The What's for Dinner Thread - August 2014 (recipe index in OP)

Good morning all,

I am so glad to be home. Annual Conference was wonderful. We heard some awesome speakers, took care of some difficult proposals, and celebrated the work of the Church. But I was glad to see Doug and Cooper.

PIO ~ Your pictures are stunning. And that breakfast was almost to pretty to eat. There is NO where here that ever puts out such gorgeous dishes.
And that house is stunning. I love the purple dress - I wish I could find something similar for the wedding. I love it!

Yesterday my phone rang here at work and it was Ethan. He was most upset and all I could get out of him was that his Mom had cut her hand. Jay got on the phone and wanted me to take Elizabeth to the ER. I grabbed my purse and was at their house in 5 minutes. She climbed in the car and off we went. She was taking the pit out of an avocado and missed. It went through the palm of her hand. They did an x ray, and no bones were nicked but with the pain she was having, she probably hit a tendon or nerve. 2 hours later I dropped her at home with it all bandaged and hurting. Bless her heart, all she could think of was - How am I going to golf. Silly girl!

Well the wedding drama continues. The kids were notified over the weekend that their guitarist broke his shoulder. So they are now looking for a new one. They do have a church though. Their original church is a no go, there is just too much smoke damage. So there were a few churches that were free and opened it to them. I told them this morning, "Let's get all of this negative stuff out of the way now. The wedding will be perfect". I sure hope so. We are getting down to crunch time. I don't even have a dress yet. Elizabeth and Stephanie and I are going into Omaha this weekend and hopefully I find "the one". We haven't done this for years. They are leaving the kids at home - it will be just us girls. We are so excited!!

Ellen - I hope that Elizabeth is okay! That would have been a scary 2 hours. What a shame about the guitarist. I hope that everything is just plain sailing from here on end for them. Happy shopping! You'll find the perfect outfit.



Hump Day - and I'm looking forward to the weekend. It's a long weekend for us with Monday being the Queen's birthday holiday. We're also coming up to the shortest day in the year and it's dark and cold in the mornings and dark and cold when I get home. Still....I have a short break in Uluru to look forward to. We head out in about 11 days.

WFDT? Wednesday....and dinner at mum's. There's nothing like mum's food.
 
Good morning friends,

It feels so good to be back to normal. I missed checking in each day. But we were so busy each day and by the time we got back to the Motel at night I was tired. Plus we couldn't use the Wifi at the Expo Center as there were over 1600 of us and it wouldn't accept it for 10 hours a day. The Motel was rather spotty also.

PIO ~ Thanks! The pain was the worst part and the cut was very deep but not long. It was mostly the point that went deep. She said yesterday that the pain was manageable but it now feels like she is getting shocked every once in awhile. The Dr. told her she probably went through some nerves and that would happen. She has gotten the feeling back in the middle finger, but not yet the ring finger. Bless her heart.
I agree - there is NOTHING like Mom's cooking. I miss my Momma's cooking so much. She made the best fried chicken EVER and lots of things I try to make, but they just don't taste the same. Enjoy!!
I hate going to work in the dark and coming home in the dark. Right now we are going to bed with the sun still shining and waking up to a bright room. I love it!!

Ethan had a ball game last night and they won again. They are now 7-1. The one game I didn't go to they lost. The coach told me last night that I wasn't allowed to miss any more.

We haven't had any rain for over a week now. We actually got the hoses out last night and started watering the lawn. We could use a little right now.

Ellen - it does feel good to be back to normal. I think it's just you and me checking in at the moment but that's okay. I hope the others will come back when they have time. Hope you had a good time away? I hope Elizabeth gets feeling back in her ring finger as well!!


Thursday night and just got home after one of those weekly things for DS. Dinner tonight was Japanese Ramen noodles and it was waaaay too much food for me.
Not sure if it made the global news, but parts of Australia are completely inundated with water. We've had a major low front hit all the way down the East Coast of Australia and into Tasmania. There is so much water it's not funny!

Friday tomorrow and I'm looking forward to the end of the working week. Here's hoping it ends up being a quiet day at work. TTFN.
 

I'm reading, just not commenting much. Busy busy days going on. Last night I made Thai marinated pork chops, corn on the cob and zucchini boats. It was a lot of food!

Today I am shopping at Trader Joe's while Fran gets her hair cut. I'm picking up the marinated lamb tips and going to make souvlaki sandwiches from them for dinner tonight.

Alison ~ I am so glad to know you and Fran are feeling better. That was one nasty bug, it sure held on for a long time.
Trader Joe's have Lamb tips? I am going to have to check that out. Your dinners sounds amazing!!

Hi and hugs to everyone else!!

We are under a Weather Alert Day today. It is hot and very humid, just perfect for severe weather and mostly tornadoes. Friday, Saturday and Sunday are to be close to 100. YUCK!! Have I said before how much I hate the heat and humidity? Doug is headed to the golf course early so he can get 18 in before it gets to miserable and the storms hit. Ethan is suppose to have a game tonight, but we will see if they are able to play.

WFDT ~ Chicken salad with pecans, grapes and apples on croissants with lots of brewed tea. It's that kind of day!!

Good morning ladies,

I am packed and now just praying 4 o'clock comes fast. I am so excited for this weekend. The girls and I haven't been able to get away like this for many years. I am really looking forward to just being together, drinking a little wine and laughing our fannies off. I have gotten us a room right down in the Hay Market so we will be able to walk to things. The malls, we will have to drive to, but at night we are a stones throw away from a lot of good food and quaint shops. Oh and yes, I need to get my dress for the wedding. I had - in my mind - exactly what I wanted picked out. Well when we went down to Tucson for the Shower, Shirley showed me hers and YEP, it was exactly what I wanted. Sooooooo, I really have no idea now what I want. I just pray that I find it right away, 'cus I am stressing just a bit. Wish me luck!!

