the street for their big Memorial Day picnic. I'm bringing the baked beans and two kinds of brownies (rocky road and cream cheese). They're doing the traditional burgers/dogs/sweet & sour keilbasa, chicken, all kinds of salads, sides dishes, tons of desserts and they're also roasted pig. :banana: Then we end the night with fireworks.

There's usually a TON of food leftover by tomorrow, so it's been a tradition that we go over there for the afternoon and nosh on all the goodies.
 
We've been so busy we have been eating out a lot. Last night I didn't even have dinner beacuse I ate too much for lunch and had indigestion. I have to make a turkey for Olga to eat while we are on vacation as well as get some services installed at the new house. Plus we are taking a drive to look at some furniture.

Look for the update on my house thread about the past two busy days. We had Teppan for dinner on Friday night and I plan on eating that for breakfast today. I have no idea how today will go and when I can make the turkey. But I better get a move on the day!
 
PIO - both those dishes look tasty. I would love the Ziti, sounds meaty and yummy. Your Tiramisu is very different from mine but it sounds good. I use brandy as the alcohol and put chocolate shavings in the layers. I think I also put a splash of the coffee mix in the mascarpone. I'm not sure I ever used raw eggs or cream in mine :scratchin Still sounds good.

....I didn't forget about the ziti weekend...I really haven't been able to cook over the entire weekend, because we had our annual carnival at our church [my DH runs the entire thing] and I was stuck working the ticket booth the whole time...I only left for 15 minutes or so, around 6PM to feed the dog, give her her shot and meds, and let her out to go to the bathroom...

PIO ~ Here in the USA we celebrate Memorial Day on the 4th Monday of May. It is a time we honor our Veterans and we decorate the graves of our loved ones. Some people call it Decoration Day. The cemeteries are always beautiful!!

Alison - Pack girl pack. You have a lot to do in such a short time to do it. I truly don't know how you always get it done. Bless your heart!!

June came in on Friday morning and said she rearranged her weekend and was ready for Smudge. We took her out on Friday night. June was so tickled to have her. Her GS Sam is home from college for the summer and is staying with June so between the two of them they were like little kids. They were so excited. I don't think Smudge walked on the floor for days. They love her. It was sort of hard to say goodbye but we know she is going to a good home.

On Saturday we made the rounds and decorated graves. It is a hard long day. We are always glad to go but nice when it is over. KWIM. Sunday was church. I did remember to bake my Ziti (recipe will follow) it was really yummy. Monday we pretty much stayed in the house until late afternoon when we went and played 18 holes of golf. It was HOT hot hot. We did break down and turned the AC on last night.

WFDT ~ Grilled Teriyaki Chicken salads, with all the extras.

Here is the recipe for my Ziti - Enjoy!!

Creamy Baked Ziti

4 cups of ziti pasta uncooked
1 jar (24 ounces) spaghetti sauce
1 can diced tomatoes, un drained
6 ounces cream cheese cubed
3/4 cup sour cream
1 package of three cheese/Mozzarella - about 2 cups
1/3 cup parmesan Cheese

Heat oven to 375
Cook pasta in large saucepan. Drain.
Add sauce, tomatoes and cream cheese to same pan and cook on medium Heat for 5 mins. until cream cheese is melted and mixture is blended,
Return pasta to pan and mix well.
Layer 1/2 the pasta mixture n a 13x9 baking dish, cover with layers of sour cream, 1 cup mozzarella and remaining pasta mixture.
Top with remaining mozzarella and Parmesan.
Bake 20 mins. or until heated through and golden brown.
ENJOY!!

Thanks everyone for the encouragement. I will finish packing today and get some suitcases loaded in the car. These Ziti recipes sound good. I cooked a turkey yesterday because Olga needs food for the next month. Darcy helped me yesterday and we got about 10 little bags of food. I still have a breast, leg and thigh, wing and carcass to clean today.

Ellen you are such a good person for decorating all those graves. Im not sure I could even do it. So glad Smudge has a good home. I can't wait to bring my babies into their new house..

I would say one more sleep until WDW, but I don't think we're going to sleep tonight. We get home from band at 11PM and have to leave for the airport at 3:30AM. I think I'll load the car, make myself a lambuger and perhaps lay down on the massage bed for a little bit and then we'll go. :faint: I can't wait to be at WDW!

Last night was brussel sprouts, green beans, red bell peppers, and Cucumbers.

David had the same with 6 oz of chicken

Tonight is cabbage, green beans, cucumbers,and bell peppers. David gets pork chop added, 5 oz.
