I finally made the Velvet Shrimp last night. It was GREAT!!! Thanks for posting the recipe Kathy! I changed a couple things though, I used Seafood Magic seasoning and half-and-half. DH and DS didn't love it as much as I did because neither one are fond of thyme. Next time I'll use the original seasonings, except leave out the thyme.


Easy dinner tonight, I'm making bbq pork chops, tater tots with cheese sauce, and broccoli.
 
Today my babies turn 5!:sad1: In a way, it makes me sad, but I'm also thrilled to see what they've accomplished. They were preemies, and have had some developmental problems, but now, they are just perfect!!!

They get to choose dinner tonight, and since Leslie loves chicken nuggets, and Mary loves cheeseburgers, I'll give you 2 guesses where we'll end up.
 
OceanAnnie- I'm going to try your recipe tomorrow night. My kids will love that.

Tonight is take out for us. We have to have our taxes done so we'll be on the run!

Well, tonight we had a "picnic pork roast". Never heard of it before, but it looked great and it was a "Smithfield" brand so we tried it. I put it in the crockpot with some A1 Texas Mesquite marinade. Oh my goodness! It was sooooo good! I just let it cook all day. Wonderful. We'll definitely have that again. Now I'm going to have to try some of A1's other marinades! :)

Tonight I won't be home for dinner (planning meeting for a shower next month), but I have a batch of Glynis's sweet and savory ribs in the crockpot for the family and I made Oceanannie's Yummy cobbler (apple) for dessert. I think they will be ok for the night. DH asked what time I would be back and I told him after 8:30 (the children's bed time). :rotfl: Mean, I know.

Kathy had me thinking of curry this morning. With extra time on my hands, I fixed a Thai Green Chicken Curry & Coconut Rice!
 
Minnie, Thanks for the Garlic Citrus Chicken Recipe! I copied it, sounds like a great meal for a Sunday afternoon!
 
So, the past two nights have been DH-assisted meals. He does not know how to cook at all, but is willing to help in my moment of need (ha ha). The worst part is his knife skills--I'm convinced he is going to end up in the slice and dice bucket with me if he does not learn how to properly manage a knife.

Tonight we had pesto stuffed gnocchi (no, I did not make them, they were from Trader Joes!), with Marcella Hazan's tomato-butter sauce that he made (yum!), and some nice olive oil ciabatta (that he heated up in the oven! Hey, every bit counts!) .

Last night DH made us pressed paninis with tomato, emmenthaler, turkey, onion, and mayonnaise. Not too bad for a first "stab" (ack!) at cooking in about 10 years.

Hopefully I'll be back in cooking mode soon, but I think I am looking at at least five more days of thumbless-ness, so I will continue to keep you posted on what DH comes up with.

MinnieM21, hello fellow Ina Garten lover!! She is my favorite. I'm with you on the buttermilk mashed potatoes. Even my Mom loved them, and she gets really cranky when anyone deviates from the tried and true family recipe (Worst potato offense on my part at a family meal: mashed potatoes with smoked mozzarella cheese. Yes, it was as bad as it sounds. It was even worse than the time I made eggplant mashed potatoes :sad2: ).
 
Tonight I am making the vegetable pasta toss on page 1. It's another Rachael Ray fake-out meal. We will have garlic bread with it.

Last night we had Pizza (again) in the oven since we had thunderstorms. Plus it was clean out the frig night what was in there went more with pizza than my stir fry dinners.
 
Lindsay, it's not just you that's extra sleepy this morning ~ I'm really dragging here, too! DH just ran up to Burger King for a couple of coffees (not as good as Tim Horton's but BK is only 2 minutes away, LOL).

Today I'm going to make some homemade stromboli type things. I'm using crescent dough which I will lay out flat and top with seasoned ground beef mixed with pizza sauce and mozzarella shreds. It just gets rolled up, topped with a seasoning mixture and baked till done. Hope it turns out OK. :thumbsup2

Tonight we're going to finish up the picnic pork roast. I'm going to add some sauce and have BBQ with home made oven fries. Something simple for dessert, maybe pudding.
 
I think we're just going to have some pasta w/meat sauce--maybe some garlic toast.

Kathy--have a question about the "Bahama Mama Porkchops" The recipe calls for Chile sauce--what do you use??? All I had on hand was some Asian Chile Garlic sauce and used some of that--but it would have been way too spicy to use the full 2/3 cup. It was tasty anyway! Thanks!:thumbsup2
 
dinner tonight is going to be chicken pot pie....very yummy and very easy but not part of my diet so I like to make on the nights I have to work.That way I won't be tempted to eat it!

Last night I tried a new recipe ~ it was pretty good and quick too.

Shrimp Pasta with Tomatoes and Basil

1/2 lb large shrimp
1 cup sun dried tomatoes marinated in olive oil
1/2 cup fresh basil leaves
6 ounces linguini
2 pinches redf pepper flakes
3 T EVOO

Add linguini to boiling, salted water
Meanwhile, shell and devein the shrimp and cut into thirds
Slice the basil leaves into thin strips
Heat the EOO in a heavy skillet over hgih heat
Add the shrim and cook, while stirring until they just turn pink
Turn off heat, add tomatoes and pepper flakes
Stir to warm though
Add basil, stir to incorporate, drain pasta and divide into individual bowls
add shrimp and tomato mixture

Even the kids ate it :eek:
 
Tonight will be pork chops-I think I will just pan-fry them without breading, yellow rice, and blackeyed peas. Maybe some Stouffer's macaroni and cheese for DH.

So did my husband. ;) He had a great big bowl full with vanilla ice cream. He said it was heavenly. Thanks for sharing the recipe. It was really easy too.

Tonight's dinner is left over ribs. I am going to make some scalloped potatoes and green beans to go with them. Last night the carnivores (DH and DS) just ate the ribs - no veggies at all. :sad2: He bought burgers for the girls because he said they didn't want ribs. Want to guess which parent is the weakest link in our house?

:rotfl2::rotfl2::rotfl2: He sounds like my DH, except we would be getting take out or eating out. Or his personal favorite......sandwiches!


I did not cook last night. We had a lot of leftovers to finish up and I have been trying to stop tossing them out.
Tonight we are having a roasted turkey with mashed potatoes, gravy stuffing and some sides. It depends how much time I have when I get home this afternoon.
