The chicken isn't cooked and I cant used cream cause The Boy can't have dairy.

Can you use a dairy substitute for milk? This is a favorite in our house - it orginally belonged to someone on here :confused3

Creamy Ranch Chicken
6 slices bacon-I use more, it's bacon
3-4 boneless, skinless chicken breast, cut bite size
2 Tbsp. flour
2 Tbsp. ranch dry salad dressing mix
1 1/4 cups milk
4 cups dried egg noodles

Cut bacon into strips, cook and remove from pan. Leave a little fat in pan and cook chicken. Sprinkle with flour and ranch dressing mix, mix well. Stir in milk. Cook until thickened. Stir in bacon.
Meanwhile cook noodles, then add to chicken mixture. Top with some parm cheese

Scotlass - Do you have a crock pot or slow cooker? I have a recipe for Lime Chicken nacho or tacos. It's really good and easy. Let me know and I'll post that recipe.
 

Have not read back thoroughly but wanted to say a couple things:

Glynis, The party pics look great! What a great theme! The girls looked like they had a blast and Timothy is just a doll!

Sheryl and Maria...I am not 100% sure about Oct but I am having a very hard time deciding if I want to leave my boys now...

I hope everyone is having a good day...I am having a hard time catching up. I think I will be on a better schedule when Tom goes back to work.

I have diced chicken in the freezer....what to do ?

Remember....has to be easy !! :laughing:

This is on the assumption that Im feeling better.

Im not making dinner for folks and not having any again.

What I have been doing with shredded chicken in pot pie or ala king over rice...if you need the recipes, let me know. :)

Greg always sounds that way too, Nancy. They are well-trained and prepared. They know their mission (which they usually can't tell us) and they fully expect to meet their goals. I figure I can't spend all my time worrying if Greg is not worried.

Speaking of Greg, he was recycled at Ranger School again. He passed the push-ups and all the physical tests fine, but he failed a different part of the training. When I talked to him Friday, he sounded kind of relieved. He actually was going to get a decent night's sleep. The night before he was only allowed to sleep between 3:30-4:30 am. :eek: He just called...must have felt his ears burning. His class starts up again Thursday. Wish him luck!


Your Greg sounds like Gail's sons. Both are confident and they just "do my job". I always ask where they are but I never can remember and I may ask what they are doing but I am worse than Gail at figuring out what they tell me. Gail is still insisting that Chris guards the President. He does no but that is her story and she is sticking to it. He has been a door gunner (:scared1:), has flown missions, etc but that is all mixed up too. He was not and he said he did not fly the missions. She is not my sister for nothing! :lmao::lmao:

I wish Greg all the luck with his Ranger school. Chris was in Recon school and it was rough with the goal to have someone drop every day. One day his DI said it was his turn to fail and that was his last day. I think it works the way it is supposed to work for each man but after hearing how difficult it is I am in awe of those who do this.

I'm making Chinese spaghetti and meatballs for dinner tonight. Hopefully I will be able to eat them :(

He's not worried, so I shouldn't be. He also know's it's okay to leave out some of the details of his day. Like I said, I'm not in your situation, so I can't relate, but it's sounds like he's well prepared.

I think that it is best not to know everything. One day Chris slipped and told us about a roadside bomb that Timmy spotted and I thought that Debbie was going to tear him a new ear! He thought that he could say something because it happened a while back but they had all agreed that their Mom and Auntie Nancy could only hear that it was quiet and that they were bored.

Maria - I'm ashamed to admit that I didn't pack my camera so the only pics I may have will be the photopass ones. I hope they turned out good, because when we were at the rope drop at Epcot, Mickey hugged Hailey and Hailey didn't want to let go. Mickey then signaled to the character handler and pointed to Hailey. The handler nodded and then noticed Hailey was holding her ears because it was getting so loud out there. She took us under the rope and escorted us to the Character Connection. We got there before the rope even dropped and the characters hadn't gotten there yet.

All the characters, Mickey, Minnie, Goofy, Pluto and Donald took pictures with her and spent some time with her. Someone, I don't know who because I was fighting tears, got all of the autographs on a large index card and gave them to me on our way out. One of the therapists plans to make a laminated scrapbook type page that Hailey can have so she can see herself with all of the characters.

What a wonderful memory you have! You have got to keep bringing your sweet Princess back to Disney. I have this wonderful vision of your shy Hailey hugging Mickey and it makes me :cloud9:

He was near the end of the first phase -- there are three -- so he needs to repeat the whole phase. He does not have to do the first week (PT test, water survival, 12 mile road march) because he passed that.

