Mom21: I can relate also. I try to cook a nice meal at least 5 times a week and have done so since my children were little. My DH will tell everybody that he will eat anything but liver and asparagus. He will. Just not quietly...... He is a meat and potato guy, hates casseroles and stews, and really prefers that I don't "mess with his food". DD does not eat red meat. The little one lives for mashed potatoes. My SIL does not say a word, just is glad he does not have to cook.

I try to please them all, because I enjoy cooking and taking care of them, but I have found that a few days of "on your own" works better than anything. My family has been sick this last week, and I have spent a lot of time with my Mom also, so tonite when I fix dinner they will all be very happy, and they will make sure that they tell me.

I really think that when there is a family member who cooks everyday the family stops appreciating the gift. We have friends who come for dinner and tell my DH how lucky he is because there is never a real meal in their home. My family sings my praises to the world, but sometimes forgets to sing to me. I suspect the same is true for all of the dedicated cooks on this thread.

Now I have to find a recipe for country ribs. I haven't cooked them in years.
 
Ham- Mashed Potatoes- baby peas- green beans almondine- yeast rolls. The ham is leftover...the rest will be fresh!

Like I've said before, it's just me and my husband, and thankfully he really appreciates my cooking. Hee hee, he will call me from work and ask, "What's on the Chez Kitty menu tonight?" (I know, we are silly). He always makes a big deal about my food and often makes requests.

My poor dad used to get a home-cooked meal every single day, with dessert. But when he and my step-mother temporarily seperated, she went back to work. Now she brags how she never cooks and actually makes comments to me because I do. And she's the one who taught me a lot of what I know about cooking!! My dad eats like he's starving whenever I cook for him :(
 
Trying a new Rachel Ray recipe tonight--#35 from the 365 cookbook--Sauteed sweet Chicken Breasts with a spicy fresh tomato chutney and white rice. Sounds yummy--we'll see!

It is sad. My kids always brought their friends home for dinner and they would say that it was like Thanksgiving in our home every day. I'm not sure if people just have different habits today, or if they are genuinely afraid to cook. We have friends who always eat a meal and they are like you and your DH ( I love to hear about "silly" . Most of the young mothers in her neighborhood are sahm's but when the Dad gets home they all go out to eat. I don't know, for us it is a part of our day, and if I am not cooking, my family misses it.

Found my recipe for crockpot BBQ ribs, so we are having them with rice and veggies. Any leftovers will be good for pulled pork sandwiches on Wednesday night when my kitchen is off limits for anything but a quick warm up ;).
 
Catching up...

Saturday we had Indian food again. We were over helping my sister paint her house so this was fast and yummy!

Yesterday we had a roast beef with gravy, roasted potatoes, sauteed brussels sprouts with balsamic, pureed carrots with cumin, and my contirbution to the meal since I don't eat red meat: portobello mushroom lasagna. The lasagna was awesome--here is the recipe:

for an 8x8 dish, greased
8 no-boil lasgna noodles
12 oz. portobello mushroom, sliced
1/2 cup parmesean cheese
4 oz shredded mozzarella
2 cups whole milk
6 tbsp. butter
4 tbsp. flour
salt, pepper, and nutmeg to taste

Saute the mushrooms in 2 tbsp butter until browned, sprinkle with salt and set aside. Heat the remaining butter in a saucepan, then stir in the flour and cooking one minute. Pour in the milk (heated) and whisk until thickened, about 5 minutes. Season with salt, pepper, and nutmeg. Layer 1/4 of the sauce into the dish and top with two noodles. Scatter over 1/3 of the mushrooms and 1/3 of the cheeses. Then top with more sauce, noodles, etc. Continue until you have four layers, ending with sauce and then the cheese. Bake in a 375 oven 45 minutes. Let stand 15 minutes before serving.

Tonight we are having roasted balsamic-mustard-rosemary chicken, mashed buttermilk potatoes, and broccoli.
 
Today I am making "mushy food" since DS8 is getting his palate expander today and they recommend soft foods...I am going to try meatloaf, mashed potatoes and some veggie...

Any suggestions on other foods? I plan on sending soup for lunch tomorrow...

I made chicken salad for dinner tonight. I defrosted chicken for Friday but we went out running errands during the week that it moved my menu many days and did not want the chicken to go to waste

this weekend we went out to eat as we had my neice and nephew for the weekend

I am taking it easy cooking this week - since Thanksgiving is at our house.

That sounds good. I'm gonna have to try it.

Here is another recipe--it's the chicken I am serving tonight--it's really tasty! The recipe is from Fine Cooking.

Lemony Balsamic-Mustard Marinated Roast Chicken with Rosemary and Garlic

6 pieces of bone-in, skin-on chicken (use whatever pieces you like best)
5 large cloves garlic, peeled, minced, and ground to a psate with a little salt
2 tsp. finely grated lemon zest
2 tsp. finely chopped rosemary
1/3 cup dijon mustard
1/3 cup packed light brown sugar
1/3 cup balsamic vinegar
1/4 cup olive oil
6 to 8 large sprigs of rosemary
1/2 large lemon, thinly sliced.

The day before you want to cook, rinse the chicken and dry thoroughly. Rub the garlic paste all over the chicken pieces. Combine lemon zest through olive oil in a bowl and mix to blend. Pour over chicken, and add rosemary sprigs and lemon slices. Toss everything together to coat, cover, and refrigerate overnight.

Take the chicken out of the oven at least 20 minites before you are going to cook it. Perheat oven to 400 degrees.

Place chicken with its marinade into a pyrex baking dish in one layer, skin side up and evenly spaced (don't let them touch). Sprinkle with salt and place in oven. After 30 minutes have passed, start basting the chicken with the pan juices. The chicken is done when it turns deep brown and the pan juices have reduced and darkened. Total cooking time is about an hour.

Transfer chicken to plate and tent with foil. Remove the lemon slices and rosemary sprigs from the pan and discard. Spoon off as much fat as you can from the pan drippings, then add 2 tbsp. water to the pan and scrape up all the browned bits to form a slightly thickened, rich tasting sauce.

Serve chicken with pan sauce.

Thank you, I think so too!!! I did notice something a little disturbing though. Look at the 2 of us at Kona. We almost look related!!! ACK!! Our cheeks and our chins look similar. That's a freaky pic!!

Almost forgot to mention, tonight we had BLTs. But instead of bread, we used refrigerated biscuits. I think they are yummy that way. :thumbsup2

I do pulled bbq beef on biscuits....mmmmm...sooooo good! :goodvibes
 
Tonight I am making black bean chili and cornbread. I fixed my menus so I would be having leftovers tomorrow. I am taking all desserts to my Thanksgiving dinners so I can make them the day before. Pretty good planning, eh? :)

I'm thinking of doing a mini-shrimp boil for dh and I. Hmmmmmm hot and spicy shrimp, some boiled small red potatoes. I like to dip the shrimp in spicy cocktail sauce and then put it on a cracker. :thumbsup2
 
Not sure yet--maybe oven fried chicken or pasta! Oh, and that chicken I made last night was Yummo! If anyone is interested, I'll post the recipe later
