How do I know that you wont go changing it after I read it? Ill read it when you star the next post, then I'll be fairly confident that indent have to go back and keep rereading it.

Last night I made a two bone Prime Rib for Fran and I. We have a whole bunch that we need to eat since I just bought six more to put in the freezer. We're going to be having Prime Rib (or should I say Choice Rib) once a week for three weeks, and then again for Christmas. I also made roasted red potatoes with the Lipton Onion Soup glaze and steamed asparagus.

Tonight we're having Hot Roast Beef Sandwiches with mashed potatoes and Gravy and the rest of the asparagus. I just finished slicing the leftover Rib Roast and I'm taking a DIS break for my legs and feet (which are killing me right now). The 27 minute timer just went off, so I need to wrap up and get to making dinner now. :rolleyes1

Today, we caught up with friends at lunch and then had another catch-up at afternoon tea.

No one in my house felt like dinner; which is saying a lot given that I have a teenage boy disposal unit in the house!

WFDT? Just water....and a cup of tea.

WE had a great weekend - even though we lost!! We went ahead and decorated at Matthew's yesterday, much to his dismay. But we told him at least this way when he gets home on Sunday they will be all ready to just plug in. He is coming home on Wednesday for Thanksgiving. I hope to get our lights out and the house decorated on Saturday and Sunday - I told Matthew he had to help. :rotfl2:

Doug is on vacation the rest of the week. I am so glad he is taking some time off. He is starting to feel better and hopefully now he can really rest and kick it. All of our Albuquerque family are arriving late today and tonight. I can't wait to see them. We always have so much fun. Most of them are staying out to Doug's Dad's and I think that is a big reason Doug took off - so he could help his Dad play host. The rest will be in Hotels so the kids can swim.
We are doing dinner tomorrow night. Just having pizzas and salad. Matthew will be home tomorrow night also.

The lights will go up on Saturday as the forecast is calling for mid 60s. And then on Sunday it is to be blustery and 30. So Sunday after Church we will put the tree up and decorate. I think this will work out just perfect.

It's Wednesday night already!! Yikes! Where does the week go?

I'm having laptop issues and having difficulties starting up the laptop. I think I did a 'fix' last night but I think I'm going to have to spend some time backing up the files this weekend. I so don't need this right now.


We're well and truly in the silly season catch-up. Last night, we had DS' year level catch-up with the other parents. This weekend is going to be busy as well.

Happy Thanksgiving Eve day.

Brandi ~ Take a slow breath sweetie, it will all get done!! The older I get the more I really don't sweat the small things. Through life I have realized that all-in -all it will get done.

PIO ~ You are winding down the school year and getting warm and we are in the midst of chaos and getting cold. I have been to your wonderful Australia and it still blows my mind. I remember the thing that confused me - in a good way - was looking up in the sky and not seeing the same stars I always do.
Hope your laptop issues are minor.

Well I am not a happy camper that I am at work and every other member of my family is off today (with the exception of Matthew who gets off at noon). Today starts the craziness that is my family. As soon as I get off of work I need to run home to get everything ready for tonight's dinner then rush to Cozad and hug on everyone I haven't seen for a year. There are 24 of us and we really are blessed that on the most part we all get along and have fun together. I can't wait for 4 o'clock to come.

I got my pies (2 pumpkin and 1 pecan) baked last night and an angel food cake baked. All I have to do is the turkey, sweet potatoes, and rolls baked tomorrow. Matthew is making deviled eggs so that will be tomorrow also. Dinner is at 1:00.

Happy Thanksgiving to all of you. When I think of what I am Thankful for, you all are included in my blessings.

WFDT? I have no idea. Thursday gets crazy as DS has an activity/class to get to at 6.30. So, it's either eat really early or eat after 8 pm. We've been tending to get take-out on Thursdays. It's just easier.
 
Hamburger Dinner



I blame Alison for the addiction I've cultivated for an UVA Bar lamb burger. Actually.....it's not the lamb that is addictive; but rather the accouterments that go with the burger. The menu describes the burger as "House ground lamb, piquillo peppers, feta, arugula, lemon dill aioli, pickled red onion".

The first time round, I got the main ingredients but thought that the onion was fried with some vinegar.
The second time round, I realised that I had mis-remembered how the onion was done.



We get beef burgers from the Queen Victoria Market from the organic butcher. It's pure beef with very little additives in it. I can't make mine any better; and I always get some for the convenience of having beef patty in the freezer.


For Monday's dinner, I checked the fridge and realised that I had the following ingredients:






I substituted feta cheese with a tasty cheese. And I used sweet chilli sauce instead of aioli.

The pickled red onion? I sliced a red onion and par-blanched it by pouring some boiled hot water over the slices. To white wine vinegar, add sugar, salt and pepper to taste and threw in about 3 - 4 sprigs of oregano from the garden. Add the par-blanched onion and let sit for at least 60 minutes. The onion turned out great!






The burgers were cooked for about 4 minutes on each side.

I can honestly say (as long as you dont hate me for it) I have had too much too much to drink tonight.

I have drank too much of the moonshine that we brought bank from Tennessee. We leave for Europe in 1 week, 7 days.

I have nothing planned for the later part of the week. My best friend is turning 50 while we are in Zurich.

I have to come up with something the husband is no use....

Other wise I am drunk and need to go bed. I love you ladies, and I miss you all, I seem to be away too much and I miss you all.
