Saturday I made apple chicken--really tasty and easy.
Apple Chicken
1 chicken cut into 10 pieces
4 tbsp. plus 1 tbsp. butter
1 onion, minced
2 apples, peeled, minced, and tossed with 1 tbsp lemon juice
3/4 cup chicken stock
3/4 cup apple cider
1/3 cup calvados or brandy
1/3 cup heavy cream
salt and pepper to taste
parsely for garnish
Heat 4 tbsp butter in large skillet until quite hot, then add chicken, skin side down, and sear for 5 minutes, or until nicely browned. Flip the chicken over, sear for five minutes more, then remove and set aside.
Pour out the fat, wipe down the pan, then add the remaining butter. Saute the onion and apple until tender--about 8 minutes. Add the cider and chicken stock and bring to a boil. Add the chicken back into the pan, cover, lower the heat, and simmmer 15 minutes, or until the chicken is cooked through. Remove the chicken from the pan and keep warm.
Add the calvados and cream to the sauce and boil until thickened enough to coat the back of a spoon. Season with salt and pepper to taste and then add the chicken back in and coat with the sauce. Sprinkle with parsley and serve.
I served this with mashed potatoes and broccoli.
Sunday dinner with the in-laws...guess what? They called Saturday night and said that they were too tired to drive to our house and would we come there instead! I am glad I had not gone to the grocery yet. So, we went there and they served a plain roast chicken, plain mashed sweet potatoes, plain mashed butternut squash and plain mashed regular potatoes, mashed in their cooking water. But, there was salt, pepper and butter available, and of course the company was good.
Tonight we are going out--checking out a new French bistro and I have the pics from our Paris trip to share with DH.
