I should have clarified. I am filling mini-muffin cups up with a dollup of the chocolate cashews. Make sense? Like a mini-Reese cup.
 
I haven't posted in awhile.

TigerKat & Nancy, I hope your mother's are doing better. I'm keeping them and your families in my thoughts and prayers.

The Pepsi Pork Roast I made awhile back was good. I was skeptical, because it sounds weird but you couldn't taste the pepsi. I guess it cooked down. :) It was good for a change. (I had never cooked a pork roast before. Very tender and moist.)

Don't know what's for dinner tonight. Something in the crockpot I'm sure. Have to think about what's on hand.

If you're looking for cookie recipes, check out the thread about making cookies with cake mixes! I tried it last night and the cookies are great! Easy and quick. Yea! I followed the instructions from the thread using a white cake mix. The cookies taste just like sugar cookies. I crushed some candy canes and sprinkled them on top before baking. They look really cute! :)
 
I think I'm going to try the Ritz Parmesan Chicken tonight--either that or it will be pasta with meat sauce.

Liamsaunt--I don't even know what to say--I'm racking my brain and can't think of anything. Let us know what you come up with.

Well, I think I'm baked out! I've made dozen and dozens of cookies this week, and now I'm done. We're leaving town next Thursday for 10 days, so the cookies are being stored up for our drive. Going to make some Santa's Trail Mix and then I'm done! Even though, the chocolate covered nuts sound yummo Lindsay! Got to stay off this board b/c I end up cooking my head off! :rotfl:

liamsaunt - good luck, this is a tough one!

Tonight we're having Cheeseburger noodle bake (no - not hamburger helper :teeth: ) with a veggie and a salad.

Hopefully next holiday season I'll be in a more festive mood and will be joining you guys with all of your baking, especially since I now have a new stand mixer.

wow...that's tough to work with! I made this recipe last night and it was great ~ not spicy, but flavorful. You could eliminate the garlic and onions if needed

Paprika Chicken
preheat oven to 375
6 skinless chicken breast cut in large cubes
6 cloves of whole garlic peeled and lightly crushed
1 small yellow onion cut in large pieces
1 red pepper cut into 1/2 inch strips
1 large zucchini cut into 1 inch pieces
2 cups baby carrots
2 cups mushrooms, quartered (portabella or baby bella)
1 small can tomato paste
1 cup chicken stock
1/4 cup olive oil
1/2 cup balsamic vinegar
2 Tbsp paprika
1 tsp salt
1 tsp black pepper

combine all above ingredients, except chicken, in a large rectangular baking dish
mix well
add chicken
bake at 375 for approximately 35 minutes
check chicken for doneness
using a large spoon, carefully mix to coat sauce evenly. Allow to sit for 10 minutes

1/2 cup chopped fresh parsley
reduced fat or fat free sour cream

garnish with parsley
serve over rice with a dollop of sour cream on top


this recipe was given to me by a friend on a very strict diet so I know it's healthy. Good luck!
 
Well I made the crockpot chicken and dumplings last night and it was a HUGE hit with the family! My only problem with the meal was that while I was lifting the lid off my crockpot, I gave myself a really nasty steam burn on my thumb. Can we say PAINFUL??????? It's much better this morning, but it's still all red and tender. I was just glad that I had some Solarcaine on hand from last summer. That was the only way I made it through the night!

Dinner tonight will be interesting. I'll be making boxed mac and cheese for the kids (they love the stuff, and since DH is away, I'm not killing myself cooking for the kids), and probably leftover teriyaki chicken for me. I'm trying to make sure my fridge is cleaned out before I start cooking the holiday meals. I hate leftovers, though, so who knows what will actually happen.

Lindsay - you've convinced me to try the Oreo truffles. I'm having a Christmas party with my bowling league tomorrow, and I'm making a candy tray to take. So far I've made Pretzel Wreaths, Smore's Marshmallows, and White Chocolate popcorn. Today will be peanut brittle and the truffles. I think everyone will be happy, don't you?

Nothing. It's just that I don't own one, that's why I said no crockpot recipes.
 
Tonight for dinner I am making pizza and hopefully starting to get the house decorated for the holidays. I am such a slacker!!

Still no inspiration on the in-laws thing. I will be sure and let you know what I end up making. Thanks for the suggestions so far, they are all in the consideration file.
 
I'm a super slacker today :teeth: , we're having Stouffer's Chicken Enchiladas with Cheese Sauce & Rice and steamed broccoli on the side. I hope it's good I've never bought it before. I've been a little overwhelmed lately with Christmas shopping, planning DS's birthday party, cleaning the house, and cub scout stuff that I wanted something really easy tonight.

I have offically changed my Friday morning workout from 2:30 p.m. to 7 a.m., so Mermaid will probably beat me to this thread on Friday mornings. I will update the page as soon I get home.

Just don't want anyone to think I had done a YAGE or anything :)

Woo hoo! I managed to get time to run in here and update before I left!

We are having friends over tonight. I am having baked spaghetti with salad and garlic parmesan breadstick. I made pineapple gooey butter cake for dessert.

It's pizza night here! DD woke me up at 4:30 this morning sick! ICK--crossing my fingers that she doesn't pass it to me, DH or DS. So I guess I"ll be making some chicken broth for her today.

I love risotto, so yes, please do share your recipe!

Tonight I am making fondue with some of the cheese I brought back from France (have to use it up!), and serving with baguette, broccoli, and small potatoes for dipping, and a green salad on the side.
 
Tonight I am going to try a smothered steak...I bought cubed steak since it was on sale - I have never bought this before...

Do you think it will be OK?

I will probably make baked or mashed potato and some vegie...

A week from tomorrow and I am on my way to the world!!! :cool1: :cool1: :cool1:
