red pepper flakes
and it's topped with neufchatel cheese

DH made one last week and I came home and only found three bites left for me. each one is supposed to serve two!

They sounded so good. We made four as part of my session, and they were so easy to do. We'll be doing something similar at home, but making it with more broccoli,more chicken and a lot more neufchatel!

Morning!

Tonight we are having Crockpot Chicken Noodle Soup :) It is awesome! Talk about your comfort food :)

1 large onion, sliced
5 carrots. chopped
2 tsp. salt
4 oz. mushrooms, sliced
½ tsp. pepper
¼ tsp. thyme
10 oz. frozen peas
3 boneless, skinless chicken breasts
5 cups water (you can also use chicken broth instead- if you do, OMIT THE SALT!!)
3 cups noodles

Place ingredients in a crock pot, except the noodles, in the order listed. Cook on low for 8 hours. Remove chicken and shred, put back in crock pot. Add noodles and cook on high for ½ hour.

Can you give some instructions? This sounds sooooo good, and I would love to make it when the girls come over to scrap.
 

I think tonight will be Chicken with Lime sauce or Salsa Verde Chicken Enchiladas--Both from this month's Cooking Light magazine!
 
Tonight I am making grilled sausages with an apple, onion and sage sauce, served over soft polenta with roasted garlic.

Editing to say that I wimped out on stirring the polenta, as it ended up being warmer than I thought it was going to be today, so instead I am serving it with crispy spaetzle.

Either butter or spray your pan with Pam, and place a puff pastry in it, so that there will be some pastry on top, but not completely covering the mixture. Place the mixture inside, and top with neufchatel. then butter pastry. Cook for approximately 45 minutes at 350.

Oh my gosh this sounds sooo good!!!

I made a big pot of homemade chicken and noodles.
 
Tonight we had turkey tenderloin marinated in a lemon garlic sauce, stuffing, corn and italian bread. I had the day off so I try to fix a half way decent meal when I'm home.
 
Had Fudruckers tonight, had planned on making meatball subs but I totally messed up and didn't realize that tonight was a fundraiser at Fudruckers that I needed to go to.

I think we should all go to liamsaunt's house for dinner one night. :teeth:

Tonight I am making a grilled ribeye steak with blue cheese butter (for DH only, I don't eat red meat), corn fricassee, roasted asparagus, and sliced tomatoes with basil (If the market still has the brandywine tomatoes I saw there earlier this week. Where they got them from this early I have no idea!).

All of your menus sound wonderful. Where do you get the ideas for your meals? Do you have recipes for all these things? Do you make up your own recipes or methods? Are you trained as a chef? Will you adopt me?

Please help me be more inspired in my menu planning.

Thank you! I just really like to cook. It's one of my hobbies. I don't have any formal training or anything like that.

I use recipes sometimes, and sometimes I make things up. I own (ahem) a lot of cookooks (we'll just leave it at that), and I tend to read them cover to cover to get ideas. I also subscribe to cooking magazines, though I have been letting lots of them expire. My favorite is Fine Cooking.

As far as menus, I just try to put together things that sound good to me. I like to eat lots of vegetables and very little meat (I was a strict vegetarian for about 10 years, and meat is still not my favorite). DH likes meat though and I don't mind cooking it at all. So, when I make meat I also have lots of vegetables since I know I am only good for one or two bites of the chicken.

In general, I try to plan the menu with at least two vegetables and one starch. I make chicken and/or seafood a couple of times a week, and DH has red meat once a week.
 
I'm currently making a huge pot of ground turkey/bean chili for quick meals this weekend... however tonight we may have crab cakes, mixed veggies, and salad.
 
I'm working at the fish fry at my kids school tonight, so some of us are eating there, DD is babysitting, so making her grilled cheese ahead of time. Not too great of a cooking night!

This thread sounds great, I'm going to have to stop in here more often. :sunny:
