DH is coordinating downtime tonight and probably won't be home until 1am so I took the kids to McDonalds and I am making a pumpkin cheesecake for me. ;)

I had a HUGE wet burrito for lunch and I am really not hungry but pumpkin cheesecake sure sounds good. ;)

If anyone wants the recipe, just let me know. It is layered with the bottom being regular cheesecake and the top being pumpkin.
 

We are going out to lunch somewhere today, don't know where yet. We've been talking about going to see The Prestige today but I don't know if we will have time. For actual dinner we are going to a cookout. They are grilling hotdogs. A lot of the time hotdogs don't sit well on my stomach so that's why we are going out earlier. We're going to the cookout mainly just to hang out with friends. I am taking my espresso brownies :)

Have fun at the cookout Lindsay! Must be warmer down south there, pretty cold here today (35 right now), and we have DD's soccer game in just a little over an hour. BRRRR.

Not sure what we'll have today, DH and DS will both be working, so it will be myself and the 2 younger DD's. Maybe soup and salad, I've been wanting to try this lentil/sausage soup recipe I found. I'll let you know how it turns out.

Lunch for us as usual today. Hubby has a night shift and dd has a Halloween/BDay party tonight. I am fixing Filet Mignon (dd and me) and sirloin (hubby) on the grill, baked potatoes with butter and sour cream, bernaise sauce (for me--yummy), steamed broccoli, and rolls. Forecast high of 92 today so with heat index it will be at least 96. Why can't fall come here?
 
WEll, not sure--it will have to be something quick, we are going to "Boo at the Zoo" for trick-or-treating tonight!
 
Last night was cube steak with gravy, mashed potatoes and seasoned green beans with some bread. Dessert- that addictive Chocolate Almond pie got finished off. Kind of glad it is out of temptation's way- I could hear it's siren's song from the refrigerator! :lmao:

Tonight is chicken enchiladas with salad and some cookies for dessert. I assembled the enchiladas this morning (I keep cooked and shredded chicken in the freezer so quick and ready to go).

Tonight will be Garlic & Wine Grilled Shrimp, with Lemon Pasta and crusty bread for dipping in the garlic/wine sauce. OH so GOOD!!

I'm also marinating a roast today for tomorrow. I'm using FormrCastMbr's Mom's pot roast marinade. Can't wait! :Pinkbounc
 
Tonight I am searing turkey cutlets and making a mustard cream sauce for them, plus the acorn squash I was going to make last night (ended up not having enough time to roast it yesterday), with a maple syrup and apple stuffing, potato gratin, and maybe some spinach.

Well, silly me, the recipe for the lentil/sausage soup I talked about earlier I found on here!!! So, looking forward to it.

We did have another soup earlier in the week. I got this recipe from a friend, and I always look for ways to get in more greens/ veggies etc. We enjoyed it, hope you do too!

Kale Potato Soup

cooking spray (or EVOO)
1 1/2 cup chopped onion
2 cloves garlic, diced
4 cups chopped potatoes
1/4 tsp salt
1 bay leaf
7 cups chicken broth
1 cup instant potatoes
1 tsp dried basil
6 cups chopped kale (about 3/4 lb.)
(optional) 1 1/2 lb fried sausage slices (I use smoked sausage links cut into 1/4 inch slices)

Soften onions cooking for about 8 minutes. Add garlic and stir. Rip kale off stems and soak in water, drain. Boil kale over steamer rack about 5 minutes. (Kale sould not be touching the water ... should still be crisp.) Toss kale with onions/garlic. In a separate pot, stir together chicken broth, chopped potatoes, salt and bay leaf. Bring to a boil, cover and simmer 15 minutes or until tender. Add I cup instant potatoes and sausage. Stir in kale and basil. Remove from heat. Makes 8 servings.
 
It's hot here too, 88 now, but forcasted to be 90. I picked a bad day to have the oven on. I'll be making lasagna later.

I told DH I'm not cooking tomorrow 'cuz it's my bday. I think we're just going to get Chinese take-out. We usually go out to eat for bdays, but since we're going to Orlando in a couple weeks we'll just do my dinner then.
 
I ended not cooking last night - we ended up at Applebee's - it was pretty good - had the new Tyler Florence chicken dishes

tonight we are going out with my neice (9), nephew(6), my dad and his wife. I have not seen my neice and nephew in a month - I am very excited to see them. They lived with me for 10 months and moved with their Dad in Aug - now they live in VA - 3hrs away

tommorrow I will make the sausage/pumpkin/sage pasta.
 
Well, I have a NASTY cold, and don't feel like cooking! Lucky for me DH and DS are off deer hunting. The girls and I will do something. Not sure what, yet. But something easy. Any suggestions?

I am in South Florida. It was hot today but didn't seem as bad as I expected. Lunch was ok. Somehow it never tastes as good as it sounds. Especially when I am looking forward to it.

order out pizza or chineese take out. I like comfort foods when I have a cold. If you decide to cook how about spaghetti?

Today is repeat of last Saturday - we had a late lunch at Chili's at will have brownies and milk tonight! :thumbsup2
