ETA: WFD folks, I need your help. I am a part of a Bible study that meets on Wednesday mornings. Next week is my week to bring snacks. I decided to take muffins. I want to go above and beyond just a mix and take something different. I need to be able to prepare them the night before and will be yummy the next day.

Any and all help would be appreciated! :)
 
Oh my goodness! I have got to stop reading this thread so early in the morning, I am starving and not for toast! No, I want pork chops and chicken :laughing:.

Kathy- I am putting that PC recipe in my book and it is going on next weeks menu :thumbsup2. Gosh it looks good. Tell DH thanks for thinking of my hungry bunch, if you would.

Sheryl- You food looks so pretty your plates don't need to match. Your food is the star of the table!

Lauren- I cannot wait to see your invitations. I love weddings and now I am obsessing over your candy bar, I just saw Food Networks Fantasy Weddings, there was a candy bar, and no one home to say "Hey, Lauren's having one of those at her wedding." :sad1:

Hope DF starts to feel better. It's terrible to be away from home, not feeling well, and no Sweetie to pamper you.

Sandy- I want to make your chicken Marsala, do you think I can use the chicken broth? DD won't touch it if there is any beef broth. I tried telling her that it was just flavoring, but she wasn't biting that one :confused3. Also, how much of the alcohol cooks out of the wine, do you know. DS and DDIL don't drink, and I am very careful not to add anything to meals that they join us for, but I cannot think of a substitute for marsala wine in chicken marsala.

We are having chicken something tonight. DS is helping me clean in the basement so I have no idea what time I will be done. DH has been splitting wood and there is still so much out there, he will just eat and head back outdoors so dinner needs to be simple.

for this one i use milk and 1 TBS of vinegar to make sour milk, and add a touch of vanilla, chocolate chips and a banana. Really good and good the next day!
Oatmeal Muffins Recipe #947

. It is surprising how tasty they are without any spices, flavorings or zest but the buttermilk and oats really give this muffin its flavor. Please note that the oats need to soak for 1 hour before preparing the muffins so I've included that in the prep time.

1 cup quick-cooking oats (I use old fashion oats) 1 cup buttermilk ((or sour milk) 1 egg 1/2 cup brown sugar 1/2 cup shortening, melted ((do not use oil) 1 cup flour 1/2 teaspoon salt 1 teaspoon baking powder 1/2 teaspoon baking soda
  1. Soak oatmeal in buttermilk 1 hour; add egg and beat well.
  2. Add sugar and mix.
  3. Add cooled shortening.
  4. Add flour sifted with salt, baking powder and soda.
  5. Bake in greased muffin pans in hot oven (400 degrees) 15 to 20 minutes.

3 large bananas 3/4 cup white sugar 1 egg 1/3 cup melted butter 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1 1/2 cups all-purpose flour 1/2 cup chopped walnuts
  1. Mash bananas.
  2. Add sugar and slightly beaten egg.
  3. Add the melted butter and chopped walnuts.
  4. Add the dry ingredients stir to mix.
  5. Fill greased muffin tray with mixture and bake for 20 minutes in a 375F degrees oven.
Both are from Recipezaar. I have a good BB muffin, I 'll post it when I find it.

Lindsay, My Mom made peach muffins growing up and they were my favorite. I haven't seen the recipe around her house though...I am sure whatever you make with come out great. :)

Nancy, Did you notice what kind of candy was on TV? Did it look nice? Thank you for thinking of DF...hopefully today, after some sleep, he is feeling better.

I am making grilled chicken salad tonight. If Andrew does not want that he can have some chicken tenders.

Sheryl, didn't even notice that the plates didn't match until you mentioned it, I was just looking at the yummy foods!!!

Lauren- Poor df, between the jet lag, the foo foo foods, a cold and then missing both of you, the poor guy won't get home soon enough, lol!!

Lindsey- the fav muffin recipe around here is my peanut butter and jelly one, more kid friendly, but still yummy. If needed let me know and I will look it up and post it for you.

