Lindsay, how do you make your potatoes? I was thinking about baked potatoes with dinner this evening, but yours have my mouth watering.

You cube your potatoes, add a packet of Lipton's onion soup mix on them w/ a little bit of oil, and bake.

Yummy!

Of course, Iwent MIA again this weekend b/c of work. So dinner's here consisted of pizza and mac and cheese-hey, at least the kids were fed! Not sure about tonight, I have the fixin's for some kind of pasta, but I need to go to the store as well. Might make the grilled chicken with olive tapenade sandwiches--gotta keep the kitchen cool. It's gonna be blazin' hot today!

Wow, a girl can't go away for a weekend around here without having an hour's worth of reading to catch up on. Hope everyone is doing well today.

I have no idea what I'm making for dinner tonight because we have found ourselves in the middle of a project involving our outdoor zoo. We are trying to round up all of the kittens to treat them for fleas. The poor things are constantly scratching and we have had the yard treated. I'm trying to find homes for all of them now and still have about 4 unspoken for. We also had a full grown cat find us and he is now staying in the front yard because he doesn't get along with the other strays currently in the back yard. We haven't found a place for him yet either, but he is such a sweet guy I hope we are successful soon. None of these animals are officially ours, but what can you do?

Well, I am making the raspberry tart and some zucchini-egg cupcakes to use my fresh veggies and fruits here. As far as dinner, I am not sure yet!

Lauren- I hope that you feel better soon. Headaches are worse in teh summer months, I think.

LBKB- Thank you for sharing your Grandmother's story. For the people on this thread, I think food is way more than just eating, so tying family favorite meals to the people who created them hits home here. I am not looking forward to the day when I make Tortierres for Christmas. My Mom always made them and then she helped me. She was too sick last year, but this year will be the first time I make them without having her permanently attached to the phone.

It took months for me to make the baked beans that she loved, they were the last thing she ate. Oh dear, :sad1:.

I know how you feel. However, there is something very therapeutic for me in making a "memory" dish. Learning how to make my grandfather's sourdough biscuits was a way of keeping him alive for me. Now I make them for all family gatherings, and my father is always overjoyed. My grandfather never wrote his recipes down, but my father videotaped him making everything, so I've just been watching that video over and over, and trying to get things the way I remember them tasting.

Dinner tonight is up in the air. I'll either make whole wheat spaghetti with turkey meatballs, or teriyaki turkey burgers. DH just bought a carload of turkey burger, turkey cutlets, and turkey roasts, so be prepared for recipes that deal with turkey!!!

I'm also trying to clean out the fridge and pantry. We are going camping from Wednesday to Sunday, so I'm trying to get rid of perishables! We love camping (I don't do tent camping, but we have a small pop-up), and we're going to our favorite spot: Bear Lake, Idaho!!! I'll post some pictures when we return!!!
 
Tonight I'm trying my hand at making pumpkin ravioli - never done it before but it seems easy... we'll see!!!

WFD tonight is looking like hamburgers and hotdogs. Caili has skating this afternoon, so we will need something quick when we get back.
 
Wow there's like 8 or 9 pages since Friday!!! Can't keep up with y'all! It'll take me all day to read everything that going on.

Don't know what's for dinner tonight yet. But here's pics of the Salmon I fixed on Friday or was that Thurs., well whenever... I grilled it on Cedar Planks soaked in apple juice (a la the BeadPirate). I marinated the salmon in garlic, ginger, maple syrup, soy & white wine. Placed the salmon of top of green onions on the plank. I also used a smoker box with applewood chips in the grill & cooked on very low heat to smoke the salmon. Here's a pic of the salmon on the plank.

Then I topped the Salmon with a Cajun Spiced Pecan Maple Glaze. I didn't use a recipe, but I'm trying to remember now everything I put in the glaze. I coated the salmon with the sauce while it was cooking, then topped with the remaining sauce & pecans. I served it with the grilled corn on the cob and ginger spice sweet potatoes.