Does anyone buy PIM's cookies? The dark chocolate coated with orange or rasberry filling? WOW they are delicious!

I used to buy them for my Mom and me. Oh they were so good!


It is cold and windy here as well although if you looked outside you would be deceived. Not a cloud in the sky but one step out there and Whoa Nellie!!!!!!!!!!!!! We are having Chinese takeout this evening. I was outside with Buddy most of the day so I really don't feel like cooking. There is so much wood out there! He is cutting the trunks in manageable lengths right now and he and Dan will cut and split it this weekend. The tree guy will come back and grind the stumps when he can get in, right now there is too much on the ground.

I know that the curried honey chicken Glynis posted a while back did not call for cooked chicken but it would work and it was super good. You could make the sauce, reduce it and then simmer your chicken in the reduced sauce. The only thing, how strict is your DS dairy restriction? I used the butter because I knew Kady would not try it but you could use what ever spread he is allowed if his restriction includes all dairy products. Serve the sauce over rice, it would be delicious.

Also the lime nachos are very good.
 
Okey dokey Scotlass, here are some copycat recipes for Hidden Valley Ranch salad dressing mix. I have not tried them but they may work.

POWDER MIX
15 square saltines -- (2")
2 cups Dry minced parsley flakes
1/2 cup Dry minced onions
2 tablespoons Dry dill weed
1/4 cup Onion salt
1/4 cup Garlic salt
1/4 cup Onion powder
1/4 cup Garlic powder
SALAD DRESSING
1 tablespoon Mix
1 cup Mayo
1 cup Buttermilk

Put crackers through blender on high speed until powdered. Add parsley,
minced onions and dill weed. Blend again until powdered. Dump into bowl.
Stir in onion salt, garlic salt, onion powder and garlic powder. Put into
container with tight-fitting lid. Store at room temp for 1 year. Makes 42
1 TB servings. TO USE MIX-Combine mix, Mayo and buttermilk. Yield 1 pint.

Hidden Valley Ranch Dip & Dressing Mix Copycat Recipe #289285

This is a little different than the others posted here. Not sure which one is the best. Decided to post here for safe keeping.

  1. Dump all ingredients into a blender or food processor and blend until completely powdered.
  2. To Use: combine 1 tablespoons dry mix, 1 cup of may & 1 cup of buttermilk.
 
Nancy- If I have to stack another piece of wood I'm going to scream. Our wood pile is my height (that's not saying much) and we are on our 7th palate. At least he does the splitting, I failed pretty bad at that.

Scotlass- If it makes you feel better, ranch dressing mix is a dairy product. I only use it for creamy ranch chicken or bacon and grilled chicken sandwiches.
I'm sure it's past your bedtime, let alone dinner, but some of my favorite easy chicken meals when I don't feel like hearing complaints:
Open-face chicken sandwichs: I make gravy and stir in cooked chicken to warm up. We have that over toast.
BBQ Chicken pizza: I prebake a pizza crust, spread barbaque sauce over it, diced cooked chicken, red onions, and cheddar cheese. (Your poor boy, I can't imagine a life without cheese.)
BBQ Chicken sandwiches: Simmer chicken breasts, shred the meat, mix with bbq sauce. Put it on a roll, again with cheddar cheese.
Breaded chicken: Pound out the chicken, dredge in breadcrumbs, pan fry, squeeze some lemon juice on it.

I've never heard of Pim's cookies, but I love anything with raspberry.

We are having steak and cheese sandwiches for dinner, I better get going or I won't get the bread in the oven in time and we will just be having steak and cheese.
 
Ended up just having chicken strips and frozen oven roasted potatoes. Forgot I have class tonight and decided to have the shrimp dish since the roast wouldn't be ready in time. Only problem, I have no shrimp!:eek:How do I not have shrimp, I always have shrimp?!?!

Nancy -- I agree that there are definitely some things you don't need to hear.

I ended up making cod pomodoro for dinner tonight for me. I got complaints from Liam about the baked cod I made for him. I told him he can't have chicken nuggets and mac and cheese every night.

Good for you, Mom! It's tough to get them to try new things. Hopefully, it will get easier.

Look for them in your cookie aisle. They come in a tube like box. I find mine in the specialty cookie section, where you can find shortbread, etc. They are really worth a try! Especially the orange ones! Yummo!

Well I'll put it this way......I have one left of the rasberry, haven't opened the orange yet. Something else to pack on my goodie list for F&W!!!!!!

Please keep my Mom in your prayers all the changes at the hospital are still so unsettled & it's breaking her heart. I really don't know what to do for her.:sad1:
