Hi All! I am sleepy too! I couldn't get to sleep since DF was snoring so at about 2 am I went to sleep with DS...the treadmill got me going so that is good.

We never had the pork chops yesterday, we had Chinese. I am finally planning my wedding so I was trying to find a dress yesterday. Of course the one I like is the most expensive! Its a gold yellow saffron color. Any thoughts on that for a 2nd wedding??? I know I am getting :offtopic:

I bought some Jack Daniels Honey Mustard so I will broil the chops with some of this and adobo, brown rice and some type of veggie.

I saw the cobbler posts...did any of you ever try a blueberry/pineapple dump cake? I have the recipe...so easy and it comes out like a cobbler...should I share?

When we have meatloaf, I don't know why, but we always have the exact same side dishes. Meatloaf goes with mashed potoates, peas and applesauce since I was a kid.
 
Lauren, my mom and aunt would always make those dump cakes when we were kids (is yours the kind with the butter and cake mix?) ~ they are so yummy!!

Congrats on the wedding planning ~ I'm sure the dress is lovely! :)
 
Here's the recipe I used last night. I've been doing this one for quite a while now. It's from an old recipe of Emeril's for a Shrimp Curry. It's good with the shrimp we just like it better with chicken. I changed it a bit to suit our tastes. I also adapted it to items I have on hand, like Lime Zest instead of Kaffir Lime Leaves.

Thai Green Chicken Curry

2 tablespoons olive oil
2 cups diced eggplant (1/2-inch dice)
1/2 cup onions (large slices)
1 cup green bell peppers (large slices)
2 teaspoons minced garlic
2 to 4 tablespoons Thai green curry paste, depending on hot you like it
Zest of one large lime finely grated
2 tablespoons nam pla (Thai fish sauce)
1 (14-ounce) can unsweetened coconut milk
1 cup chicken stock
1 1/2 lb. boneless, skinless chicken breast, sliced in strips
1/2 cup chopped Thai basil (Sweet basil & a bit of cilantro works fine)


In a wok or large saute pan, heat the oil over medium-high heat. Add chicken and stir fry until lightly cooked, not browned. Add the eggplant, onions and bell pepper and cook 3 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Add the curry paste, Lime zest and fish sauce, and cook, stirring, for 15 seconds. Add the coconut milk and chicken stock and bring to a boil. Lower the heat and simmer until thickened. Stir in 1/4 cup of Thai basil and remove from heat.
Season to taste with salt. Garnish with remaining 1/4 cup Thai basil. Serve with Jasmine Rice.

Buttered egg noodles with roasted broccoli and tomatoes on the side. Another boring dinner, but we don't eat a lot of meat and we really like things like this. I still need to think of something for dessert. :hippie:

Steph - the chile sauce I use is Heinz, right by the cocktail sauce & ketchup in the store.

Sheryl - I just did coconut jasmine, but I am definitely going to add pineapple next time, that sounds great! I printed out your thai curry recipe and I'm going to try it next time I get the urge for it, love the eggplant in it. YUMMO!

Kathy, Hope you're back is better for the game! Don't forget to bring one of those little bleacher seat things! I was also wondering about that chili sauce! Thanks! Do you remember Sabais Restaurant on Gretna Blvd? They had a Green Chicken Curry that was awesome! That's what I've tried to duplicate with this recipe. It's pretty close, just wish they were still there, so someone else could cook it for me!
 
DisneyMomx7...we have the same side with meatloaf too! I usually add corn to the menu as well...my guys fav.

Stacy, yes the one with the cake mix and butter...everyone always raves about it and it is so easy right??? :)

So did my husband. ;) He had a great big bowl full with vanilla ice cream. He said it was heavenly. Thanks for sharing the recipe. It was really easy too.

Tonight's dinner is left over ribs. I am going to make some scalloped potatoes and green beans to go with them. Last night the carnivores (DH and DS) just ate the ribs - no veggies at all. :sad2: He bought burgers for the girls because he said they didn't want ribs. Want to guess which parent is the weakest link in our house?

Well, I think dinner tonight will be some kind of pasta dish. I need something easy! We're having the twins birthday party, so I'll have 10 four and five year olds invading my house this afternoon. I'm sure I'll be exhausted afterward, so I'll want to cook something easy!

I'm so sad that I'm leaving for a week. I've come to depend on you all to start my day!!! I've just GOT to talk mom and dad into getting internet!!!

I'm planning on making a big pot of meatballs & Italian sausage sometime this weekend. I'm really sick of the frozen garlic bread - does anyone have a fairly quick homemade recipe to share?
 
Lindsay - I just wanted to let you know that the asparagus are "parmesan roasted asparagus" not zucchini parmesan asparagus. Thanks. :) I still have to post the recipe for the zucchini gratin, which I'll do later today.
By the way, you're doing an awesome job keeping up with updating the first page. I can't wait to try even more recipes!


shovan - I hope you like the citrus and garlic chicken. I haven't eaten it myself because I'm a vegetarian but you can't go wrong with roast chicken!:)


liamsaunt - Don't you just love Ina's recipes? :) The mashed potatoes are sooo good that I always make extra. YUM! I've got her Barefoot Contessa at Home and Barefoot in Paris books and I can't wait to cook my way through both books. What other book of Ina's would you recommend?

Tonight we might have leftovers or takeout, not sure. My mom ordered a pink champagne cake for me to celebrate my graduation from college that we'll be having tonight. I can't wait, it's one of my favorites! :cool1: (The big party with the entire family is on Saturday and we'll be having another cake. You can't have too many cakes. ;) )
 
Hi all! Thanks for the welcomes last week!

Last night was beer brats with saurkraut and mashed potatoesW/corn.

Tonight is fried potato/corn patties with baked maple salmon, and steamed snap peas.

Kathy& Sheryl- Sorry I'm late on the cabbage- But it's a head of cabbage cut into quarters. Salt & pepper, and wrapped with a couple of slices of bacon. Wrap each wedge in foil and put on the grill. Dh loves this-it was his recipe in the first place. It's just enough fat to keep the cabbage from sticking and gives it a smokey flavor.

Lauren- For our wedding at Disney I had a sage green dress (it was St Pat's Day). I imagine the saffron color would look great on you with your coloring (in the pic in your siggie)

Thanks, everyone, for the kind words on my website. A wonderful friend (another DIS'er, by the way) offered to do it for me. I'm just thrilled since I'm a complete computer dunce!!! She was so kind to make it for me, and keep it updated with all the new recipes I funnel her way.

I never cooked a complete meal in my life until 5 years ago. DH did all the cooking, and I was happy to let him. It was either that, or eat takeout all the time. Well, we moved farther away from his job, and that was for me, too. He told me that he was happy to move where I wanted, but I had to pick up the slack in the kitchen. So, I started reading and trying recipes, and found a new obsession!!!! I'm a total recipe junkie!!! I'm getting a lot better in the kitchen, but those first months were total disasters!!!!!
 
MinnieM21, I really like all her books. Her first book (Barefoot Contessa) is good, and I love Barefoot in Paris. There are a couple of yummy vegetarian recipes in that one--baked eggs with herbs, a blue cheese souffle, a terrific cauliflower gratin, and a great salad with goat cheese toasts, just off the top of my head. However, my all time favorite is Barefoot Contessa Family Style. I don't have it in front of me, so can't remember how many vegetarian entrees that one has. I do know there's a great macaroni and cheese with tomatoes, a roasted vegetable soup, and a souffled fritatta, plus lots of yummy veggie sides...

I'm not sure what is for dinner tonight. DH says he is cooking something again! I'll let you know what he comes up with tomorrow.
 
I haven't posted in quite a while. I need to go back and catch up on all the yummy recipes. Tonight we are having:
salad (all of us)and crab cakes (hubby although I may eat a half one) as an appetizer
baked tilapia and Emeril's shrimp
mashed potatoes
sauted bean sprouts and zuchinni in soy sauce(ok this is for me as I am trying to lose weight and figure I will eat way less potatoes this way--doubt I can convince hubby and 10yo to eat it)
Apple turnovers for dessert (hubby and dd only)--If I want something later I'll eat some fruit I guess
