I remember a few posts about brining a while back, but I can't seem to find them now. I want to brine a chicken for tomorrow. I used to have an Alton Brown recipe, but it's not on the Food Network site anymore. Can someone help me out?
 
I'm still haven't figured out what to have for dinner tonight! I'm feeling pretty lazy today.

Lori, Thanks for the grilled cabbage recipe sounds good & easy!

Kathy, For easy garlic bread I just smear (is that a word?) some butter, diced garlic (really lazy the kind in the jar) sprinkle with parmesan & some dried herbs on wheat french bread. or whatever kind of bread you like.
 
No problem Sheryl....The cabbage is one of a couple of recipes I've adopted from the Dh. He does a mean cedar plank maple-butter glazed salmon too. Which I was planning on tonight, but NO. So now I'm thinking Kathy's Velvet Shrimp. Anyone who's made this- can you sub a less expensive cheese or cheese blend? The meunster here is $5.99 for 6 oz!:scared1: Any ideas? Please consider I only have a small corner grocery (I'm in the French Quarter in New Orleans) so nothing too exotic... TIA

My step-brother is heading off to the Marines on Sunday, so we are going to my dad and stepmother's house for dinner tonight. No idea what we are having. It will be an interesting evening.

Lindsay - I just wanted to let you know that the asparagus are "parmesan roasted asparagus" not zucchini parmesan asparagus.
I know, that was totally my bad. I put zucchini to begin with, edited it, but not all the way. Doh!!! I was quite :surfweb: when I updated the thread.
 
Lori--I used Monterey Jack and it was still yummy!:thumbsup2 I had to find a substitute b/c our grocery doesn't even carry Muenster

Tonight's dinner will be whatever is brought to our church small group. Hey, at least it's not me cooking for 24 people again!

Pizza night here...

Thank you all for your comments on the color of the dress I picked...I went to L&T yesterday and now I am totally confused as to what to wear...decisions, decisions!!!

Here is the Blueberry "Dump" Cake recipe (it comes out like cobbler):

2 cups fresh or frozen blueberries (Thawed)
20 oz can crushed pineapple with juice.
1/2 - 1 cup sugar
1 box yellow cake mix
1 1/2 sticks butter, melted
1 cup chopped nuts, pecans or walnuts

Heat oven to 350.

In a 9x13 baking dish, pour pineapple and add blueberries evenly. Pour sugar over this and gently mix. Pour dry cake mix over this...do not stir. Drizzle butter over the top and then nuts. Bake for 30 - 45 min...until browned and bubbly.

Wow! Yesterday was a busy day here! I stay away for a few hours and miss everything!

Lauren- I think the dress would be lovely. And of course it is always the expensive one that draws you in, but it's your wedding day so take the one you like the best! Thanks for the cake recipe. I think I am going to make that for Sunday dessert. We are chocolate junkies, but my aunt can't have it and doesn't cook anymore so I try to keep her in sweet treats. She loved the lemon cake, and I know that this one will be a hit as well!

Kathy- I hope that your back is better. There is not much worse than a bad back on bleachers :eek:. My garlic bread is easy. I usually buy a French bread and slice it down the middle. Then I take a butter and minced garlic mixture, slather it on, add a little grated pepper and salt, and either bake it or broil it. Both are good just different.

Glynis- your website is amazing! I thought that I was clever when I asked my son to create some sort of workbook for me, (he does this for his job) but I am sending him to your site. Maybe he can help me because if it isn't done for me on the computer, it won't get done!

Lindsay- Semper Fi to your step brother! I have two nephews in the USMC and my niece just enlisted in Officer Training School in the USMC so I have a soft spot for Marines!

Lori- can you post your recipe for maple baked salmon? I am not planning on planking it as I still am too cold to grill :guilty: but I was planning on salmon and mashed potatoes this evening. Any help is appreciated!

MinnieM21- Congratulations on your graduation! Enjoy your special cakes....hymmmmmmm..pink champagne cake? sounds yummy!
 
Good morning everyone. Tonight's dinner is going to be simple - chicken, wild rice, and green beans. I'm really behind on my book work so dinners this weekend will have to be simple. Tax deadlines looming, as you know.

