The What's for Dinner Thread- June 2012 (recipe index in OP)

Pigletgirl - you definitely did good, brain injuries are nothing to take lightly. Better to check it out than let it simmer into something worse. I know from experience.

WFD? We have no plans, but we do have a late lunch at Sanaa planned for today. We may not be hungry come dinner time!

Well it is Monday again and I can't believe it. Wow, the weekend went so fast. It always does when Matthew is home but this time more so. Friday Dr. Appt. went ok. More tests but the Dr. is not real concerned. I will be just glad when we have some answers. Thanks for the prayers, keep 'em coming if you don't mind.

Saturday we spent all day at the Country Club. We all had a ball, but were home and in bed by 10. I think it was all that fresh air - we were pooped. Such party animals.

Sunday was Church then out to breakfast and home to watch the golf game. We had some really severe storms and got over an inch of rain. Pea sized hail but no damage to the crops. Thanks goodness. Tomorrow we might not be so lucky. They are forecasting some wild weather for us. Stephanie and Lilly came for dinner (Marty was working and Elizabeth and family were still on vacation). Matthew left early as he wanted to see Katelin.

We are headed to Lincoln tonight as soon as Doug gets off of work. We will stay the night with Matthew as I have a Dr. appt. in Omaha tomorrow morning. We are coming back to Lincoln to take Matthew and Katelin to dinner. Doug will finally get to meet her. She is such a nice girl. I am anxious to see what Doug thinks.

Hi everyone! Just popping in to say, "Hi". We're having Le Cellier for dinner tonight. I hope everyone is well!

What are we cooking for June dinner? How about something in a tubular shape? Such as crepes, enchiladas or manicotti? Or is that too vague?

I can do that.. it would be enchiladas for me...
 

Hi all!!

I just had to pop in and tell you all thanks for the prayers for Matthew. They worked - you all are amazing!!

The Dr. just called Matthew and the test results are normal. The reading before was either a false/positive or it was imputed wrong. Either way his reading is in the normal range and we are not to worry about it. They will test again in a year but all is well. Thank goodness!!

Hi everyone!

Had a nice weekend here. Went too the pool a few times and then ended up in the ER with DD Saturday night. She fell and hit her head on the fireplace. It created a major goose egg and being the overly anxious mother I am, I wanted her checked out, ASAP. She has her 12 month doctor appt on Thursday so she'll be seen again. I didn't sleep much that night.

Anyway, we went to the botanical garden this morning and I love seeing all the tulips! They're stunning.

Brandi - thanks for that recipe. I'm going to try it out. I suspect that a good stock makes all the difference where lentils are concerned.

So, DH and I did make it to the Good Food and Wine show. No cameras allowed, which was a shame. But then again....maybe not.
It was a show where there were all sorts of booths selling food. We had a lot of tea, cheese, spices, wine, general groceries etc. A lot of the people there were small business, mostly start-up online businesses. We discovered a pre-packaged spice/curry mix business. The mother is from India and she mixes up the curry mixes for the different proteins or vegetarian option. No additives or anything like that. I bought some to try out.

We went looking for new things like that....where there would be no additives or preservatives, low sugar content etc. Seems like the small start-up businesses that we looked at are all heading in that direction.

We found a few medium sized operations that are starting to break into the smaller supermarkets and provedores around town. We were interested in a few but didn't buy anything at the show because we realised we could get the produce near us.

We also found a new (herbal) tea business and got some of the tea leaves. Hopefully, I'll be enjoying many cups of tea.

I love to try different teas, but now that I am caffeine free, it has become a little harder to find... So did you try some, did you like it?

The show sounds like lots of fun!

....well, my penne with vodka sauce came out quite delicious, but 2 of my DSs didn't want that, so they made turkey burgers on the grill with melted monterrey jack cheese, sun-dried tomatoes, and guacamole on potato buns...
 
Good morning from storm ravaged Nebraska.

