Just thought I would share this recipe for kielbasa:
POLYNESIAN SAUSAGE
1 lb. kielbasa or other similar sausage
1/3 cup barbecue sauce
2 T. orange marmalade
2 tsp. red wine vinegar
½ of a medium onion, chopped
½ of a green pepper, chopped
1 can pineapple chunks in juice, drained (save the juice)
Slice sausage into thin rings and sauté in a skillet for 10-15 minutes.
Mix together the remaining ingredients and add to the sausage, along with approximately one-half of the reserved pineapple juice.
Lower heat and simmer for 45 minutes.
Serve over cooked rice.

I alsoIt’s me and My Precious tonight: lamb chops! Honestly, I could eat them every night, lol. Oven roasted, dipped in dukkah then drizzled with pomegranate molasses. Served with carrots, celery and watermelon. No dessert since already had it with dinner![]()
So glad you joined in!!We try to eat salmon a couple times a week to get those omegas so it's a salmon night tonight. We've tried it a bunch of ways but our favorite is "sensational spiced salmon" from Taste of Home so that's probably how I will cook it tonight. Not sure about sides. Probably roasted broccoli and maybe a baked potato. We don't eat potato often but I've been craving a baked one.
