The What's For Dinner Thread - Feb '09(recipe index in OP)

Good Morning!

I am tired and have not absorbed everything so please forgive me if I miss something. I also have not read too far back.

We are having roast chicken, stuffing, mashed taters and not sure of the veggie...probably corn, carrots or both (my favorite meal...only thing, I keep forgetting to buy cranberry sauce which I love with this). Andrew has a scrimmage tonight so dinner will be early.

So, Tom is home for another week of Man Leave. It has been nice having him home...he is trying his best to help and get used to the baby (I think I will have bathroom/shower pics to show soon)...Anyway, I have been doing grocery shopping online and he goes to pick it up. Well, yesterday he comes home with 4 gallons of milk!!! :scared1: I made a boo boo so we will be drinking lots of milk this week. I guess I will freeze some too.

Gretchen, thanks for the hint about Toy Story Mania. We will never make it to a rope drop. We tend to take our own sweet time on vacation. Fortunately, DS is to little to care about missing rides yet.

I have to do some vacation day errands today. DH is off tonight, so dinner will be burgers on the grill. I am trying to use what I had in the house this week.
 
You want me to tell my husband that I don't need an IPhone?!!! If he says we need it for evacuation, we must need it! :laughing:

Actually to be able to access information while trying to get out of town & not get stuck in traffic is a good idea.

I am so not caught up, but i had to comment on this! I have been bugging DH for an iPhone since Christmas. But he's too practical for that kinda thing. He's more of the "you can have whatever phone you want, as long as it's the free one":rotfl: Anyway, one of the pharmacists I work with has one and it's so cool--she has some really helpful pharmacy apps on it. So, I played that angle with DH. That I could really use it for work, would help me in counseling patients etc. He was starting to come around. And then we made a deal, I have to give up our home phone and I can get the iPhone. Sounds logical to me! So, come next pay period I should get one!:banana:

Kathy--I also needed to mention that when I heard that Spoodles was changing my first thought was "Are they keeping the sangria????" Great minds think alike!

As for dinner, we grilled out Sunday night. It was a beautiful day! Yesterday I worked two jobs so my sis watched the kids and they had fish sticks again for dinner. Not sure about tonight, as my mom will have the kidlets. Hopefully not fish sticks again (however, DS will eat them and they are not chicken nuggets or pizza, so I'm not really complaining)

Good morning everyone. We are having a very windy, cold day.

Lauren- It took me a minute to realize what you ment by shower pictures. With all that milk, you could have macaroni and cheese, coconut custard pie, maybe some chocolate pudding. Or, being a tired new mom, you could tell everyone cereal for dinner.

Aimee- Was that the movie with the man from Jurassic Park? I saw him on Martha Stewert and it sounded like a very powerful movie.

Gretchen- Sometimes I think it's best not to have a camera. You are so focused on getting a picture you don't really enjoy the moment. Sometimes it's a better picture in your head then with a camera. I hope the rest of your weekend was just as special.

Merle- What a great niece you have, I hope you both have a great time. When I was little my aunt used to take me on weekend trips and we always had a great time. Then she went off and got married and had her own family.

Nancy- I understand your worry, but I can't relate so I don't want you to think I'm comparing the 2 situations since they are completely different. My husband has a very dangerous job and I used to worry every day when he went to work. He works until the job is done, so he is never home at a set time so that made in harder not to worry. But the worrying wasn't doing anyone any good. He's not worried, so I shouldn't be. He also know's it's okay to leave out some of the details of his day. Like I said, I'm not in your situation, so I can't relate, but it's sounds like he's well prepared.

Laura- It sounds like they really want Greg to pass, sorry he has to start all over. Was he near the end?

Glynis- Those hat's came out great, were they grocery store bags?

I don't know what dinner is tonight, I bought a turkey breast but I don't think it will be thawed in time.
 
I did not end up making the salads last night. I was way too hungry for just a salad. So, I tried out a new panini recipe from this month's Fine Cooking magazine. It has turkey, mango chutney, sharp cheddar, and cilantro, and the sandwich is made on onion naan.

He was telling me last night that the Army is sending too many people to Ranger School so the class sizes are too big at the beginning, so they have to get rid of a bunch of people each training.

It sounds like they really want Greg to pass, sorry he has to start all over. Was he near the end?

He was near the end of the first phase -- there are three -- so he needs to repeat the whole phase. He does not have to do the first week (PT test, water survival, 12 mile road march) because he passed that.

