That's a great idea, but unfortunately I don't have a broiler pan.
 
I bought a meatloaf pan at Target last year or so that has an insert that you put the loaf in and it has holes in the bottom. You place that insert inside a slightly bigger pan that holds all the fat drippings. Love it!! I need to make meatloaf soon.

Being down here in Florida I don't crave the warm comfort foods as much anymore and I miss them!
 
Although we're having meatloaf tonight, the main thing DW and I will be doing tonight is coming up with what to make next week, so we can come up with the list for the grocery stop tomorrow.

I'm thinking we should keep it next this week. Boneless, skinless chicken thighs, covered in BBQ sauce, in a pyrex baking pan, baked long and slow. Also, cut potato wedges, cover with butter and pressed garlic, in a pyrex baking pan, baked until golden brown. Add some steamed broccoli or asparagus, and we're all set.

Easy, and very savory!
 
Ham steak, salad, braised cabbage for me, fried potatoes for DH.
Sherbet for dessert.
 

Tonight was ham and salami hoagies and home made beef barley soup. I was going to do a chicken thing but I was called in to help build sets for a play and DH works late so he can make his own sandwich.
 
Tonight we are having leftovers from Wednesday, the chicken provencal soup. It's so yummy :)

Cheeseburgers, fries and probably salad...

I am off to Weight Watchers this morning...hopefully not watching my weight go up...I have cheated a little lately...oh well! :)

I cook my meatloaf like this all of the time. You just have to make sure that your meatloaf doesn't have too much moisture in it and you have binders in it, ie:bread crumbs, egg etc.

I found this to be the healthiest way to cook it besides the meatloaf pan with the holes in it (I'm too cheap).
 
I didn't get to do the oriental chicken yesterday, spent too much time at the hospital. I'll get to it soon. Doing take out tonite. I'm trying to plan some good things for the weekend.
 
Tonight we're having Parmesan Corn Chowder with some crusty bread to go with it. DH has to work late tonight, so it will be easy for us. We'll probably watch a good movie along with dinner.
 
We're debating on going out for pizza or eating in. I have most everything pre-made. Except for dessert, I'm making that now. It's an easy blueberry cobbler. First time using this recipe. I'll let you guys know how it turns out.

I've made pork chop schnitzel (basically pounded the pork chops, dipped them in egg, and coated them with Italian seasoning, salt & pepper, then fried them in olive oil). I have scalloped potatoes and peas to go with it and flaky biscuits.

If we don't eat the pork chop dinner tonight, we'll eat it tomorrow night.

Last night we had tilapia with a honey-mustard corn flake crumb topping, I'll post the recipe in a bit.

Tonight DH and I have a Halloween party to go to, I know there will be lots of yummy appetizer type things, I'm still deciding what to have for dinner, for the girls, and for us to have something so we don't go wild on the party food! :rotfl:
 
Well, I think I'm going to grill some burgers--depending on the weather!

Glynis--I made those Pumpkin Ginger scones (stones as DD called them) and they are delish!!! And the other great part, cooking them made my house smell like the holidays! DH walked in from work and asked where the cookies I baked were---he was a little disappointed to find out no cookies, just scones--too bad for him, Yippee for me!! Actually, I'm having one right now with my morning coffee!! Thanks for sharing the recipe

We ended up having the pork chop schnitzel. (I guess that's how it's spelled.) It was really good. Lindsay, the blueberry cobbler was great!! We didn't have vanilla ice cream but we had plenty of Cool Whip. I'll have to pick up some vanila ice cream today. Cobbler + ice cream is the best! I will post the recipe later today. It was super easy!

Don't know what where having for dinner today. I'll have to see what we have on hand.
 
I'm trying a new recipe I found in the local newspaper last week - Crock-pot lemon roasted chicken . Hope it turns out good. I'll fix confetti risotto to go with it.

I've also been marinating a london broil for a few days in FormrCast Mbr's recipe. That will be for tomorrow.

The recipe was from WW, originally for salmon, but I use it with tilapia as well. Very easy and very tasty.

Baked Dijon Salmon

1.5 lbs fish filets
3 T. prepared dijon style mustard
1 T. honey
2 T. cornflake crumbs (I have also used crushed Honey Bunches of Oats with Almonds)
1 T. butter, melted
1 T. fresh chopped parsley
salt and pepper to taste

Preheat oven to 400 degrees F. In a small bowl, stir together mustard and honey. Set aside. In another bowl, mix together cornflake crumbs, butter and parsely. Spread mustard mixture over filets, top with crumb mixture. Bake in preheated oven until fish flakes easily with fork, approx. 10 - 15 minutes. Season with salt and pepper.

4 servings

Optional- you can add one clove of crushed garlic to the mustard mixture.
WW about 8 pts per serving.