WOW, we got hit really hard yesterday. We got up yesterday morning and it was so hot and muggy at 9am we knew something was going to happen. We had been warned for 3 days that it was going to be dicey. We headed into Omaha, had my appointment and then went to the mall for awhile. We were sitting having a snack around 2 and the clouds, rain and wind hit. We hightailed it right out of there and left for Lincoln. This was a really weird weather day. It was huge. There were bands of weather that would hit all day. We had softball hair, 90mph straight line winds, 7 tornados, and upwards of 5" of rain in the state. We were pretty lucky as we seemed to be ahead or behind of the worst all the way. But the pictures this morning are widespread and devastating.

We met Matthew and Katelin for dinner and we had a great time. Doug agreed - he liked her also. We sat till around 8 and again the weather was getting nasty so we headed for home. Got home around 11:30. We ran into some torrential rain and quarter sized hail a couple of times but nothing like it could have been. Round 2 is headed our way for today - but nothing like yesterday!!!

PIO ~ Your adventure to the Food and Wine show sounds amazing. I would give anything to have something like that here. Lincoln has an awesome Farmers Market every Saturday and whenever I am there I try to go.

Brandi ~ My Dr. appt. went good, thanks for asking.

pigletgirl ~ how scary about DD. Hopefully she is doing ok and back to her happy 1 year old self. Never worry about being a protective Momma, she doesn't have anyone else to depend on. You are just being a good Momma. Good for you!!

Kimmar ~ Wow your penne sounds amazing, but the turkey burgers do to. YUM!

Alison ~ I am so glad you and Fran are having a great time. Good for you, you both so deserve it!

Yep, DD is back to her old self. She falls all the time! I really have to be vigilant about keeping the house baby proofed. I am so thankful it wasn't more serious.

Ellen - I've heard about what's gone on in Nebraska. Glad you all are safe! These spring storms can be intense.

PIO - that food exhibition sounds like it was wonderful. Too bad they wouldn't let you take photos. Don't they know who you are and that you have people living vicariously through your photos? :confused3

:wave2: I'm new to this thread, but not to cooking. WFDT? Shells and hot italian sausage in marinara sauce with whatever cheeses I find in the fridge that will go, one of my husband's favorites.
 
Update

WFD has changed. DH just called and he's working late. So, he's getting leftover jambalaya. I'm having a grilled lean hamburger steak with cheddar cheese and mango salsa, and a green salad with balsamic vinegarette dressing.
 
Ellen - I hope that you're okay. Sounds like a scary situation in the mid-west right now with all that rain and wind. Take care of yourself and the family.

Brandi - There were a bunch of teas with rooibos tea as the base. Have you had rooibos? I don't think it has caffeine in it. I ended up getting one that had rooibos, hibiscus and lemon (or was that lemongrass?) in it. There were other flavours but those were the ones that shone through.
There were also a bunch of teas with green tea as the base. We also picked up a sampler of 5 different green teas.



Alison - I know you're having a great time. Enjoy your WDW meals.




WFDT? I've taken out one of the curry spice packets and checked the recipe. It's Goan Fish/Shrimp curry for dinner tonight. Hope it turns out okay.
 
Welcome YoYo! It will be fun to have you around! On the kast weekend of the month we all try to cook a similar dinner and share recipes amongst ourselves. It's fun.

Ellen, so glad you're oK. Hope the weather is treating you OK today.

Thanks for all the wishes of fun for Fran and I. Tonight is our last hurrah. We just finished dinner at Be Our Guest. I have no room for dessert and it's all it's cracked up to be. Luckily Fran saved room so I can tey the Gray Stuff.
 
Which reminds me......anyone have anything they'd like to cook for the last weekend in June?

I won't be in town or on-line for that week.

pigletgirl ~ I remember last year when Liam (my GS who is now 2) was going through a stage of running into things and falling, Elizabeth threatened to keep him in his helmet he wears when they go for bike rides. :rotfl:

So any bets on the Belmont this weekend? I really hope California Chrome can do it. Another triple crown would be awesome!!

Nice and boring here today. I think we have had enough excitement for awhile. We went over last night to see the boys and say goodbye to Jay. He is flying out to California on Sunday for a month of training. I felt so sorry for Elizabeth but she told me - at least it's only for a month and not to Iraq for 2 years. I guess she is right!! We will be very close for anything they will need.
