My stepsister is in town from NM so I am going to my parent's house for dinner. We are having Aunt Betty's Chicken, which is chicken breasts topped with swiss cheese, cream of something soup, and Stove-top. Mmmmmmmmmmm! I will post the recipe later.

Nothing exciting- I'm working late so we're having spaghetti. I'll cook some italian sausages I have in the freezer for dh and ds to have with it (dd and I are trying to lose weight so none for us).
 
ooops missed yesterday, we had a pot roast, it was devine! oh and cresent rolls.

Tonight is fried chicken, mashed taters, corn, and broccoli.

I got back from WDW on Monday! I missed my cooking!
 

I think (b/c of tammyandtommy) that I'll make some oven-fried chicken, a WW recipe and some mashed potatoes and veggie of some sort!

Another easy night for me...DS and I are going to our friends house after school so the kids can play so we are having pizza there...

DS8 also made out well at the orthodontist! I guess it was an easy procedure to put the spacers in...it took about 5 minutes. Thank God!

DFi is working late so he will not be coming to our friends...I'll make him something quick when I get home...

Tonite we are having the fried pork chops with mashed potatoes and gravy and some kind of veggie. I have some nice baby cukes so I will be adding them to the meal. It is cloudy here and I need comfort food.

Thanks everyone, actually Mom didn't come home yesterday, only because of technicalities. She will be home today, they assure me!!

Tonight I will be trying FormrCastMbr, Lauren's Italian Pork Chop and potato dish that she posted on Lindsay's cookbook thread, along with a caesar salad and garlic bread! Can't wait! :Pinkbounc
 
Tonight for dinner I'm making Glynis's pot roast recipe, either mashed potatoes or au gratin potatoes, corn and rolls.

I have a quick question- I got the ingredients for the pot roast the other day. I noticed the brown gravy mix and the ranch mix were the same size package but the italian dressing was much smaller (even though it says it makes 8 ounces?) so I got two. Should I use one packet or two?

Also- I'm making this recipe in the oven, not in the crock pot (I don't have a crock pot yet.) Should I put some beef broth in the bottom of the pan, the roast and then the seasoning mixture poured on top, or the seasoning mixture in the pan first? Since I'm using the oven and not the crockpot I thought I should use more than 1/2 cup water like the recipe says (or did I read that wrong?) How should I do this?

Lemonade Chicken

6 boneless skinless chicken breast halves
3/4 C. lemonade concentrate
3 Tbs. ketchup
2 Tbs. brown sugar
1 Tbs. cider vinegar
2 Tbs. cornstarch
2 Tbs. cold water

Place chicken in a slow cooker. Combine the lemonade, ketchup, brown sugar and vinegar; pour over chicken. Cover and cook on low for 3-5 hours or until chicken juices run clear. Remove chicken and keep warm. For gravy, combine cornstarch and water until smooth; stir into cooking juices. Cover and cook on high for 30 minutes or until thickened. Return chicken to slow cooker; heat through.
this is what I am going to make tonight with some rice.

Just use one packet of the italian dressing mix. I've never made this in the oven, so I'm not really sure. I know some here have done it in the oven, hopefully they'll be able to help you out. I don't think I'd add any broth though, as it might make things more salty.
 
Ravioli in a sauce of asparagus, browned butter, chicken stock, parmesean cheese, and toasted pine nuts. Salad on the side, and maybe some garlic bread too if I am feeling the need to carb-load.

I think you'll like it Jennifer. I do have a suggestion, though. I let the chicken cook longer than the suggested time, and it was just wonderful. I think that you need to cook it until it shreds easily, and then you can mix it with the yummy sauce, and serve it over the rice. I tried to keep my chicken breasts together, and so the middle of the chicken didn't get any of the sauce. It would have rocked if I'd shredded it.

How about chunks? My DFi is wierd and doesn't like anything shredded... :confused3

well DH was supposed to take the chicken out of the freezer last night. Well he forgot. so I put it in the crock pot frozen. I also only have 3 chicken breast. But I am sure it will be fine.

I did mine frozen, too. I put them in at about 11:00 in the morning, and we ate at 7:00 that night. You should be fine!!!

I think chunks would be fine! Just watch your cooking time so they don't fall apart on you. I think this would also be a really good recipe to use with breaded chicken nuggets for kids. It wouldn't take nearly as long either, since you're just heating the nuggets and sauce together. Hmmmmm....
 
We are having Beef Tips w/ Mushrooms, Twice Baked Mashed Potatoes, & Green Beans. I cook my green beans with some white wine. I loooove them cooked in white wine.

I LOOOOOVE beef tips at steakhouses, but just can't seem to get any good ones at other people's homes. The meat is tough or something. How do you make yours?? *drooling just thinking about them w/ mushrooms!!*
