Thanks for the salmon recipe - I'll go back and CP it.

Tonight we're having chicken fingers - I breaded them in crushed corn flakes and coconut. It's what I had in the pantry =) And I'm being good and baking them. DH voted for maple baked beans as the side dish.

We're poor this week (somehow we ended up with all our bills coming out at one paycheck!) so we're eating cheapo this week. Kind of a fun challenge!
 
I know he's arrived and having a blast, but this is the first time he's been away and I still have a week to go and tomorrow will be especially depressing as I will age yet another year. This will be a very long week!:sad2:

The Flylady has a challenge once in a while. You need to see if you can use your pantry for a week without shopping for anything except fresh produce bread and dairy. I have done it and it is interesting to use up all of the staples that seem to find themselves on the back of the shelf. I do it when I want to avoid spending grocery money and use it for something more fun, but it is a good way to make sure packages are used before they expire.

I knew someone would catch the fact that I re-stocked the freezer. I can't help myself!:rotfl2: I may only make it as far as CT, I've got a feeling I won't want to leave you & Buddy.:hug:

I am making turkey tacos in soft whole wheat tortillas with fresh avocado slices and rotel tomatoes on top. (I like fresh salsa, but rotel tastes better than jarred salsa to me, so I use it in a pinch).

I want to make some kind of dessert using all the fresh raspberries I have here.

I am an off and on WFDer but the ladies on this thread are among the nicest on the DIS AND are the best (and EASIEST;) ) cooks! I have gotten some great recipes and the ones I've tried have received rave reviews!


You all will have to put up with me I am no good with computers. I would love to know how you quote someone and then write your comments.

Seafood salad a box of tri-colored spiral noodles cooked and cooled a bag of peas cooked and cooled onion (as much as wanted)
a cup of shredded cheddar cheese
Imatation crab (as much as wanted)
cup of slivered almonds

Dressing
2 cups of Hellmans
3 Tablespoons of powdered sugar

Nothing special it was my grandmas favorite. Today was the first time I have made it since she passed away. I brought some to my mom and she called me later in tears saying grandma would have loved that. Broke my heart. I just inherited her old cook books. She had some real oldies. She was one of the first one to get a GE electric range back in the 50's. I'm having fun going through them and see her favorites and suprising everyone with goodies. Lauri

That is a very sweet story. It is amazing how food just wraps art, history and love all together.

Now you go right ahead and stop in CT and grab Nancy and Buddy, but you best get your behind up here to Maine too!!!! You will not get that far up this way, and not complete the trip!!!!!!!

I am glad that Kyle is having a good time, but still doesn't help you missing your boy!! He might not be there to celebrate with you, but we will be with you tomorrow!!

Mermaid.....Glad you had a wonderful week, but there isn't any other kind to have when in Bar Harbor...or as Kris and I call it "UTOPIA"....we are heading there in a couple of weeks.......We haven't spent 4th of July week on the island for a few years as we live on the parade route now, and have a big party (63 people this year), but we are going to vacation there next year for the 4th, as I need a break from the whole thing here!! We love watching the fireworks from atop of Cadillac Mtn, as it is so neat to be looking down on them!!

Nancy--Glad you got some answers on your Nephews assignments.....knowing some of it gives a bit of piece of mind....prayers answered for sure, and more said for you and all of them!!

LBKB--Thanks for posting the recipe...sometimes the simple ones are the best!! Food memories are sometimes better then photo ones!!! I am in no hurry for them, but I do look forward to going through my grandmothers as well!!

You might want to try Laura's Raspberry Tart posted on page 612....It doesn't look to hard, and she posted a picture of it a post or two back that looks delish!!!

That is us too. I somehow "lost" $200 in my checking account, so it's now down to $2. If my meals sound strange this week, you know why.

