Last night was Pizza and salad.

Today I made Almond milk for the very first time!...it is super easy to do, and I will do it more often now.

I am drying out the Almond meal right now, and looking for something fun to do with the meal!

DS & I can't do lactose, so we go thru a lot of almond milk. I didn't know you could make your own.
Was it a lot of trouble?
Do you save money by making it yourself?

We had home made burgers for dinner last night. Not sure what I'll do for dinner tonight but I did notice that I still had some fish fillets in the freezer yesterday. So I might take them out and work out what to do with them a little bit later in the day.
It's Monday here and back to the start of the working week. *sigh* Where does the weekend go?

Brandi- my son told me tonight he had stopped using most dairy products and had started swapping almond milk for milk. I a also interested in how you make it. He told me that his OCD and ADD was getting out of control, so he did some research and learned that dairy contributes. Personally I think he was way OVER CAFFEINATED, but when he was a kid I had to stop anything with preservatives and artificial colors. He was much more comfortable after that.

Last night we had take away Chinese at Welby's and tonight the kids all came over and we had pizza.

Tomorrow I will be home early enough to make a nice dinner so I have a bone in pork roast in mind.

Fish Stew



Time to get back to simple home cooked meals. I had some John Dory fillets in the freezer and decided to cook it for dinner tonight. I guess you could call this a fish stew.



My starting ingredients:

  • White Fish, 400 - 500 g
  • Potatoes, 3
  • Carrots, 2
  • Leek, 1
  • Fish Stock, 500 ml (I did add some hot water to cover the vegetables)
  • Snow peas, a decent handful
  • Stock cube, for extra flavour
  • Salt and Pepper to taste






Prepare the vegetables by peeling the potatoes and carrots; and cutting into chunks. Wash and slice the leek.






Wash and slice the snow peas.






Heat the fish stock in a medium pot until boiling. I added a little more hot water and also one stock cube to the stock at this stage.






Cook the vegetables by placing the carrots in the boiling stock for 2 - 3 minutes.






Add the leek and potatoes and cook for a further 15 minutes.






Slice the fish into chunks.






Place the fish into the pot when the potatoes and carrots are tender.






Add the snow peas and cook for a further 3 - 5 minutes or until the fish is cooked. Season with salt and pepper.






Dinner! You can serve this with crusty rolls or with rice.

Kimmar - You're on a No Peppers diet?? :scratchin That sure sounds a lot easier to do than the No Sugar diet I'm going on at the end of the month. Sadly, DH will make me stick to No Sugar and not accept any substitution of any kind.


Ellen - So sorry about the people that lost their house in a fire. Enjoy your weekend. It sounds like fun.

The temps have cooled down here. It's in the 60's right now and we're only expecting it to get to 70's today. Much better than the 110 temps of the last 4 days. I woke up early to water the garden and open up the windows and doors today. So glad it's cooler.

WFDT? There's a free entertainment event in my local park. If the weather is okay, we're heading down there to enjoy some music. There are usually food vans selling stuff at one of these events; so DH and I thought we'd buy some food. We'll take some picnic snacks and water with us but it'll be nice to just take a look at the food on offer and just buy some.

nutritional yeast has a slight cheesy flavor to it, so I made fat free vegan cheese sauce, that turned out amazing, to pour over the cauliflower. Then we used it on taco's, David is loving this.

I made mock potatoes last night with Cauliflower and put the Yeast and Miso in it to flavor them and it turned out great!

It is super easy and I really don't know if it saved me any $$ but I can make only what I need, and not have to store too much at any time.

David and I are trying to cut out as much Diary as we can, it has been linked to my allergy problems and my post nasal drip.

So the Almond Milk is super easy.

I take raw organic almonds (amazon) 1 cup and soak them (the longer you soak the creamier the milk). I soaked over night, but the next time I will try and go two days. They plump up very nicely. The should be almost squishy.

Now here is the hard part, drain the water, rinse the nuts in cool water, place in blender, place 2 cups filtered fresh water in blender and blend on high for 1 minute.

Now you have almond milk.

Strain the nuts from the milk, I used a fine mesh strainer and a cheese cloth, drained into a bowl, then squeezing the milk from the cloth.

Put milk in fridge. It will last up to 4 days in a sealed container.

The nuts left over, I put on a baking sheet and put in the oven to dry it out. I had read that you could bake with this Almond Meal or add it to anything, it is just almonds. So I took about a 1/2 cup of meal (after it was dry) and added 1/4 cup of the milk back to it, with a little splenda and dash of salt, mixed really good in a mini food processor and made "almond butter" and David ate it all, saying it was wonderful!
 
....WFDT? Yesterday, I made pernil (roast pork shoulder with cracklin'), rice, black beans, and tostones[ fried gren plantains], since we had company who came over to watch the NFL games.....there are leftovers, so I am heating that up for dinner tonight....

I am making pork shoulder today, but I'm putting it in a crock pot with some homemade BTW sauce that I've had in the freezer.

PIO the fish stew sounds good and a nice use of frozen fish.

Brandi - you are being so healthy!!! I'm trying just to eat at home to control the calories, but you're even making all your own foods!

Last night for dinner we had Black Bean soup (Meatless Monday)

I also went Diary free yesterday.

Wednesday will also be meatless and diary free for me, I am hoping that I can stick to it and lose the last few pounds.

I am making another batch of the Almond milk today, this time it soaked for 2 days, so I will let you all know if there is much difference.

Tonight is a balsamic roasted pork loin, with roasted broccoli, and the cheese sauce!
