The What's for Dinner Thread - August 2014 (recipe index in OP)

WFDLT - Spinach Enchiladas turned out awesome...

WFDT - left overs!!!!!

Have a great day everyone, only one more day in the office this week.

Dreary and rainy Tuesday,

Christina ~ Welcome!! We love having you with us. We all have a great time and sometime even talk about food. :rolleyes1 So......what did you decide to do with the shrimp. I have a really easy garlic parmesean pasta I do.

Pio ~ Oh sweetie, I hope you start feeling better. Those winter colds can be tough.
So glad you enjoyed your FE student.

Brandi ~ That really suprised me, when you say your really aren't into football. Aren't you head of your booster club? Plus I see you and David at every game.
Ummmmm.........recipe please!!

Alison ~ I have to agree with Brandi - I think your obession is with Disney and all the wonderful places you get to eat. Different parts of the country are so neat. I am always so jealous of all you get to do.

We are having a knock out drag out here with what Pastor Anne has done to the sanctuary. OMG!! It is just horrible. The way some people act and talk to a Pastor - they shoudl be ashamed. Just because she put some banners up, and placed some visuals on the stage and she took the American flag off of there and moved it to Fellowship Hall. It is just ridiclious. The old ones are having a fit and the younger ones are loving it.

I was so excited to get in the hot tub last night, but when I took the top off the water was a yellow/green color. Not a pretty clear blue. I have no idea what we did wrong. There will be a call to the Co. this morning. I am still so new at this that I really don't know what I am doing. But yuck!! No tub for me just yet!!

It is dark and rainy here this morning. Such a strange August we are having. The rain is nice, and the cool weather is great for us humans, but not so much for the corn and soybean crops. We really need some hot sunny weather. I don't think I have ever seen such a cool and damp August.

WFDT ~ Sour cream noodle bake, with cucumber and tomato salad.

Make it a great day!!

Ellen - I guess I did not express myself very well.. I meant to say that I am not as obsessed as some others I know in our local community. Some people are living and breathing football, that is all they talk about or all they listen to. I am amazed sometimes how these people get on with life. I enjoy football, and I really like being at the games more than watching on TV.

I am the VP of Activities for the local alumni club. but David is the President...

So you know I made mine vegan but you can follow the recipe as is. If you want to know my subs for the diary stuff just let me know.

http://allrecipes.com/recipe/59661/spinach-enchiladas/

The recipe for sauce is:
¼ cup canola oil
2 tablespoons flour
3 tablespoons chili powder
1 (8 ounce) can tomato sauce
1 cup chicken broth (water can work too)
2 teaspoons ground cumin
1 tablespoon garlic, minced
½ teaspoon onion powder
¼ teaspoon salt

Heat the canola oil in a saucepan on medium heat. Add the flour and chili powder and stir. Cook until the bright red color turns a bit brown while stirring. In a small bowl mix the tomato sauce with the rest of the ingredients until it is fully blended. Add to your saucepan and whisk until fully mixed. Cook for 8-10 minutes on medium heat until thickened.

I got 12 enchiladas, out of it. I used the little 6 inch yellow corn tortillas in a 9x13 pan.

:welcome:

This is kind of a mixed bag board. We talk about food, and our families. What part of houston? I am from Bandera, Tx, DH is from Copperas Cove, Tx, DH family is in SA, Tx and mine is in Pharr, Tx.

Hello,
We live in a little town called Fulshear. It's rapidly being absorbed by Katy, so we have all the growing pains of construction everywhere, traffic congestion, new schools, increased taxes, etc. We moved the first time to get out of all the crazy Houston traffic and it chased us down! Time to move again.

Ended up eating out for dinner due to a power line being knocked down by an over-sized vehicle across an intersection in town. With the intersection closed it was a 20 mile detour to get home. And of course, both of us were not home when it happened. So instead of driving all over, we met for supper at a place called Bernie's Burger Bus in Katy. It's run by a guy who used to have a food truck and now he's moved into the brick-and-mortar restaurant business. Not bad.

Shrimp will be tomorrow. Leftovers Thursday. Football Friday. Weekend?

Thanks and Gig'em (Aggie Mom, Philip, Class of '10)!

Aww.. I know where Katy is, so I will have to look up your town.
Bandera is about 40 miles outside of SA and I feel like it will do the same thing and be a suburb of SA in the future. We moved out there to get out of SA but still be close enough.

I take it you saw my A&M stuff. I am actually an Alabama grad and DH is an A&M grad. We have season tickets to A&M football, so we will be there Saturday! Whoop!

WFDT - More leftovers, I made Veggie Korma Monday night so we will finish that off. Trying to get everything out of the fridge before we fly. I like to come home to empty fridge.