Dinner tonight turned out really tasty so thought I'd share! We had boneless skinless chicken breasts, pan-fried in olive oil with lime pepper seasoning. For sides, we had some fresh (and I mean FRESH) carrots in butter, and some spiced ripe plantains and pineapple. The carrots came from a CSA (community supported agriculture) farm; we get a big box of fresh veggies every other week all summer and fall from them. Here's the recipe for the plantains & pineapple:
2 ripe plantains (all yellow/black skin, no green), peeled & sliced in 1 inch sections
1 large can pineapple chunks in juice
ground cinnamon, nutmeg and clove

Spray a large flat frypan with pam or coat lightly with oil and heat to medium. add sliced plantains in single layer. season with cinnamon, clove and nutmeg. cook for 2-3 minutes until lightly brown on bottom, turn. add pineapple and a little of the pineapple juice, and spice again. Cook another couple of minutes and serve!

The sweet/savory tastes of the plantains and pineapple contrasted very nicely with the hot/tart taste of the lime pepper chicken, and the buttery fresh carrots were a very nice accompaniment. Not much left over, that's for sure!
 
Since we're talking about "cheapo" meals and summer meals, I thought I'd post some of my kids favorites. When I got married, my mom told me that as long as I kept Cream of Mushroom soup in my pantry, I'd be able to whip up a meal for my family. She was right!

Here are 2 of my kid's favorites:

Poor Man's Stroganoff

1 pound ground beef
Garlic powder
Salt & pepper
Cream of Mushroom soup
Sour cream (1 cup)
Hot rice or noodles

Brown the ground beef in a large skillet until no longer pink; drain. Season with garlic powder, salt and pepper. Add soup and sour cream and stir until combined. Serve over hot rice or hot cooked noodles

Poor Man's Tuna Casserole

1 pkg. macaroni and cheese dinner
1 can cream of mushroom soup
1 can tuna, drained

Prepare mac and cheese as directed on package. Add soup and tuna. Mix until heated through and creamy. You can also add frozen peas to make it a one dish meal.

Our favorite summer meal follows:

Chicken salad

1 pkg. Italian blend salad greens
1-2 cans chicken
1 cup grapes, halved
1 can mandarin oranges, drained
Poppy seed dressing

Mix all ingredients and chill before serving.

Hope some of you can use these!
 
Hey Guys! You are a chatty bunch today...I read everything, just can't think straight...I am nursing a horrible headache.

Just want to say, I have been on the Budget Boards lately and they have some threads like "feed the family for $20/week", "feed the family for $10 a day". We are just trying to budget again after going off a little for the wedding so I need all the tips I can. That darn piece of plastic in my wallet has a cute pic of Mickey on it...at times I think its a toy!!! :lmao:

Kathy, you better stop in Jersey to pick me up on your way to Maine!!! :)

Sounds delicious!! I'venever made plantains, so I will have to try this. I have eaten plantains before and enjoyed them. Do you buy your lime pepper like a mix or make it yourself?

I buy the lime pepper premixed; got it at Sam's Club so it's a big ol' bottle of it! Use it a lot on chicken and fish dishes especially.

Oooh, that sounds delicious. I love eating plaintains at a local cuban restaurant but haven't a clue what to do with them at home. I'll have to try this!

Somehow I knew you were a Flybaby!!! Me too! I joined about 3 years ago. Best thing I ever did for my family!!!

I am still baby stepping :lmao: after a year! If my closets could talk there would be a lot of conversation about hidden Hot Spots ;), but things are way better now. I am a cleaning freak but we have a high traffic house that is quite small, Flying gave me permission to get the surface done if I could not get the entire thing completed :thumbsup2.

I buy the lime pepper premixed; got it at Sam's Club so it's a big ol' bottle of it! Use it a lot on chicken and fish dishes especially.

I am going to try this! I love lemon pepper and toss it into everything, but Lime sounds so good.
 
Lauren- I hope that you feel better soon. Headaches are worse in teh summer months, I think.

LBKB- Thank you for sharing your Grandmother's story. For the people on this thread, I think food is way more than just eating, so tying family favorite meals to the people who created them hits home here. I am not looking forward to the day when I make Tortierres for Christmas. My Mom always made them and then she helped me. She was too sick last year, but this year will be the first time I make them without having her permanently attached to the phone.

It took months for me to make the baked beans that she loved, they were the last thing she ate. Oh dear, :sad1:.
 
Today I am making filet mignon, oven roasted onion-y potatoes, and salad.
