If any of you are looking for a new cookbook, my favorite cookbook author has a new book out: Ina Garten (aka the Barefoot Contessa)--it's called the Barefoot Contessa cooks at home. I picked it up yesterday and it looks to have lots of yummy recipes. Tonight I am making one: it's an oven baked omelet for two that is filled with sauteed potatoes and bacon, and topped with some cheddar. I am serving it with crusty bread and a salad of (more!) arugula, sweet onion, pomegranite seeds and pecans in a raspberry vinagrette. I have some persimmons that I might put in the salad too--I picked them up on a whim...have never tried them before.
 
Tonight we are having chicken piccata. I'm excited as it's one of my favorite dishes. I was hoping to go out with DH, but he's still sick, so we'll have a nice dinner in and watch a movie. I checked out Walk the Line from the library, so we'll put the kids to bed and watch that! I love Reese Witherspoon!!!!

I saw a recipe in a magazine for Cranberry Coffee Cake. It is a recipe from a bed and breakfast and sounds really good. It has canned whole berry cranberry sauce in the middle and on top - it also has sour cream and walnuts in it. When we get back from our trip to Disney (we leave on Wednesday :banana: ) I'm gotta try it. I'll let ya'll know how it comes out.

Funny though, cause at the end of the recipe it says it can be drizzzled with almond icing - but the picture of it has no icing. I'm think I'm gonna drizzle it with a little icing.

Just wanted to say I made the coffee cake the other day and it came out GREAT! I brought it to the office and everyone loved it. I'll post the recipe when I get home. It's a keeper! :thumbsup2

I hope that you have a wonderful trip! It is always strange that the day arrives after waiting so long, isn't it? You and your family enjoy your vacation.
 
The bug that has been attacking my family got me last night, so no cooking again. I honestly don't know what we have on hand, DD ordered pizza last night, but they are all on their own.

3 cups flour
1 ½ tsp baking powder
1 ½ tsp baking soda
½ tsp salt
1 ½ sticks butter

1 can whole berry cranberry sauce
½ cup chopped walnuts

Preheat oven to 350 degrees. Grease and flour a ten-inch tube pan (or bundt pan).

Spread with ½ of the can of whole berry cranberry sauce. Cover sauce with remaining batter. Spread with the remaining cranberry sauce and sprinkle top with chopped walnuts.

Bake 60 minutes in the lower third of the oven. Remove from oven and let stand on wire rack for 10 minutes to cool. Invert onto plate to remove from pan and once again so walnuts are on top.

When cool, cake make be drizzled with icing.

This sounds so yummy! I think maybe I'll make it for Christmas Morning. We always have tons of relatives that pop in, and this would be good to have on hand to offer.

Yumm! This sounds so good! I think I will make it over the weekend leading up to Christmas Day. I don't have the energy to make those yummy homemade breakfasts on a day that I have a big dinner going on, but I like to start to celebrate early by having a late morning treat and coffee with my family.
 
Today we are having a big lunch at The American Cafe. I'm talking spinach con queso, splitting a BBQ chicken pizza, and maybe dessert. We are then finishing our Christmas shopping. You see, we have made a conscious decision not to return to Hamilton Place (local mall) until after the holidays. It gets insane. We do a LOT of our Christmas shopping online, but there are a few odds and ends I need to pick up at the mall that I can't get online (like Yankee candles. I have no sense of smell and need to take someone with a good sniffer with me to help, LOL!!!).

WFD at your house?

ETA: I know I can buy Yankee candles online, but there are some new ones out I want a good sniffer to test for me :)
 
It's take out night here tonight. This is a new thing- I'm hoping it catches on! :thumbsup2 I'm thinking Chinese... beef lo mein and mini egg rolls.

I'm making one of my favorite dinners tonight, Arroz con Pollo. We'll probably have baby peas for a vegetable.
 
Still not sure about dinner. DH and I helped out a church service project today, and then I did my workout--not feeling much like cooking--we'll see! :confused3
 
DH is feeling better, so we're going out to eat. Don't know where, yet. I told DH he could decide. He's had such a bad cold, he hasn't been able to taste anything for almost 2 weeks.

We're ordering pizza for the babysitter and kids. We're getting that free! Got certificates for judging the local Reflections contest, so we're using them up!
