Hey Kathy! Do you have any secrets to your ribs? I usually par boil mine and marinate overnight...and then grill...but I am always looking for a better way!!! :)
 
We are having leftover chicken provencal stoup. Boy was it good. I bought some Pilsbury garlic parmesan breadsticks to bake and they were yummy too. I will definitely be buying those again.

I have to make another batch of Oreo truffles today. I'm starting to get sick of those things, LOL!

I think tonight will be chili--not really chili weather here today (70s in December, go figure! :confused3 ) But, since we're leaving town really early Thursday morning, we're eating what we've got in the house.
 

yey - we're going out for a meal... how exciting is that? No cooking for me today :-)

I am doing the same! :) Just bought staples yesterday at the grocery store...spent under $25...imagine that? :thumbsup2 I hope you're all feeling better!
 
Good morning everyone - I'm a little under the weather today, hopefully just a cold and not the flu! :sick:

liamsaunt - I did the crispy potatoes yesterday, they were a hit even though I did something wrong. When I went to press them into a disk, some of them fell apart. Do you think I boiled them too much??? They were still VERY GOOD!! :thumbsup2

Lauren - I use Star Jones recipe for the ribs, we don't like fall off the bone ribs, so no boiling. I'll post the recipe if you like, but as I said they are not fall off the bone tender.

Tonite will be red beans & rice and green onion smoked sausage.

Saturday I made apple chicken--really tasty and easy.

Apple Chicken

1 chicken cut into 10 pieces
4 tbsp. plus 1 tbsp. butter
1 onion, minced
2 apples, peeled, minced, and tossed with 1 tbsp lemon juice
3/4 cup chicken stock
3/4 cup apple cider
1/3 cup calvados or brandy
1/3 cup heavy cream
salt and pepper to taste
parsely for garnish

Heat 4 tbsp butter in large skillet until quite hot, then add chicken, skin side down, and sear for 5 minutes, or until nicely browned. Flip the chicken over, sear for five minutes more, then remove and set aside.

Pour out the fat, wipe down the pan, then add the remaining butter. Saute the onion and apple until tender--about 8 minutes. Add the cider and chicken stock and bring to a boil. Add the chicken back into the pan, cover, lower the heat, and simmmer 15 minutes, or until the chicken is cooked through. Remove the chicken from the pan and keep warm.

Add the calvados and cream to the sauce and boil until thickened enough to coat the back of a spoon. Season with salt and pepper to taste and then add the chicken back in and coat with the sauce. Sprinkle with parsley and serve.

I served this with mashed potatoes and broccoli.

Sunday dinner with the in-laws...guess what? They called Saturday night and said that they were too tired to drive to our house and would we come there instead! I am glad I had not gone to the grocery yet. So, we went there and they served a plain roast chicken, plain mashed sweet potatoes, plain mashed butternut squash and plain mashed regular potatoes, mashed in their cooking water. But, there was salt, pepper and butter available, and of course the company was good.

Tonight we are going out--checking out a new French bistro and I have the pics from our Paris trip to share with DH.
 
Star Jones BBQ Ribs

2 racks of baby back ribs
Seasoned salt
minced garlic in oil
hickory liquid smoke

Season ribs with salt, garlic and liquid smoke. Bake uncovered 1 hour at 375 degrees. You want them to be pretty much cooked through.

Sauce:

2 bottles of your favorite bbq sauce
4 Tbsp apple cider vinegar
2 Tbsp minced garlic in oil
juice of 1/2 lemon
seasoned salt
3 drops hickory liquid smoke
1/4 tsp ginger
1 tsp brown sugar
pinch of cayenne pepper

Mix sauce ingredients together, pour over ribs and let marinate at least 30 minutes. Then grill over low heat.

Hi, you may have boiled them a little too long. You want them to be just tender. You also have to be careful when you press them--do it slowly. Sometimes mine fall apart a bit too, but I just smush them back together. Glad you liked the recipe! :)

I have a question, Lindsay. Have you tried the truffles with the mint oreos? I have a package of them and wondered if they would be good. I'll probably try them anyway, but thought I'd ask if you had any experience with the mint.

Dinner tonight is really easy: tomato soup and grilled cheese sandwiches.

I got so busy today making Christmas goodies, that I forgot to go to the store. Soup it is. However, I have 6 batches of peanut brittle done, plus 2 batches of chocolate covered popcorn. Tomorrow I'll bake some of the frozen cookie dough I made 2 weeks ago, then I can assemble plates for my neighbors and I'll be done! Hooray!!!!

I bought them to give them a try. I got them home and noticed they were Double Stuff. I don't think they'd work with the truffles. I may try adding a drop of peppermint extract in them or something.

No I haven't :blush: No one was really reading them so I haven't finished. I need to though, if just to get some closure.

Good to know. Maybe I'll try them and see. If they're not very good, I'm sure DH will "sacrifice" and eat them anyway. I'll let you know.
