It is so raw today that I am thinking of comfort food. I am roasting chicken with prunes, sage, garlic and apricot jam. So Good! with mashed potatoes, green beans, tomatoes and cucumbers with a cucumber dressing, and if I am still going, clam chowder to start. My DH is going to be checking out a shed again tonite, so he will need something to warm up.
 
Going to try a risotto recipe tonight--if I have enough time--going to get my hair done this afternoon, so we'll see what time I have after that. There's always leftover curry from last night.

I posted that recipe!!! I'm glad y'all liked it. My DH loves it too. He says just give him the sauce and a loaf of french bread and he's good to go!

Pan poached fish

Boil remaining liquid in the skillet until it is reduced to approximately 1/4 cup. Whisk in butter and stir in capers. Spoon sauce over fish. Season with pepper and sprinkle with parsley.

We're eating early again tonight because DS has a baseball practice. Actually, it is more a team-building exercise at this point because the weather is lousy, so the coach is having the boys over to his house. Brave man.

Anyway, we are having individual pizzas.
 
Lindsay - that chicken sounds awesome - I'll have to try that this weekend!

Not sure what's for dinner tonight, nothing thawed out so one of us will have to hit the store.
 
I did not end up using my chicken last night--instead I made carmelized onion and steak panini for DH and carmelized onion and roasted mushroom panini for me.

Tonight I am making chicken milanese--chicken breast pounded thin, breaded and sauteed, then toppped with arugula salad.

Not sure what is for dinner tonight, my mother is cooking. She took out chicken which probably means Crock Pot, the woman cooks once a week and it is usually chicken in the crockpot with cream of something soup. :rolleyes:

THANK YOU SO MUCH!!!!!! This is one of my hubby's faves. And boy, is it comfort food!! :) I bought some cheese foccia to eat with it tonight :)
 
Tonight we are having leftover Italian chicken. Boy was it good!!!!

Tonite we are having Rachel Ray's (don't cha just love Rach?) baked chimichangas with some cut fruit. DH says it doesn't look like food to him, so he will have leftover apricat chicken, which was to die for!

Still no go on the charcoal grill. If my menfolk don't put it together today, I'm doing it tomorrow!

I'm hungry for salad, so I'm going to make a big salad tonight and try out those wishbone spray dressings. I'll also make garlicky green beans with almonds, and either chicken or pork chops on the gas grill.

Busy day yesterday so we had an easy dinner of Reubens and fried mozzarella sticks.

I have to work tonight so it will be another easy meal ~ most likely chicken from the deli, sweet corn and baked potatoes :sunny:
 
Well, going to see if I can try that risotto recipe again tonight--I spent so long at the stylist's yesterday that I ended up eating the kids leftover mac and cheese--Yuck!
 
Tonight is the only night this week that we are not gulping down dinner and rushing off to some practice or rehearsal, so in my excitement at the prospect of actually being able to enjoy dinner, I bought way too much food. That's okay, it will be good for leftovers when we are once again eating and running tomorrow.

Planned menu is: Grilled porterhouse steak (DD's favorite), grilled chicken rubbed with cumin, spicy avocado/sour cream sauce for steak and chicken, hobo pack sweet potato, hobo pack plain potatoes (for kids), sauteed corn, roasted asparagus, and sugar snap peas.

Can you tell I am hungry?

Well, unlike my apparently ravenous sister, I am feeling completely uninspired to make dinner tonight. I'd like to go out to eat, but DH and I are going to be doing that a lot soon, as the workers arrive Saturday to rip my house apart (replacing all carpet with pergo, and all walls ceilings, and trim are being painted).

Maybe I will just make a souffle and a salad.
