The madness all started on page 97 when Honu posted the full Slap Chop commercial. It's post # 1447 if you want to watch it. Seriously, it is soooooo funny! The tuna motto comes from the commercial.

-We STRONGLY suspect that Jenny's work crush has a crush on her!!!

-Creepy Elvis guy has been leaving Jenny alone. In fact, he seems to be avoiding her. Thank goodness!!


-Jenny informed us of the new Earthquake attraction at Universal Studios featuring The Rock. (I HAVE to see that!!)

-Jacoby 46 (aka Mrs. Ellsbury here on the UC thread) got pretty sick the other day. Her daughter has been sick, too. Please keep them in your prayers.


-Jacoby 46 (Mrs. Ellsbury) made a new Jacoby button siggie like Soarin's.


-We started posting silly signs and funny videos (starting on page 102). I posted some clips from Perfect Strangers. Remember that show? You gotta see the Balki music video!!!


-Honu had some great ideas for Unicorn T-shirts. (page 106)

Honu posted that one too a few pages ago. It's not quite as funny as the Slap Chop, but it's still really good.


By the way, how was Epcot? Was it really crowded in the parks while you were there?


Oh, one more thing. Mrs. Ellsbury and I may start a recipe exchange here on the UC thread. You mentioned before that you wanted some easy recipes. What kinds of food do you and Jackson like to eat (Mexican, American, Italian, Greek, etc.)?

I have seen Shamwow! and I want one. I love love love that commerical. He is so funny. Jackson hates him because he's so annoying but I just sit there and laugh and laugh and laugh!

EPCOT was great! It really wasn't that crowded. I mean it was but not as bad as I've seen before. The wait times were pretty long but if you had FPs it was totally fine. :banana:

Flank Steak Marinade - From Boma, Flavors Of Africa, Animal Kingdom Lodge

3/4 tsp. Turmeric, ground
2 Tbl Garlic, minced
2 Tbl Sugar
3/4 tsp. Cardamom, ground
1/2 Tbl Coriander, ground
1/4 C Ginger, dry or 1 Tbl fresh
1/2 Tbl Thyme
3/4 tsp. Black Peppercorns, crushed
1/2 Tbl Worcestershire Sauce
1/4 C Soy Sauce, low sodium


Mix all ingredients in a large bowl. Add steak and marinate for 24 hours. This is enough to marinate 1 1/2 to 2 1/2 lbs of steak.

I haven't made this, but I have friends who have and they love it. They say it tastes just like Boma's. I have never had it at Boma's either, but I do love their Zebra Domes!! :)

Here's a family favorite. I love making this because it's soooo easy! :)



Broccoli-Chicken Casserole


3 - 4 boneless, skinless chicken breasts

2 broccoli crowns, chopped and boiled or steamed until tender, yet crisp (or 2 10-oz. pkgs. of frozen broccoli, cooked)

2 (10 3/4 oz.) cans cream of chicken soup

1/3 cup mayonnaise

1/3 cup sour cream

1 tsp. curry powder (or to taste)

1/2 tsp. salt (or to taste)

1/4 tsp. ground black pepper

1 cup shredded cheddar cheese (or more if you want )


- Season chicken with a little salt and pepper. In a skillet over medium heat, add a little cooking oil and pan-fry the chicken until fully cooked. (You can also boil the chicken in chicken broth.) When the chicken breasts are cooked, transfer them to a plate to cool for a few minutes. Shred the chicken when it is cool enough to handle.

- Preheat oven to 350 degrees.

-In a bowl, mix together the cream of chicken soup, mayo, sour cream, curry powder, salt and pepper. Mix in shredded chicken and broccoli. Use a little water to thin the soup mixture if necessary. Taste the mixture and adjust the seasonings (if necessary). Pour mixture into a 9x13-inch baking dish and top with cheddar cheese.

-Bake, uncovered, for 20-30 minutes, or until the casserole is hot and bubbly and the cheese is melted.