Dinner tonight will be the pork chops I didn't cook last night, Thanks Kathy for the recipe, I will try it tonight. (i know i posted that it was chicken I took out and i thought it was, but that is what you get for not being awake when getting in the freezer in the morning)

Reason the pork chops weren't cooked last night is ds got hurt skateboarding 10 min before he was to get ready for karate, so we spent last evening in the E.R. Good news is it is just a bad sprain not broken, they have him bandaged up and walking on it carefully, when he needs to move from point A to point B. We opted not to do crutches as he is such a clutz it would be more of a hinderence and would prob end up with it broken for sure, lol. SO last night's supper was mcdonalds.....ugh!
He will sit with it up at school today, and skip going out for recess, he has a field trip tomorrow and he is planning on going on it. He will be in pain by the end, so he will spend the weekend on the couch resting it............let me tell you the DRAMA, oh my oh my....................I think the Oscar's will be held at my house this year.............
 
Wendi- Your poor son! This is a rotten time of year for kids to get hurt, so much going on. The drama is worse and Mom needs special meds to get thru it...or as my WFD friends use for therapy...wine and chocolate :thumbsup2

Lauren- I saw truffles, lollypops and ice cream. I don't think I deleted it so I will check this afternoon.

Peach muffins YUMMMMMMMMMMMMMMM! My Mom made them but her method of making muffins was to take a cake mix, add chopped canned peaches and leave off the icing....voila........... Muffins!

Here you go Lindsey, and please call me Wendie. Glad I checked back before heading back to bed for a quick nap. I was up late getting things done as I lost the evening at the hosptial with ds. Soo he is off to school and I dont' have to be there to volunteer until 10. One hour nap for me coming up!!


These are soo yummy and hold up great for a couple of days. Great for picnics too.


* 1/2 cup Creamy Peanut Butter
* 1/2 cup Jam, Jelly or Preserves (pick your favorite)
* 2 cups all-purpose flour
* 1 heaping tablespoon baking powder
* 1 cup milk
* 2 eggs
* 1/2 cup sugar
* 1 teaspoon salt



Preheat oven to 400ºF. In bowl, stir together flour and baking powder; set aside.

mix milk, eggs, sugar, peanut butter and salt until combined. Pour over dry ingredients; stir just to moisten.

Line a muffin pan with paper muffin cups. Fill the lined cups 1/3 full. Place about 1 teaspoon of jam, jelly or preserves in the center of each muffin. Fill muffin cups with additional batter until about 2/3 full.

Bake for 15 to 20 minutes. Remove from the oven and allow to cool in the pan about 5 minutes.

This is the best muffin recipe!

Cinnamon Streusel Sour Cream Coffee Cake Muffins

1/2 cup softened sweet butter
1/2 cup sugar
1/4 cup seltzer
2 large eggs
1 cup sour cream
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla extract
1/4 tsp. salt

Marble mixture:
Blend together
1/2 cup brown sugar
1/2 cup finely chopped walnuts
1 T melted butter
1 tsp. ground cinnamon
(save 2 T. for top of muffins)

Cream sugar and butter. Add eggs, seltzer, sour cream and vanilla. Mix in flour, baking powder, soda and salt. Beat well. With a knife, cut the marble mixture into the batter. Do not mix. Pour batter into 11 or 12 muffin cups that are well greased. Sprinkle sugar mixture on top. Bake at 375 degrees for 22 minutes.

They are incredibly moist and delicious! Cream sugar and butter well and do not over mix once you get the dry ingredients in. If you like big muffins, you'll probably only make 11 muffins with this recipe, so you might want to double the recipe for a crowd. You can add chocolate chips if you like but I like it as is.

Also re: flat iron steaks

I am fairly inexperienced at choosing good cuts of meat to go with certain recipes. I enjoy lean meat that I don't have to cut all the fat off of, but filet mignon is my favorite. What cuts of meat do you all choose for steaks, for grilling?

