Just wanted to add that you can use mushrooms in that recipe. I use mushrooms in a lot of dishes I make (they're one of my favorites!!) but they're especially good in this dish because they pick up the flavor of the Italian seasonings. Fresh sliced or canned work equally as well.
 
Note: the roast turned out really good. The only catch was it still needed a pinch of salt :)

Didn't feel like cooking tonight, so DH and I are having Mickey waffles, sausage and applesauce. DS didn't want waffles so he's having a Kid Cuisine(2 chicken legs, corn, pudding).

Tomorrow it's marinated grilled skirt steak, I think.
 

Went to SIL's house to eat with DH's family for Palm Sunday. We had eggplant parm, stuffed chicken breast, roasted potatoes, and asparagus.
 
We had beef tacos for dinner and they were yummy! DH worked in the yard all day so he needed something substantial.....I think he's about had it with my Weight Watcher point counting...lol :)

Salmon, couscous and Green Giant Frozen Peas in Butter Sauce.
 
I have a Pork roast & sauerkraut in the crockpot. We'll also have mashed potatoes and green beans. Dh loves this dinner, except for the fact that the house will smell like sauerkraut for awhile. :rolleyes:

Ahh saurkraut- the sure fire food that will put hair on your chest :) Kidding, I love the stuff :)
 
We're having another Rachael Ray recipe tonight (can you tell I love her stuff? :rolleyes: ) Anyway, the recipe title is really long but it boils down to Cuban Sloppy Joes with smashed Yucca root and plantain chips! Oh, and another sauerkraut lover here--unfortunately DH doesn't share my German roots, so I don't get to make it very often

Don't give it a second thought. I make her stuff all the time. It's yummy and easy. I have taken a lot of her recipes, added and taken away, and made them my own, too :)

Tonight is my husband's monthly geek meeting so he won't be home until 8-9:00. I decided to have a girl's night. My two best friends (we are cousins, they are sisters) are coming over. We are having an Asian theme. Hot and cold sesame noodles (recipe below, courtesy of 30 Minute Meals), springs rolls (courtesy of the grocery store freezer section), and strawberry pie (I know, has nothing to do with the theme, just a craving). We will also have some green tea. Afterward we are watching "Mystery Date." :)

Hot and Cold Sesame Noodles


1/2 pound spaghetti
1/4 cup Tamari dark soy, eyeball it
1/4 rounded cup smooth peanut butter, softened in microwave 15 seconds on high
2 tablespoons cider or rice wine vinegar
1 tablespoon dark sesame oil, eyeball it
2 tablespoons hot sauce (I am leaving this out, tummy doesn't like hot sauce)
2 cups shredded cabbage and carrot mix, available in produce department
1 cup bean sprouts or pea shoots, any variety, available in produce department
3 scallions, chopped on an angle
2 tablespoons sesame seeds

Cook pasta to al dente, with a bite to it, then cold shock it to stop the cooking process by running it under cold water in colander. Drain the pasta very well. In the bottom of a large bowl, whisk together soy, peanut butter, vinegar, oil, sesame oil, and hot sauce. Add noodles and veggies and toss to combine the noodles and coat them evenly with sauce. Sprinkle scallions and sesame seeds throughout the salad and serve.