Morning girls,

I have been just so darn busy that I haven't been able to get in like I want to. It will settle down - I hope!!

We are headed to Lincoln for a fun weekend of Husker Volleyball - tonight at 6 and tomorrow at 2:30 then the big game of Football at 7 tomorrow night. We are all so excited!! But if I am truthful I am having a hard time getting my head around it. I just can't believe how fast the summer has gone and it's a bit hard to think it is time already for football. We are all packed and ready to go as soon as I get off work at noon. This will also be a bit different as we are staying with Matthew and Katlin. Wish me luck!!

WFDT ~ We will eat with the family (both ours and Katlin's) after the Volleyball game at Misty's - a yummy steak house.

Make it a great day and an wonderful weekend

HI folks! We have been busy busy busy around here. We filed an extension on our taxes back in April and had to get our taxes together by yesterday as our accountant is going on vacation come Monday. That was fun.

Then last night we had a rehearsal for the swing band. This is the third time we have had to put together folders for this group and the director is nothing but critical. I'm done with helping out. If Fran wants to put herself out for this idiot, fine. I'm not giving up my time for him anymore. Not only is he thankless, having him conduct a jazz band rehearsal is like having me coach a football team.

Tonight for dinner were having chicken marsala, noodles and spinach.

well we made it back into town today, got home around noon eastern.

So very tired, had way too much fun, and we won, so all is good right now in the house! haha

Hi girls,

I am just now eating my lunch. I have been so busy that I sometimes forget to eat. I decided before I do anything else that I was coming in here to catch up.

Alison ~ Sounds like you are really busy. I did love your pictures of your picnic. You and Fran do the neatest things.

Brandi ~ Yea for the win. There was some big shake ups at the top.

Our weekend was fun and we won the game so that even made it better. We came home late Sunday and worked on the bedroom all day on Monday. We are getting closer!!

Ethan has his first pad & helmet football game tonight. It really looks like it could rain, but I hope it holds off. He was so excited to "hit" someone. LOL
Today was Liam & Lilly's first day of preschool. They were so stinking cute this morning and so excited!! Oh to be 4 again.

WFDT ~ Grilled Chicken, green salad and roasted vegetables.

Make it a great day!

I'm just stopping in to say that we have been so freakin' busy, it's not funny. I have ordered all my meals for the last two days from either an app on the phone or a drive through. And this was after a late night at the bowl Sunday. We have had a hard time catching up as the two days after the Bowl were spent getting ready for the gig last night. Which was exhausting.

We ordered Italian when we got home last night (only delivery place open after 11PM) and then ordered Japanese/Thai today when we got home from our escapades. I'm planning on going in the jacuzzi once the TV program we are watching is over.

So busy you forget to eat is not a good thing. You have to take care of yourself.

Great win, and I love it when everything goes our way!

Wow... that is busy! Love the pictures you posted.

David and I have been trying to catch up, I swear these shortened weeks make it hard to catch up. Two weeks until vacation!

WFDT - after our 90 min deep tissue massage we will have left over veggies, broccoli, cauliflower, and snow peas.

This is your France vacation? Brandi?

I hope we're a little less busy for the next few weeks. Today we have a few other things to catch up on. We have some stuff to mail, :rolleyes1 and need to make a trip to the instrument repair guy. I have to pay some bills now that we finally got the rent checks in the bank. Plus we are having our quarterly Pest spraying this evening so I need to empty out some cabinets.

WFDT? Stuffed peppers from the freezer. I need something easy!

Oui Oui!!!!!

um, if the shipping does not happen until after I get back that is fine also. No worries, maybe the DVC bag will show up.

I have eBay stuff to do as well, besides it's already in the box. All I need to do is tape it up and print the label.

Afternoon ladies,

We are cooling down here. We are still a bit humid but the temps are in the low 80's. We have had rain every night and that has been great. We have only had to water the lawn twice this summer. Usually by this time the grass looks a bit frazzled but not this year, it looks great. The farmers are doing one more circle of water and then the pits will be turned off. Fall is right around the corner.

Brandi ~ Not long now. How exciting!!

Alison ~ Wow, you have been busy. I know the pool and jacuzzi are getting a good workout. Your pictures are beautiful.

WFDT ~ Cheese burgers, sweet potato fries and sweet tea.

Make it a great day!!

Good morning girlies,

I am only working a 1/2 day today. At noon we are leaving for Lincoln for another fun weekend. We play Wyoming tomorrow and the weather is to be beautiful. A bit cool for the morning tailgates but by kickoff at 11am it should be just about perfect.

You all play nice and I will see you all on Monday.

WFDT ~ Sushi and a nice glass of wine. I can't wait!

Make it a great day and a winning weekend - GO BIG RED!!