Wendie, I am so sorry that DS got hurt :hug: ...sounds like my nephew...this kid had 2 broken arms at once and had already missed seasons of baseball and football due to inguries at 11 years old. Talk about accident prone. Yup, I can hear the drama in your house. Like Nancy said, wine and chocolate...:)

Strange post coming up here, but I don't know how else to get this recipe on here for Kathy!:confused3 I know it's not very legible either. I hunted everywhere online to find it but only found one for the sauce, which I will also post next. That sauce recipe is the way I've been making it anyway, a little bit easier than this one. Kathy, the fish I used was mahi mahi. If you've coated anything with corn flakes before you'll know they burn easily so be careful with it. I fried the fish & then put it in the oven to make sure it was cooked through while I fixed the rest of the meal.

Good morning! Dinner tonight will be glazed Kielbasa with broccoli and brown rice on the side. Simple, and I let the crock pot do the work for me.

Lindsay - I found the best blueberry muffin recipe in a Hannah Swenson mystery novel. It is the best tasting, and they get even more "blueberryish" the longer you let them sit. Here it is for you:

Blue Blueberry Muffins


Preheat oven to 375 degrees, rack in the middle position.

3/4 C. melted butter (1 1/2 sticks)
1 C. sugar
2 beaten eggs
2 tsp. Baking powder
1/2 tsp. Salt
1 C. fresh or frozen blueberries (no need to thaw frozen)
1/2 C. blueberry pie filling
2 C. plus one tablespoon flour
1/2 C. milk

Crumb topping:
1/2 C. sugar
1/3 C. flour
1/4 C. softened butter (1/2 stick)

Grease the bottoms only of a 12-cup muffin pan (or line the cups with cupcake papers). Melt the butter. Mix in the sugar. Then add the beaten eggs, baking powder, and salt, and mix thoroughly.

Put one tablespoon of the flour in a plastic bag with your cup of fresh or frozen blueberries. Shake it gently to coat the blueberries, and leave them in the bag for now.

Add half the remaining two cups flour to your bowl and mix it in with half the milk. Then add the rest of the flour and milk and mix thoroughly.

Add 1/2-cup blueberry pie filling to your bowl and mix it in. (Your dough will turn a shade of blue, but don’t worry, once the muffins are baked, they’ll look just fine.) When your dough is thoroughly mixed, fold in the flour-coated blueberries.

Fill the muffin tins three-quarters full and set them aside. If you have dough left over, grease the bottom of a small tea-loaf pan and fill it with your remaining dough.

The crumb topping: Mix the sugar and the flour in a small bowl. Add the softened butter and cut it in until it’s crumbly. Sprinkle the topping over your muffins and bake them in a 375-degree oven for 25 to 30 minutes.

Set on wire rack to cool for at least 30 minutes. Then just tip them out of the cups and enjoy.

I've made these twice in the last 2 weeks, and my family can't resist them! I want to try them with different pie fillings and frozen fruit. I bet it would be really good with cherries or peach!

Sure, you can make it with chicken broth. That's the way I always made it until I didn't have any one time and used beef broth as a substitute. The beef broth just gives it a richer flavor that I like better. Maybe you could use chicken stock instead of broth. There is a lot of wine in the sauce and I was concerned about cooking off the alcohol so I did some research yesterday and found this http://www.ochef.com/165.htm . I also remember watching an episode of Good Eats and Alton Brown said, when cooking with alcohol you can never burn off 100% of it. I've never tried it, so I don't know how it would taste, but I've heard that you can use vanilla extract in place of the marsala. Maybe use a teaspoon of vanilla and some extra chicken broth/stock.

I'm sorry your DS got hurt. I hope he's feeling better soon. It's rough on us moms too, when we see our kids in pain. :hug: IKWYM about drama, my DS can pour it on thick and he doesn't even have to be hurt.
 
Tonight I'm making spaghetti and meatballs. Well, the meatballs are already frozen from a batch I made a couple of weeks ago so it will be an easy dinner for me. Love that.

Kathy ~ We're going out to a Mexican restaurant for Cinco de Mayo. Our 12th anniversary is on the 6th, so we'll just go out on the 5th instead.


WFD? Baked penne and meatballs in spaghetti sauce and a salad. I was going to try making bread in my food processor, but I'm too lazy today to do it.