Glynis, have a great time and we'll miss hearing from you. I checked out your recipe site and am already planning to make the chocolate chip pizza for DS (after tax season).

Lauren, go with the dress you like the best. It's your wedding, you deserve it. Do this for yourself if you really want it. And thanks for the dump cake recipe, my mom used to make one like it.

Kathy, hope you are doing better.

Mom21, could you share the shrimp mashed potatoes recipe? My husband loves :love: him some shrimp.

Good morning all!

My back is feeling much better, thanks to all of you for the well wishes! No cooking for me until Sunday. Going out for dinner tonight and tomorrow we're getting more crawfish. I had my first taste of the season last weekend and can't get enough!!!

Also thanks to all for the suggestions on the garlic bread!

Lori - The Muenster cheese is pricey, but I buy it and freeze it for the next time. I would think as Stephanie said, any cheese you like could be substituted!

Lauren - Can you make the dump cake without the pineapple? DH & DS aren't big on pineapple.:confused3 What other color dresses are you thinking about? Can ya tell I just love wedding planning??????

Morning Y'all,

Last night ended up with a meatless taco salad. Just black beans, guacamole, salsa & chips in the salad. I said I was feeling lazy!

Tonight, I'm not sure, I have a Dr. appt this afternoon. If it takes too long I might convice DH to go for sushi. I had big ideas for tonight dinner but now I'm thinking I won't have enough time. Remember the tomatillos I had to go to Walmart for on Monday & didn't have enough time to make the Pork Loin in Tomatillo Sauce? That recipe is from Rick Bayless' book, Mexico One Plate at a Time. I just noticed he has one in there for Corn Flake Crusted Fish in Roasted Tomatillo Sauce & Fried Corn. Mmmm, sounds so good! But we'll see.

Lori, That maple glazed salmon sounds great. I've done the salmon on the cedar plank but not with a maple glaze. I'm guessing that's butter, maple syrup & seasoning? Does the syrup make the salmon stick to the plank? Recipe, Pleeease!!!

Obviously I got "that look" when I asked for measurements for the ingredients so I kinda took an educated guess.

Rick's Maple Glazed Salmon
2- 6-8oz salmon fillets
1/4 c crock butter-like country crock
a couple of big squirts of maple flavored syrup -lite is fine (but with all that butter-why?):rotfl:

Season salmon with salt and pepper. We add a dash of cayenne and lemon pepper seasoning too. Mix together butter and syrup. Brush on salmon to coat meat side. There should be a little left over to "baste" with. We do ours on apple juice soaked cedar planks on the grill. Put fish on the soaked plank and onto the grill-about med heat. There's enough fat in the mix that it doesn't stick and it's a sweet/savory flavor mix with a hint of apple smoke.
 
Thak you all for the dress advice...I just can't decide...I tried on so many things that I like. Yesterday I tried on a gorgeous green Tahari 3 piece suit...it was very pale, like pastel.

Kathy, you can do the dump w/o the pineapple. Just add some thing else...maybe more blueberry and some type of liquid to moisten it up...I have also seen this made with cherry...

Wow, that's expensive muenster! I saw a recipe for a lighter version of Velvet Shrimp that used part skim mozzarella. I'm sure regular mozzarella would work too.



I finally found Alton Brown's poultry brine recipe, so we will be having brined chicken on the can, butternut squash, some kind of potato or pasta and a salad.
 
We don't have meunster around here either :sad2: so I just guessed and used mozzarella and it turned out great.

I'm really surprised to hear that some people can't find muenster near them. It's my favorite cheese, has been since I was little. I called it "monster" cheese back then.

today we are gong to (yet another) niece's birthday party. I think SIL is having pizza from our favorite place, Poopsie's, but since pizza isn't on my diet, I'm really not looking forward to it :sad2: Anyway, enjoy your day and let us know how Wild Hogs is ~ it does look hilarious!
 
Tonight DH is pulling out the big guns and attempting to roast a chicken! I'll be supervising of course. He is also making mashed potatoes, gravy (I might have to take over that part), and broccoli.

Last night he did not really cook--he put together a nice cheese plate and heated up a baguette. It was perfect because I was not very hungry. Thursday he made us sandwiches again. They were tasty though!

I should be able to take back over the kitchen in another few days.
