Well, I decided on crockpot sloppy joes for the kids and DH tonight. Here's the recipe for the "unfried Chicken" I made last night--it was yummy!
Unfried Chicken (from WW Simply Delicious) 6 pts. per serving
1/4 cup reduced cal mayo
1 tsp Dijon Mustard
2 tsp grated lemon zest
1/2 tsp salt
4 drops hot pepper sauce
1 (3 1/2lb) chicken, cut in eighths, skin removed (I used chicken breasts)
3/4 cup cornflake crumbs
Preheat the oven to 375. Spray a large, shallow baking pan with nonstick spray
Whisk together the mayo, mustard, lemon zest, salt and pepper sauce in a large bowl. Add the chicken, toss to coat
Place the cornflake crumbs ina large zipper bag. Add the chicken, one piece at a time, and shake to coat
Place the chicken in the baking pan. spray the top of the chicken lightly with nonstick spray. bake until golden brown and cooked through (do not turn) about 45 minutes.
