Lindsay, I made your Ritz/Parm chicken last night for a potluck and it was very good!
I've copied most of the recipes here and hope to make a few this coming week.

As soon as I can think of some, I'll put some recipes up.

Going to start packing tonight, need to do something quick. Maybe sloppy joes and fries.

Last night ended up being icky Hamburger Helper, but fortunately both kids loved it :confused3 But, woohoo, I made it to the store after both munchkins went to bed last night. So, we actually have some decent food in the house.

Tonight will be roast chicken, green bean casserole, and stuffing. Can't get enough of that "Thankgiving-y" foods!

Last night I made paninis with turkey, cheddar, sweet onion, and tomato.

Tonight I am just having leftover Indian food, as DH is out at a work function. Yup, I'm lazy.
 
Thank you all for your prayers. They worked! I am here for the day and will probably be checking out the trip reports, I want to hear how Lulu and Lindsays trip went. I am not sure about dinner, but will come up with something for here, and DD will be in charge of dinner at home. Last night she gave them hotdogs. I think my DH had some of the chicken soup I made. Dh says not to worry, they will all survive Marisa's cooking :rotfl: , but I think she will give them hotdogs until I come home or they will have pizza.

For those with sick ones, my BIL is a DR in the ER and my sister is a respiratory therapist in a childrens hospital. They both said that the hospitals are being hit hard with viruses, both intestinal and respiratory. I hope that your families get well soon.
 
Dh has to go to a meeting tonight so I have no idea what I'll have. I may just have a big, late lunch and something sweet tonight. Bad, I know. :sad2:

That reminds me of what I had for "dessert" last night--I started eating icing right out of the container! Just straight icing, no wonder my tummy didn't feel so good last night! :rotfl:
 
Tonight I'm making teriyaki pork kabobs, rice, baby peas, and salad.

The chicken on the can we had last night was good, but as usual the white meat was dry. How in the world do you cook a whole chicken so the dark meat is cooked through and the might meat isn't overcooked?
 
Yesterday we had sausage, peppers, and penne in a light tomato and parm. sauce. It was so good if I do say so myself. :rotfl:

Tonight we'll just have left over of that. Yummy!

I just saw a show on the Food Network last week that showed roasting a whole chicken, breast side down, so that the juice stays in the breast. Makes sense, haven't tried it yet.

I've heard of doing it that way too, but haven't tried it either. Guess I couldn't use my beer can thingy then.
 
Tonight we are having Apricot Plum Chicken from this thread!!! I'm so excited. I'm using homemade apricot jam that has some crushed pineapple in it. I think it will still work, though. We'll also have some brown rice and green beans. For dessert? The last of the birthday cake and ice cream. If they don't finish it, it goes in the trash! I'm tired of looking at it and having it tempt me!!!

Just found out we'll be leaving for Thanksgiving at my parents house on Monday!!! I'm so excited!!! :banana: :banana: :banana: That means I only have to cook through Sunday. Of course, once I get to mom's, I'll be doing Thanksgiving prep, and stuff, but still...I'll be with my mom!!!

My prayers are with all of you that have sick loved ones.

Lindsay - take care of that elbow! Comfort food sounds wonderful!

Red or White?

I usually do red...I just wing it like I did in my bartending days:

1 big bottle (jug) of cheap red or white wine wine
about 3/4 cup simple syrup (equal amounts of sugar and water simmered until smooth)
about 3/4 cup brandy
about 1/2 cup of triple sec
cut up fruit (apples, lemons, limes, oranges...etc)

mix all of the above ingredients in a pitcher (no ice), stir and adjust the ingredients if needed.

pour in a glass over ice (about 3/4 full) and top with seltzer or lemon lime soda...

I had some years ago that had I think only canned pineapple as the fruit. I wonder if I could use that and I guess you would probably put in the pineapple juice too?? :confused3

Sure, why not...I would substitute the juice fo some of the simple syrup or the triple sec...just add the juice first and taste and add the other things accordingly...I would them use seltzer instead of lemon lime soda...HTH! :)
 
We are all sick. Ugh. Last night we had a ham steak, baked beans and corn. Tonight we're having cheesy scrambled eggs, bacon and biscuits. Don't feel like cooking.
