Thanks Liamandcali, Formrcastmbr and Nancyg56 for your warm welcome :) We are having seafood salad for supper tonight.

I can't decide what to have for dinner tonight. It's so hot out today I don't want anything warm.


Sorry I missed you both joining in our lovely group.....Welcome!!

Seafood salad sounds yummy.....please post your recipe for it....I am always looking for different twists!!

I agree with Nancy--a nice salad with some chicken on top is a go to for us here as well when the weather is warm!
 
We have been away camping all week! I made some ribs to have last night... but everyone had snacked their way through the day yesterday and we didn't eat them, so we're having them tonight along with green beans and baked potatoes. It'll be nice to cook in a kitchen big enough so if someeone wants to get by I don't have to sit on the couch.

We ate lots of bruschetta last week- I had it for lunch almost every day.... no idea how many times I made it. It was a fun week. Bar Harbor is one of my favorite places..... so pretty. We watched the fireworks from the park loop road in Acadia National Park. It was a nice view.

Anyone do anything exciting over the fourth??

I would love to visit your part of the country. Maybe next year:idea: . Kyle is in Jasper, GA for a week for a Young Life Camp, the pics I've seen on the internet look like that's also a beautiful place!

I love bruschetta! I'm glad that you had a good time, but it's nice to have you back.

Our 4th was fun. My nephew is home and so I got to see him. It was awesome, he is a very quiet man but he was like Chatty Cathy that day! Not only did he talk about his new job and the security clearances that he needs, but he explained his brother's. I had both kind of jumbled in my mind, still do really, but his enthusiasm was more than enough to make up for it. He is waiting for his "Top Secret" (yes he said he has "Secret" and now needs "Top Secret...just like in "Get Smart" :rotfl2:) so he can go near the Presidents helicopter. He was able to put minds to rest concerning his brother's deployment as well....not going to be safe, but safer than his original job. Prayers are answered, aren't they? I have got to stop chattering ..................
 
Kathy- I have only been to the Maine shoreline once, but it is stunning! Anyone lucky enough to live there is truly blessed. Maine is one gorgeous state. I hope you are in this neck of the woods sometime. NE is lovely.

Maybe, if we have to evacuate this year, I can talk DH into a road trip and I can visit all my DIS buddies up there!!:cool1:

Does your Dad not understand how we all live for your pictures? Your family eats better at home than most people eat in restaurants. Your salmon looks so good. I wish it wasn't almost a million degrees out there or I would grill.

I am chuckling because you were cleaning out your freezer, but it is now full! You are going to have to have a "planned" evacuation becasue you are like me....got to have it on hand....just in case :rotfl2:

Seafood salad a box of tri-colored spiral noodles cooked and cooled a bag of peas cooked and cooled onion (as much as wanted)
a cup of shredded cheddar cheese
Imatation crab (as much as wanted)
cup of slivered almonds

Dressing
2 cups of Hellmans
3 Tablespoons of powdered sugar

Nothing special it was my grandmas favorite. Today was the first time I have made it since she passed away. I brought some to my mom and she called me later in tears saying grandma would have loved that. Broke my heart. I just inherited her old cook books. She had some real oldies. She was one of the first one to get a GE electric range back in the 50's. I'm having fun going through them and see her favorites and suprising everyone with goodies. Lauri

Would you share instructions and recipe for the salmon? I bought some cedar planks and would love to use them for salmon! Looks delicious.

How does anyone forget a baby or leave a child in the car while the adults eat?

Your Disney story reminded me of the last time we visited. We were getting on the tram to take us from the parking lot to the gate, and this family hurried on, despite the conductor saying no more boarders. The only problem was, they forgot their daughter. She was probably 7 and she was still standing there while the tram started pulling away. No one on the tram knew she was being left behind until the father realized she was still there and jumped off to get her. The poor girl looked completely terrified. How do you forget your child :confused3

As you could probably tell from Beck's pictures, dinner today was really good. The fried calamari is a work in progress though. It definitely could be better. However, Beck has the Summer Shack Cookbook coming in the mail, so we'll be trying out new seafood recipes soon. :woohoo:

I think Beck posted the recipe a while back. It is called Maple Glazed Salmon. [ETA page 15] I don't know if she said this in the recipe, but be sure to soak your plank for at least one hour (preferably longer) before putting it on the grill, otherwise, you will have a huge blaze. Even when soaked, the grill gets very smoky, so be careful of your eyes, and be prepared to smell like cedar plank for a while. Personally, I love the smell -- I co-grilled today, so I am smelling very smoky right now-- but it really bothers my brother's allergies.
 
I could never forget Alex. I have nose imprints in my back. He follows so close behind me. When the two of us went for our first disney vac I was a nervous wreck I bought another cell phone in case we where ever separated.
We never did get separated but I still tell him were to meet me after using the restrooms.

tonight I'm having leftover chicken pasta with ungrilled bread. Allegedly tomorrow we will cool down into the middle 80's :cool1:

I know he's arrived and having a blast, but this is the first time he's been away and I still have a week to go and tomorrow will be especially depressing as I will age yet another year. This will be a very long week!:sad2:
