Last night we had Teriyaki Skirt Steak, pasta in white cheddar sauce, and peas.

Tonight we're having spaghetti 'n meatballs and probably broccoli.
 
I've had a killer cold so the cooking has been as easy as possible- Saturday pot roast in crockpot with potatoes, Sunday pot roast/potato soup for lunch with grilled cheese and BBQ beef sandwiches (pot roast!) with tater tots for dinner. Dinner tonight? Leftover pot roast makes it's final appearance as shredded beef soft tacos. Gee, I want some fish soon! :fish:
 
Hamburgers, fries, and baked beans tonight. Summer came back for a few days so we'll take advantage of the grill.

Has that Banana Fudge cake recipe been posted yet?

I also bought the ingredients for Glynnis's Pot Roast and (is it Sugar Pie? I can't remember) Sweet and Sour Pork. Looks like a good week.
 
I am making Glynis' Pizza Meatloaf Muffins and sides...just haven't figured that out yet!

Tomorrow I am going to smother pork chops...never made it but I'll try it...

I thawed chicken out for dinner tonight, but DD and her family are headed to the Big E for the evening, and DH is working late. We'll just have leftovers from last nights grilled steaks and baked sweet potatoes.

Glynis, I thawed out 2 chuck roasts for tomorrow night, and have the ingrediants on hand. I cannot wait! I always sear the meat before I cook a pot roast, but I don't see that here. Can I just put the meat in the crock pot without searing it?

I also saw the brushetta chicken in the kraft magazine. Please let us know how it is.

I don't sear the roasts before putting them in the crock pot. I'm sure you could, I just like the convenience of throwing everything in the crock pot and letting it do the work for me!

When I made it I seared the roast, but I don't think it matters. :)

Glynis: OMG!! I made your pot roast tonight and it was great!!! I don't have a crock pot so I used a - I guess it is called - dutch oven at 350 degrees for about 3-1/2 - 4 hours. It was perfect. Especially the gravy! Fantastic!! Thank you. :bounce:

Very cool! I'm so glad you liked it! I just love the ease! Not to mention the taste!

Forgot to mention, I served it with mashed potatoes and green peas. Can't wait for leftovers later this week! :thumbsup2

Would would think that those 3 packets would make such a great combination?! :cool1:

Would it be ok to freeze some of the leftovers? :confused3

I want to try this, but I want to cook it in a clay roaster. Do you think the times would be the same as a dutch oven?

I'm sorry I'm not an expert - maybe someone else can answer. But, I would say "yes" - it probably would be the same. I set the oven timer for 4 hours and went back to it a couple of times and flipped the roasts twice. And toward the end I kinda cut into the middle of one to make sure it was done. At the end of 4 hours it was so tender it was falling apart. Very yummy!!!!!!
 
Ok, I see that there have been a few requests for my banana fudge cake recipe, and I am very happy to share it with you:

Banana Fudge Cake
1 pkg chocolate fudge cake mix
1 large ripe banana, mashed

Frosting
1/2 C butter
1/4 C. water (or less)
5 1/2 C powdered sugar
2 pkts pre-melted unsweetened chocolate
1 small ripe banana, mashed
1 tsp. vanilla

Prepare cake according to package directions, and beat on low speed with a hand mixer for 1 minute. Add mashed banana; beat on high for 2 minutes. Pour batter into a greased 9 x 13" pan and bake for 35-40 minutes, or until toothpick inserted comes out clean, at 350 degrees. Allow cake to cool completely. For frosting, in saucepan heat butter and 2 T water until melted; beat in 4 C powdered sugar, pre-melted chocolate and mashed banana with a hand mixer until smooth. Add enough remaining powdered sugar and water to desired spreading consistency, if needed. Stir in vanilla. Frost cake. Store cake in refrigerator.

I think if Rachel Ray ate this cake, she would think it is "yummo".

Dinner in the Bixby household (that would be mine) was a tad boring this evening. I had an evening meeting, and worked all day, so decided to try one of those Marie Callendar (sp?) crock pot meals. Has anyone tried these? It's an all-in-one kind of a thing, and I tried the chicken and noodles. It was okay considering I was in a pinch for time. We had corn muffins and mandarin oranges with it. And, yes, we had leftover banana fudge cake. Yummo!!!!
 
Creole inspired shrimp w. rice. I made a box of whole grain rice a roni Spanish rice flavor with tomatoes. I sauteed some onion, celery and green pepper and added some shrimp and two kinds of hot sauce. Together it was pretty good. :)

Thanks! Well I think I will give it a try in my clay roaster. I have a crock pot that I received as a wedding gift (11 years ago) but I have never even taken it out of the box. I am just too intimidated to try!
 
I am having spinach lasagna, salad, and bread. No worries, the spinach is frozen, not fresh :) I picked up some Olive Garden dressing and have some garlic oregano bread. Mmmmmmmm! What a dinner!
