The crockpot ribs last night were really good. I may reheat them for dinner tonite with the leftover rice. I need to clean out the fridge to make room for the Thanksgiving food, so all of the sandwich meat has to go and any leftovers along with it.
 
Still cooking out of the new Barefoot Contessa book (the buttermilk mashed potatoes I made yesterday were from there, and they were really, really good).

Tonight from the book I am making penne in a lemon cream sauce with arugula and tomatoes, and serving it with a roasted garlic loaf of bread. If the recipe is tasty I will post it tomorrow.

Tis the time of year for soup. :)

Ultimate Potato Soup

5 large potatoes, plus 1 small, diced
2 stalks celery, diced
2/3 cup chopped onion
2(14.5 oz) can chicken broth
2 3/4 cup half & half cream
1/4 cup butter, melted
1/4 cup all-purpose flour
2 cubes chicken bouillon
1/4 teaspoon ground black pepper

In a large pot, bring potatoes, celery, and onion to a boil in the chicken broth. Cook until potatoes are tender. Drain & reserve liquid.

Combine reserved broth and cream in pot. In a bowl, combine melted butter and flour, stir into cream over medium heat, stirring until thickened.
Stir in reserved veggies, bouillon and pepper. Heat through and serve.

Ham, Potato, and Green Bean Soup

1 onion, peeled
2 bags frozen green beans
1 1/2 pounds ham, cut into pieces
8 potatoes, peeled and cubed
4 quarts water
salt and pepper to taste
1/2 cup cornstarch
1/2 cup cold water

Place water in a large pot, bring to a boil. Put in ham and onion, boil for 30 minutes. Add more water as needed.

Remove onion and add the beans. Whisk the cornstarch and cold water together, add. Cook until thickened.
 
Savory Shepherd's Pie

1 pound ground beef
1/4 cup onion, chopped
1/4 cup pepper, chopped
2 cans vegetable soup
1/4 teaspoon salt
mashed potatoes

Brown beef, onion and pepper, until tender.
Stir in soup and salt.
Spoon into a 1-quart casserole dish.
Place potatoes in mounds around edge of casserole.
Bake in a 425º oven 15 minutes.
 
I decided I didn't want to cook last night so we got wings and I made tater tots and corn.

Tonight we're having super easy chicken fajitas.
 
Today is pizza day this week ~ the kids wil be happy when they get home. ;)
 
I am throwing some sweet potatoes into the oven. Hubby has to take dd to the craft store for some items for a school project. In the same parking lot is a KFC and I have a coupon for the B1G1 2 piece with a biscuit. They will have that as i don't like the chicken. Maybe add in another biscuit for me and some slaw (love me some KFC slaw :cool1: ) So cheap and easy for me tonight. I am burned out......LOL.
 
We are having leftover black bean chili and cornbread tonight. As soon as I DIS and drink my coffee, I am going to start working on my desserts for tomorrow. I am making 2 derby pies, 2 batches of Oreo truffles, and Paula Deen's gooey pumpkin butter cakes (my mom recently made them with pineapple instead of pumkin and it was DROOL city!!).

eh, we are just having burgers tonight. I never make a big dinner the night before Thanksgiving.

Secretly I'm hoping tonights a pizza night--BUT in case it's not, I've got some spinach artichoke calzones to make (another Racheal Ray recipe). Luckily Thanksgiving isn't going to be at my house this year, but I"m still responsible for some sides--those will wait for tomorrow!
 
I have a few pieces of chicken marinating in a candied ginger teriyaki sauce. I'm going to grill those up and make grilled chicken sandwiches and a side salad or maybe cup of soup depending on what's in the house. If I find a can of pineapple rings, I might add that to the sandwiches, too.

Tomorrow I am responsible for:

Traditional Green Bean Casserole
Pumpkin and White Corn Bisque with Jalapeno Pesto and
Pumpkin Creme Brulee

I am soo excited to use the creme brulee torch. I will probably incinerate something, hopefully not myself, or anything important. ;)

I have to go to the grocery store - I am hoping they have a fine mesh strainer b/c I don't think mine is really fine enough.

I am here at school, got here at 7 am - to undecorate for fall and decorate for Christmas, only to find I lost my cabinet key. :( I'm hoping dbf finds it in his car.

Anyway, I'm off to class.

Oh - I need a *really* easy, not too strong, yet festive, cocktail recipe for Thanksgiving. Any suggestions? Last year we did cranberry and vodka and I want something more creative.
 
It's chinese for us tonight so I can cook and bake for tomorrow. Yum!
 
Lulu--last year for the holidays we did a Proseco (could use champagne or any sparkling wine) and pomegrante (sp?) juice. It was really yummy and a very pretty color!

And I didn't mention what I'm making for tomorrow

Sausage and Fennel Dressing
Sweet Potato Casserole (mainly for the kids)
Cranberry Cherry Crumble
 
Nothing fancy here for dinner - hot dogs, mac & cheese and some kind of vegetable.

Thanksgiving is at my mom's, but I'm taking green bean casserole (getting tired of making that every year and crockpot stuffing. This is my first time making stuffing :scared: , I hope I don't mess it up. I'm using my mom's famous recipe, so at least I know <if I do it right> it'll be good. I wanted to make my cranberry-raspberry Jell-O mold, but my brother's fiance is making some kind of cranberry thing. I bought all the ingredients so I'll just make it when we have the leftovers sometime this weekend.

Hey, thanks! That was a nice thing to say. :)

The pasta was really good. I'll post the recipe when I get home.

Today is DH's birthday, so I am taking him out to dinner.

Hi Lulu, one of my favorite festive drinks is a kir royale. It's just sparkling wine and cassis. Fill a champagne glass most of the way with the sparkling wine and then top off with the cassis--maybe 2 tablespoons or so (you can use framboise instead if you like raspberry). Taste it and see if it is sweet enough for you. It looks so pretty, and it's not too strong.

You can find the cassis and the framboise with the cordials at your liquor store. You don't need to buy expensive sparkling wine either.
 
Hi everybody! There is no hot dinner here tonight, I am in the kitchen all day and need every bit of fridge space so my family must have sandwiches. They like to get of of the line of fire when I have a plan that I can't even articulate, so I'm sure they will be very happy!

So far I have baked a derby pie, a pumpkin pie, Glynis pecan pie, an "almost apple pie" and a chocolate cream pie.

I have a spiced cranberry apple jello salad in the fridge a corn pudding ready for tomorrow and sweet potatoes in teh oven for my gratin. Sausage and apple stuffing is next.

I have everything ready for the apricot filled pumpkin cake but the apricots. Do you think raisins would be okay? I can't face the grocery store for a bag of dried apricots.