Well, I am NOT the teams good luck charm anymore. They got clobbered last night. 13-9. This was the other Lexington team, so it was a hard one to lose. The boys just couldn't field or pitch to save their souls last night. I just kept telling them, that this was alright - let's get this out of our system now so we can beat them in the Championship tournament.

WFDT ~ I have no idea what, where, or when, but I can tell you I'm not cooking it or cleaning up after. And for the next few days I don't even have to make my bed. WooHoo!!

Last night I had Pad Thai for dinner, and it did not thicken up on me like i like, so not sure what I did different....

Tonight is taco salad.

WFDT? I ended up getting a pack of Peking Duck from Costco and having that for dinner. DS and I really enjoy it and as DH had some leftover rice and vegies, it was the perfect night to indulge.
 
I haven't been a very good poster over here for a while. Fran went to bed and I'm still finishing off my glass of wine. Rather than chug it, I decided to come over here and post a few pictures I've taken over the past week or two. PIO mentioned that we havent had food porn and we should fix that. Here is a meal that I sort of cooked up based on a video that I saw. I think it was an ad of some sort, but it was for pork with apples and sage. I've been getting into pork tenderloins and so I came up with this recipe that was for Pork chops, but I modified it for a tenderloin, I've made it now 3-4 times and it's really good. Starting ingredients.

And Ellen you mentioned about my souvlaki sandwiches. This is what I get at Trader Joe's, I split it into three more portions and we will have sandwiches on several other occasions. We had them last night and I used the Frozen Naan from TJs, the Tzatziki, and served it with cucumber, tomato and red onions. They were awesome sandwiches!

PIO - I went over the recipe again and I did not do anything different, I must just had too much liquid in the saute pan to start with. I dont saute my veggies with oil, I use water, but I will just have to do it again real soon and see how it turns out.

I did get more bok choy in my CSA basket this week, so I must make it again.
 
Good Monday morning all,

I will cut to the chase.......I got a beautiful dress, shoes that are so comfortable and even a pretty clutch. Get this - it was the first dress I tried on. Not at all what I was thinking of, but I love it. I modeled it for Doug last night when we got home and he really likes it also. I am so glad that is finished. The girls and I had such a great time. We talked, laughed, ate good and slept late. It was good for our souls.

Brandi ~ You are so lucky with your CSA baskets. I wish we had something like that here. I would love it. Heck, our Farmers Markets haven't even started up yet.

PIO ~ Cosco/Peking duck - I will say it again - ya'll are so lucky. Or nearest Costco in 3 1/2 hours away. I would love to have the variety you have. I have a small WalMart - YUCK - and 2 Mom & Pop stores that have nothing exciting.

Alison ~ OH.MY.GOODNESS. that looks amazing. I usually don't eat pork - but a tenderloin I can get away with. YUM!!

We had a few storms come through last night. We had 2.53 in the rain gauge this morning. We really needed the rain but I slipped all the way to town. The dirt roads were a muddy mess. I got my car all dirty.

I have a Dr. appointment in Omaha tomorrow so I won't be around. We are driving to Lincoln and will stay with Matthew tonight. I can't wait to see my boy. It's been a few months, plus this will be the last time until we come for the wedding. Gosh, I can't believe it is almost here. We will take the kids out for dinner tomorrow night.

Alison - Food porn! I need to start getting my act together and get back on that bandwagon! Your meals always look great.

Ellen - YAY for finding a dress. That's amazing it was the first one you tried on. I hope we get to see you in the dress, shoes and clutch! Wedding is getting ever closer.

Tuesday night and I'm starting to countdown towards Sunday. I head off to Uluru for 1 week. It's a short break but I'm really looking forward to seeing red sand and a big rock.
 
Your countdown will be short for sure. What plans do you have for your 1 weeks in red sand?
 
Well I have not done this in awhile so I will give it a try.

in the CSA basket, we have got a lot of kale the past few weeks, and David loves this Kale salad that we make, so I will share it with everyone here....

First I have to wash the Kale since it is coming straight from the farm, it has sand and dirt all over it.
then I have the inspect each leaf, since it is organic there are pests sometimes in the produce, and I am all for protein but I do not like mine as insects. Then I cut out the stem and chop or tear up each leaf. into a big bowl it goes.


I used three different kinds of Kale (Curly, Dino, and Red Russian) because that is what I get in my basket.

Then I make the dressing - this is a riff on the Kale salad that Whole Foods has on their food bar.

  • 2 Tablespoons tahini
  • 2 Tablespoons apple cider vinegar (or water) I like the raw, unfiltered, to me it taste better.
  • 2 Tablespoons lemon juice
  • 2 Tablespoons Bragg's liquid aminos (tamari or soy sauce would work too)
  • 4 Tablespoons nutritional yeast
  • 2 teaspoons minced garlic (I use granulated because that it what I had on hand)
I put all of the above in a little food processor, you know those little 1 cup things. like this

And this is what the salad looks like in the end....

ALong with this I had Orange Bell Pepper, Cucumber and cherry tomaotes, David added a grilled chicken breast.
 
Brandi - that looks great! I might try a variant of that for DH.
I don't have any plans for the red sands at this stage. Guess I'll figure it out when I get there. :teeth:
