Well, I decided on crockpot sloppy joes for the kids and DH tonight. Here's the recipe for the "unfried Chicken" I made last night--it was yummy!

Unfried Chicken (from WW Simply Delicious) 6 pts. per serving
1/4 cup reduced cal mayo
1 tsp Dijon Mustard
2 tsp grated lemon zest
1/2 tsp salt
4 drops hot pepper sauce
1 (3 1/2lb) chicken, cut in eighths, skin removed (I used chicken breasts)
3/4 cup cornflake crumbs

Preheat the oven to 375. Spray a large, shallow baking pan with nonstick spray

Whisk together the mayo, mustard, lemon zest, salt and pepper sauce in a large bowl. Add the chicken, toss to coat

Place the cornflake crumbs ina large zipper bag. Add the chicken, one piece at a time, and shake to coat

Place the chicken in the baking pan. spray the top of the chicken lightly with nonstick spray. bake until golden brown and cooked through (do not turn) about 45 minutes.

He was actually right outside of Paris in Chantilly...I think the Dolce hotel...

Mind you, he is a very picky eater and was on business so they had set menus...the first night they had a salad with cow jowls and some kind of fish...he hates fish and I eat almost anything but I don't think I would eat anything's jowls!!! :) :) :)

I went to Paris about 10 years ago and I loved the food...you seem adveturous with you eating, so you will be fine...I remember eating a big pot of mussels with crusty bread and a glass of wine...it was heavenly! People watching!

Tonight my dad is taking my husband and I out to Witherspoon's. We will do the leftover soup tomorrow night.

I think tonight will be stir fry with chicken, veggies and hoisin sauce--I also have a packet of Thai noodles that I'll probably whip up as well! :thumbsup2
 

Broccoli and cheese soup for me and I don't know what for everyone else. Everyone is running in different directions tonight....I hate nights/days like this!
 
DGD has soccer practice and DH has been working late, so I am going to do something with the leftover ham and cabbage. It's got to be a one pot meal.
 
Tonight I am trying Glynis's Oriental Chicken and Fruited Rice Pilaf. Sounds yummy!!
 
Leftover "Shrimply Delicious Rice" with grilled tomatoes in oven (topped with olive oil, salt, pepper) and crescent rolls.
 
I'm doing an easy Chicken Divan with some nice biscuits on the side. We have a tummy bug traveling through our family, so I need a nice easy dish that will be comforting.
 
Lasy night I had a cheddar souffle and some leftover roasted vegetables and eggplant from Sunday's dinner.

The pantry is officially bare, so tonight Dsis and I are ordering Indian food.

I made 2 pots of cheddar potato soup last night and that will last for tonight as well. It is cold and rainy and this hit the spot!

Has anyone ever tried cooking a meatloaf on a rack? I never make meatloaf because it is so fatty. However, I'm going to make it tonight and I'm trying to figure out if it will fall through the rack if I try to bake it that way. :confused3
 
It might not completely fall through but it might bake into the rack. You will have to experiment!

Maybe put the majority of the loaf on foil and then put that on the rack??? Or make in the normal way and drain off the fat before you put any sauce on top...

I've always baked my meatloaf using a broiler pan, doesn't fall through and the grease slides right into the bottom pan!

I was thinking about that. Maybe I'll put heavy duty foil on the rack and punch some little holes in it so the grease will drain. Hope it works.
