I'm making the Crock Pot Sweet n' Sour Pork Chops recipe. I hope it comes out good!!! I'll let everyone know! :sunny:

Ok, I see that there have been a few requests for my banana fudge cake recipe, and I am very happy to share it with you:

Banana Fudge Cake
1 pkg chocolate fudge cake mix
1 large ripe banana, mashed

Frosting
1/2 C butter
1/4 C. water (or less)
5 1/2 C powdered sugar
2 pkts pre-melted unsweetened chocolate
1 small ripe banana, mashed
1 tsp. vanilla

Prepare cake according to package directions, and beat on low speed with a hand mixer for 1 minute. Add mashed banana; beat on high for 2 minutes. Pour batter into a greased 9 x 13" pan and bake for 35-40 minutes, or until toothpick inserted comes out clean, at 350 degrees. Allow cake to cool completely. For frosting, in saucepan heat butter and 2 T water until melted; beat in 4 C powdered sugar, pre-melted chocolate and mashed banana with a hand mixer until smooth. Add enough remaining powdered sugar and water to desired spreading consistency, if needed. Stir in vanilla. Frost cake. Store cake in refrigerator.

I think if Rachel Ray ate this cake, she would think it is "yummo".

Dinner in the Bixby household (that would be mine) was a tad boring this evening. I had an evening meeting, and worked all day, so decided to try one of those Marie Callendar (sp?) crock pot meals. Has anyone tried these? It's an all-in-one kind of a thing, and I tried the chicken and noodles. It was okay considering I was in a pinch for time. We had corn muffins and mandarin oranges with it. And, yes, we had leftover banana fudge cake. Yummo!!!!

Good morning everyone. Tonight will be Ham and Swiss stuffed Chicken Breasts (this is a quick fix) with some kind of pasta and a veggie, not quite sure on the pasta and veggie yet!!
 
I just put a boston butt in the crockpot for dinner. I'm also going to make Knock-Off KFC Cole Slaw, corn and maybe some fried potatoes.

Our weather has finally turned "fall-like" so it's going to be comforting casserolle night here--called Imperial Crab Bake--it's a first try for us so we'll just have to wait and see!

I would think freezing would be just fine! I can't say for sure, as we've never had any leftovers!

Don't be intimidated by the crock pot!!! Seriously, it is one of my favorite kitchen gadgets! During the school year I use it at least twice a week, what with music lessons, karate, dance lessons, etc., I just don't have much time in the kitchen. I just love that I can get dinner started around noon and just forget about it until dinner time.

I can get you some really easy crockpot recipes to start with. I'll dig them out and post them later.
 
Last night we had baked ziti and tonight we are having Shake N' Bake chicken thighs with mashed potatoes and veggies. They were on sale and DH only likes thighs so it will be an easy night.

We leave for Disney in 10 days and I've been busy busy busy so it won't be anything too fancy here for awhile. ;)
 
The Bruschetta Chicken bake was really good! We really liked it a lot. If you've got this months Kraft Food magazine, check it out! If you don't, here's the recipe:

Kraft Bruschetta Chicken Bake

1 can diced tomatoes, undrained
2 cloves garlic, minced
1/2 C. water
1 pkg. Chicken flavor stuffing mix
1 pound chicken breasts, cubed
1 tsp. dried basil
1 C. shredded mozzarella cheese

Preheat oven to 400 degrees. Place tomatoes with their liquid in medium bowl. Add stuffing mix, water and garlic; stir just until stuffing mix is moistened. Set aside.

Place chicken in a 13 X 9 baking dish; sprinkle with the basil and cheese. Top with the stuffing mixture.

Bake 30 minutes or until chicken is cooked through.


Tonight we're having the Mega Meatball pizza that was posted on this thread. I'm making it with a whole wheat crust. Wish me luck! I've never tried making pizza dough before, so it should be interesting!
 
I started my pot roast with carrots and onions. I will serve it with mashed potatoes or buttered noodles. I'm leaving the choice to my DGD. Also a green veggie.


I started some homemade rolls, and hope that they come out okay. I made them once before, and they were good, but this time I cut the recipe in half, so wish me luck!

We got home late last night so just had BLTs.

Tonight I am making panko-parmesean crusted chicken, and serving it with asparagus, arugula, and maltaise sauce.

Tonight its Tigerkat inspired Smothered Pork Chops...hopefully it will come out good!!!

This thread has really motivated me to cook different things with everyones recipes! Tomorrow I will be making LindsayDunn's Italian Crockpot Chicken and some other time this week I am going to make Glynis' pot roast.

I promise to start contributing recipes soon!!! :) I am just loving all the new ones from this thread right now...yadda yadda yadda...I babble!!! :crazy:

I feel the same way about this thread! Sometimes we just get stuck in a food rut, and having this thread gives so many new options. Thanks, Lindsay for keeping it going! This thread is a real lifesaver for me!

That's my kinda meal! I so want grilled salmon now. Hope it's on sale here soon.
 
I'm thinking tonight is spaghetti with meatballs and a tossed salad.

Thanks for the Banana Fudge Cake recipe. It sounds really good. I'll have to give it a try.
