Lemme guess. You are the picky eater in the family.

....actually, I am the LEAST picky eater....I just didn't know what I had a hankerin' fer...turns out it was for a Philly Cheesesteak sammich! No peppers though - I AM on a diet.....:snooty:

I need dinner suggestions...
I have the flu! So nothing sounds good... I'm thinking baked potatoes. I usually make them in the microwave, but I want to do them in the oven... Just can't remember how???

Sadly, I had norovirus on Christmas Day & the last thing I ate was grilled chicken. I don't think I'll ever be able to eat anything related to a chicken again, so no soup for me!!! ;-)

....so.....I'm guessing matzo ball soup is out of the question then....popcorn::

I'm ashamed to admit it, but I don't know what that is?!?!? Does it have chicken balls in it? :eek:

....it's basically a chicken broth with a matzo ball in it (roughly the size of a very large golf ball - or very small baseball). Matzah meal is made from unleavened wheat, barley, spelt, rye and oats. It is mostly traditionally eaten by Jews during the week-long Passover holiday. Here's what I found:

There are numerous explanations behind the symbolism of matzah. One is historical: Passover is a commemoration of the exodus from Egypt. The biblical narrative relates that the Israelites left Egypt in such haste they could not wait for their bread dough to rise; the bread, when baked, was matzah. (Exodus 12:39). The other reason for eating matza is symbolic: On the one hand, matza symbolizes redemption and freedom, but it is also lechem oni, "poor man's bread". Thus it serves as a reminder to be humble, and to not forget what life was like in servitude. Also, leaven symbolizes corruption and pride as leaven "puffs up". Eating the "bread of affliction" is both a lesson in humility and an act that enhances the appreciation of freedom."

Brandi ~ Thank for the suggestion for the cheese. The cream cheese really was good in it and it was fat free so I didn't feel too bad. ;)

This week just seemed to fly. I can't believe it is already Friday. I am pretty much caught up so let the weekend come, plus I have Monday off for MLK day. So a nice 3 day weekend. We decided probably on Wednesday, why not go to Lincoln to see Matthew. We haven't seen him since Christmas and he has Monday off also. So that is what we are going to do. We also found out last night the Ethan is in a wrestling tournament in Lincoln so that was an added bonus. Should be a fun weekend. I am ready to get out of Dodge for awhile.

The wind has finally calmed down. Good grief we had sustained winds of 45 mph and gust upwards to 65. It was a mess here and to top it off some people in the church lost their house to a fire. Real sad, but they are ok as well as their pets so that is good.

....in hindsight, it WAS a good choice....soft, fresh roll, perfectly cooked caramelized onions, nicely done steak, just the right amount of melted mozzarella cheese - all in all, I'd say it was a winner!

....well, the soup that I had the other day didn't actually have any pieces of chicken in it. It was a lightly-flavored chicken stock with small thin egg noodles and the matzah, of course....really nice!
 
Brandi - I have (white) Miso Paste, Tamarind (paste and skins) and arrowroot powder in the house. Nutritional yeast??? I'll have to look out for it. Thanks for the quinoa recipe.


Ellen - I am almost dying in this heat. 4 days of over 40 C heat is taxing on everyone's nerves. I've ended up pulling a mattress on the floor in the family room and sleeping with the AC on. The change is due tonight. We're back to 23 C tomorrow. :banana:


Nancy - I haven't substituted sugar for coconut sugar. I will substitute for Stevia. We also use palm sugar.




We've had visitors! Our ex-neighbours 3 doors down (on the other side of the street) did a tree/sea change thing about 7 years ago. They moved up to Queensland to a tiny community of less than 5000 people (Melbourne is hitting 5 million). Well....they're down for a 10 day vacay and they stopped in last night. I had planned a meal for dinner....and wouldn't you believe it? They wanted take-away pizza. :laughing:
Turns out they miss junk food. :lmao:

Nutritional yeast has a cheesy taste to it, and adds that flavor to many dishes...

Wash potatoes really good, rub with olive oil, sprinkle with salt and place in oven at 325 degrees for about an hour, check around 40 minutes and bake until done!

Kimmar - You're on a No Peppers diet?? :scratchin That sure sounds a lot easier to do than the No Sugar diet I'm going on at the end of the month. Sadly, DH will make me stick to No Sugar and not accept any substitution of any kind.

The temps have cooled down here. It's in the 60's right now and we're only expecting it to get to 70's today. Much better than the 110 temps of the last 4 days. I woke up early to water the garden and open up the windows and doors today. So glad it's cooler.

WFDT? There's a free entertainment event in my local park. If the weather is okay, we're heading down there to enjoy some music. There are usually food vans selling stuff at one of these events; so DH and I thought we'd buy some food. We'll take some picnic snacks and water with us but it'll be nice to just take a look at the food on offer and just buy some.

Dinner last night - at the park event.


Roast beef roll. DS and I shared it. You can't see it from this picture but there was four slices of beef under all that coleslaw. The person serving gave me extra coleslaw because I asked for a little more. She just HEAPED it on after my request.








We also shared the calamari. Surprisingly well done for being at an outdoor event. The calamari was wonderfully tender and the coating a little crunchy but not overly done. It was a little oily but not terribly so. We did get a lot more calamari in the pack.....only DH and DS got into it before I could pull the camera out.






DH had the falafel pocket. It was very tasty.







Dessert was Dutch poffertjes. I didn't like the faux chocolate sauce.






It was a great night out.

Thanks! I ended up microwaving mine. I'm getting really dizzy when I stand up, so I opted for fast. This flu is very yucky. =(

Tonight was takeout pizza. DS14's girlfriend is here & I didn't want to give her any germs.
