It's so funny that everyone is making meatloaf today. I was just thinking about the meatloaf my mom used to make when I was a kid (in the 80's). I remember it had an orange cheese sauce on top and it was soooo good. I think it was some kind of mix you bought in a box.

We aren't having meatloaf though... tonight is turkey breast, mashed potatoes, gravy and butternut squash.

Well, the baked chops and fries was wonderful last night! Tonight we're having Cinnamon Raisin Chicken. DH and I love it, but the kids don't. Tough! They'll either eat it or not! I like to keep exposing them to things so they'll continue to give things a try! For sides we'll have green beans and some kind of noodle dish. I haven't decided that one, yet.

Looks like I'm missing out on a trend with meatloaf, though. Hey, if anyone wants it, I have a great recipe for Sweet and Sour meatloaf. The good part is that you cook it in the microwave, so you don't have to heat up the whole house cooking it! Let me know!

We are going to be eating a lot of pasta over the next few days as we clear out the pantry for our trip. Tonight I am making linguini with shrimp, basil, and lemon.

So, guess what, dinner friends? I am leaving for Disney in 9 days with Dsis and the kids (Dh flies down Monday) AND Liam is sick! He got diagnosed with strep throat today! He will be fine by the time we leave, but I've got my fingers crossed that he doesn't pass it to his sister or my Dsis. Argh!!

Here you go!

Sweet and Sour Meatloaf

1 egg
5 Tbs. ketchup, divided
2 Tbs. prepared mustard
1/2 C. dry bread crumbs
2 Tbs. onion soup mix
1/4 tsp. salt
1/4 tsp. pepper
1 pound ground beef
1/4 C. sugar
2 Tbs. brown sugar
2 Tbs. cider vinegar

In a bowl, lightly beat the egg. Add 2 Tbs. of ketchup, mustard, bread crumbs, soup mix, salt and pepper. Crumble beef over mixture and mix well. Shape into an oval loaf. Place in a shallow 1 quart microwave safe dish; cover with waxed paper. Microwave on high for 11-12 minutes or until meat is no longer pink, rotating a half turn once; drain. In a small bowl, combine the sugars, vinegar and remaining ketchup; drizzle over meatloaf. Cover and microwave on high for 3-5 minutes. Let stand for 10 minutes before slicing.

Enjoy! DH says it's his favorite meatloaf!
 

Tonight we are having leftover meatloaf and smashed potatoes. We ate all the peas so I may add some corn on the side.

No pizza for me - I'm going to my cousin's 21st birthday. My aunt rented out a room at the Japanese Steakhouse/Hibachi so I will be having that - 5 appetizers, your choice of meats/seafood on the hibachi, soup, salad, cake, green tea or red bean ice cream and open bar. (I'm hoping for a coconut martini) :)

I will probably have scallops - the ginger dressing for the salads is so delicious. Can you believe I'm looking forward to that salad dressing with all the other goodies?!
 
ok so last night my sister called and invited me for dinner! I said sure, I dont wanna cook, BUT now I have ground turkey left over in the fridge, so Im going to experiment... wish me luck! If its anygood I will get back to ya! If not I might be in the ER getting my stomach pumped!
 
What are you making with the ground turkey, tammyandtommy? I always buy it and then can't decide what to do with it. I usually end up dumping it into the freezer.

It's raining and generally yucky around here weather wise, so I am making comfort food. Baked acorn squash with maple butter in the center, and a four cheese risotto. I'm popping by the farmer's market after work (assuming they are open in this weather) to try and get some brussels sprouts to go with it. We'll see if I am lucky.
 
I saw Ina Garten make a shrimp and linguine the other night that looked simple and delicious, so that is what I will be making. I think I am going to make some pita chips too and get some hummus for an appetizer. Chardonnay. Candles. Cheesecake and rasberries. (Just the two of us tonight). :)

Well I am coming down with a cold, and since we just got back from WDW our freezer is bare, so no chicken for chicken noodle soup, which always makes me feel better, so I am going to try and make a turkey burger noodle soup! LOL so far it has
ground turkey
carrots
onion
celery
corn
green beans
chicken broth
water
garlic, salt, pepper

Umm thats it for now I tend to dr as I go!
 
Easy night for me...we are going to my neices 7th birthday party so dinner with be there.

DFi is going to Paris tomorrow through Wednesday, so it will be just me and Andrew DS8 so all easy meals for the next several days!

I've made this before and it's yummo! Except for the fact I almost burnt the house down defrosting my sausage--hmm, I set it out on the stove and turned the wrong burner on--burning styrofoam, not very appetizing! ;)

This is from the Paula Deen newsletter- made it yesterday- OMG!
It tastes like a Mars bar to me.....Love it! A local restaurant makes this and sells it for $4.00 a slice. The total ingredients cost me about $6.00.


6-8 servings

16-20 large marshmallows (I used 20)
4 (1 1/2 ounce)Hershey chocolate bars with almonds
1/2 cup milk
1 cup heavy cream
1 tsp vanilla
1 (8 inch) graham cracker pie crust

Melt marshmallows and candy bars in milk over a double boiler. Remove from heat and cool. Whip cream until stiff and fold into cooled chocolate mixture. Add vanilla. Pour into prepared crust and chill.Good as is or top with whipped cream.

Oh this sounds so good! I have everything onhand except the crust, and I can make my own with some graham crackers on the shelf. This sounds like a dessert this weekend.

Dinner was so good last night. DH ordered surf and turf and had bay scallpops and prime rib. I had veal picatta. The show was so much fun....it is always nice going down memory lane with DH. I don't know what is for dinner tonite. I really don't feel like cooking, but we have eaten out twice this week, so I cannot justify ordering in.

I am off the hook! DH just called and asked if I wanted to join some friends for dinner this evening. I don't know where we are going or what we are eating, but I know it means I am not cooking :thumbsup2 !
 
DH is taking me out to dinner tonight! I'll make mac n cheese for the kids and the babysitter! Woo Hoo! I'm going out tonight!!!!!