Like Robin said, it is cold and windy here today. I might make chicken pot pie for dinner.

Just wanted to share a recipe with ya'll I found in a Publix Grape Magazine. I've made this several times and these veggies come out great!

HERBED VEGETABLE GRATIN

Cut 2 large cleaned and trimmed leeks, a medium zucchini and a medium yellow squash into ¼ inch thick slices. Toss together with a tablespoon of olive oil and season with salt and pepper. Transfer the mixture to a 2 quart shallow baking dish that has been prepared with cooking spray.

In a small bowl stir together ¼ cup fine dry bread crumbs, ¼ cup finely shredded parmesan cheese, 2 teaspoons snipped fresh thyme, a clove of minced garlic and another tablespoon of olive oil. Sprinkle this mixture over the vegetables, then bake uncovered in a 425 degree oven for 20 to 25 minutes or until the vegetables are tender.

*A variation of veggies that I have tried that is great is 1 yellow squash, baby carrots, broccoli chopped small

*Love it topped with blue cheese crumbles before baking

*I leave out the leeks and garlic - I'm not a fan of them

(For NOLA gals, the topping reminds me of stuffed artichokes!)

I don't know what's for dinner. I have to go pick up my MRI's for the 2nd opinion dr's appt on Thurs. it's on the other side of the river, so that's a 45 minute trip.

Stephanie, I was shocked that my practical hubby wanted me to get it. The cost of the phone isn't the big deal to me, it's the $30 monthly fee!! We may just cancel the home phone too. It just doesn't seem necessary to have all of that.

Gretchen, DD & SisIL Chris both have the iphone, so that will help me a lot! Chris was showing me stuff, yesterday. It's pretty complicated, you have to download the applications to your computer & then to your phone. But once it's all set up, (like Chris has done her's) it was a piece of cake to operate! The touch screen is so cool & easy! Even for an old electronic illiterate like me!!

Peggy, With BLUE CHEESE!! Oh yeah that sounds yummy! I hav zucchini & leeks in my fridge, I will have to see what else I can come up with, that sounds sooo good! Thanks!
 
no-knead bread

15 ounces all purpose flour
7 ounces room temperature water
4 ounces light lager
¼ tsp. instant yeast
1.5 tsp. kosher salt

Combine all ingredients in a large bowl—stir until it forms a shaggy ball. You might need to add a little more liquid. Cover the bowl with plastic wrap and set aside for 12-18 hours.

Lightly flour a work surface and dump out the dough. Knead about 10 times.

Place dough in a cast iron skillet that has been lined with parchment paper. Make sure that the parchment paper is long enough to hang over the side of the skillet, as you will be using it to lift the dough later.

Spray the surface of the dough lightly with cooking spray, cover with plastic wrap and set aside for two hours.

30 minutes before you are ready to bake the bread, place a heavy cast iron dutch oven or similar pot, along with its lid, into the oven and preheat to 500 degrees. (I have a large le creuset dutch oven that I use for this recipe)

Remove the plastic wrap, and using a sharp knife, cut a slit along the top of the bread, then lightly flour the surface of the bread.

Remove the heated pot from the oven and reduce oven heat to 425 degrees.

CAREFULLY remove the hot lid from the pan, then lift the parchment out of the skillet—using it as a sling to hold the dough. Place it and the dough inside the pot. Place lid back on pot.

Bake the bread, covered, for 30 minutes.

Remove the lid and continue to bake until bread is nicely browned—20 to 30 minutes longer.

Use the parchment to lift the bread out of the pot, and remove to a rack to cool.

Um, I'm not sure? I can't even remember the plot of Jurassic Park it's been so long since I saw it.

I think we'll have fajitas tonight... but when I went to thaw chicken, we were out. So, we'll have them if I have time to buy meat.

Darn I don't have a cast iron pot! I have oven safe Caphalon, I wonder if it would work?
 
Not sure what is for dinner tonight. My mother took out a roast but it was in the fridge when I left for work. If she doesn't do that I will probably make an Asian meal kit I have and add shrimp, bamboo shoots and straw mushrooms.

Yes, they were. I tried it with tissue paper, but they just didn't look the way I wanted them to look. the grocery bags were easier to work with.

I will sheepishly raise my hand, here! Yes, I eat them occasionally. I'd eat them every day, if I could. I do manage to find a package in my stocking each Christmas. They are addicting!

The chicken isn't cooked and I cant used cream cause The Boy can't have dairy.
