I wanted to try the pot roast recipe, but the roasts looked really fatty at the store yesterday. Guess I'll try again for that one next week.

Tonight is DH's last night home, before another two weeks of travel. DD is away for dinner so I'm fixing a pot of dirty rice and some cornbread.

The banana fudge cake sounds like something I should file away. Bet my family would love that. And the pineapple kugel is something I'll have to try. DS loves pineapple. What is good served with it? And I'm the crockpot queen. I'd love more crockpot recipes. It saves my life in the winter when my DD has a busy schedule.

I bought a family pack of ground beef and cooked it all today. Some went to meatballs and the rest just got scrambled. I'm pleased that I've made some headway on 6 dinners in one go. I can just pull one packet out of the freezer and finish it up. Don't you just love it when you make fixing dinner easier?

Original recipe yield: 8 servings.
Servings:8 (change)

INGREDIENTS:
1 (8 ounce) package wide egg noodles
6 eggs
5 tablespoons unsalted butter, melted
1/2 cup white sugar
1 (8 ounce) can crushed pineapple, with juice
1 1/4 teaspoons vanilla extract
1 teaspoon ground cinnamon
1 (8 ounce) can sliced pineapple, drained
1/4 cup candied cherries (optional) I use marichino sp.?

DIRECTIONS:
Boil noodles in boiling salted water just until softened; do not cook through. Rinse, and drain.
Beat the eggs with the melted butter. Mix in sugar, crushed pineapple with juice, vanilla, and cinnamon. Stir in the noodles. Spread into a greased 9 x 13 inch baking pan. Place pineapple rings decoratively over the top. Place a cherry in the center of each ring if desired
Bake at 350 degrees F (175 degrees C) for 50 minutes, or until golden.
Oh that sounds yummy.

I was, until I started having kids. Now I'm a full time mother. Teaching was hard, but really rewarding. I taught high school English. What do you teach?
 
I teach 4th grade. This is only my 2nd year so it's nonstop work! I'm also a single mom in a situation where my "X" does NOTHING!!!! So, needless to say I have a "full plate"!
Speaking of full plates; tonight is grilled cheese sandwiches and left over Mug Pie Soup!
Unfortunately there is no more of the pot roast. We used one 2.5 lb. roast and it all went! It was very good. My son said it was the best thing he ever had!!! :thumbsup2
 
Tonight we are having nachos with our leftover black bean chili. Mmmm!

FYI, give me a few minutes to update the recipe index. I need to get through my DIS reading before I can update it. There's a bunch I need to add!!

Glynis, your pot roast was so yummy and SO EASY!!! DH absolutely loved it! Tonight we're going to use the leftover roast in Beef Stroganoff casserole.
 
Last night we had baked salmon stuffed with crab, steamed yellow squash and steamed broccoli with a dash of lemon. Really good. For desert we had pumpkin bread & cream cheese frosting. (It was the easiest recipe for pumpkin bread, I think it was 4-5 ingredients using Bisquick!) Delicious. :) It's just about gone.

Tonight I think we'll have eggplant parmesan, some greens and some banana bread. For the banana bread, I just use yellow cake mix & bananas (sometimes walnuts). Follow the recipe for using the yellow cake mix (extra moist) add bananas & nuts, blend well. If I have a bunch of bananas I reduce the liquid a bit. Place the mixture into two loaf pans (greased) and bake on 350 for about an hour. I check it with a knife to see if it's done. (Sometimes it needs extra time because of the liquid the bananas add to the mix.) It always turns out super! :)
 
It wouldn't be a Monday in New Orleans without red beans & rice and smoked sausage. :thumbsup2 Hope everyone has a great day!!

I didn't cook all weekend, so I'm going to make up for it by baking. :) I made the Tollhouse cookie recipe & mixed in some toffee pieces, then I spread it into a pan. It smells really yummy. I also have some bananas to use up & I'm going to make banana bread.

Thanks! I like salsa with tuna also, I just haven't been making it lately. My favorite one has nectarines and black beans in it. What's in your mango salsa?
 
I'm back to just DD and myself this week. DH left for the second leg of his trip. So I tossed Forgotten Beef in the crockpot. I'll fix some salad and either mashed potatoes or noodles to go with it.

I bascally straght out substitute tomatoes for mango, so it's
Mango
Onion (red or vdalia)
Cilatro
Jalapeno
Lime Juice
Garlic
CUmin
chili powder


Edited to add....I think tonights dinner will be Swiss Chicken Casserole

Wow! You do have your plate full! I'm glad the roast went over well!

Yay!!!!! I'm so glad people are liking that recipe! It's one thing when your family tells you something is good, but it's much more gratifying here! I bet the leftover roast would be scrumptious in Stroganoff! Good luck!
 
Tonight we are having Bruschetta Chicken Bake. It's a recipe from this month's Kraft Food magazine. I'll let you know if it's any good tomorrow! I can't wait, I've been craving chicken for a long time. My family is on a real ground beef kick, so I've been giving them what they want. Now it's my turn. For tomorrow, I'm thinking about the Reubens.
