Beautiful pictures Lindsay! Where were you married? And I saw nary a Longhorn....

Which reminds me -- the bakery where I got my wedding cakes is where I still go for a lot of the birthday and special occasion cakes I need as well as for work. Anyway, the last time I was in she was finishing up Lightenin' McQueen so I was looking at their books. The latest Longhorn thing they've done is to put little longhorns on chocolate covered strawberries...I must admit that I thought immediately of you and Jonathan!

Yes, it's true - the only Longhorn items were at our rehearsal dinner. Believe it or not, Jonathan was still a died-in-the-wool Gator fan - I hadn't completely converted him to a Longhorn as of yet!

Ironically enough, the Gators were playing the night of our wedding in the Orange Bowl against Syracuse. I allowed Jonathan to put on a small Gators pin on his tuxedo once we got to the reception. There was also a TV in the bar at the hotel, so he was able to sneak out and get score updates. The Gators won 31-10.

You'll have to let me know what bakery you use! The strawberries sound so yummy!

ETA: Oh, and we were married in Friendswood (suburb of Houston) in the Methodist church I grew up in.

Sounds like a good night for celebrating!!

It was! Alan took me to see "Night at the Museum" which we absolutely loved!!!!

Then, back to his sister's house for "surprise" party. Unfortunately, the twins blew the whistle on the party, so I had to act surprised. It was a ton of fun, though! A great night with family and friends.

Well, the Godiva coffee doesn't taste bad, but 1 cup has given me the WORST headache! I am bordering on being nauseous! I can have 3 or 4 cups of Starbucks and not feel this bad.

Anyway, I just paid some bills and did the final copy of our tax return. I missed the child tax credit the first time around, so we are actually getting back $1000 MORE than what I originally figured! This is not the first year that I have skipped over that credit, but caught it before the paperwork went in the mail. I guess we need one of those computer tax programs, but not until we get a new computer!

I told DH we should just put a little note to the IRS to route our refund directly to WDW Resorts, Orlando, FL.

I have decided to make a jello for my birthday.


Jello Cake

1 box yellow or white cake mix
1 small box of any flavor jello
1 small box of instant vanilla pudding
1 small container of cool whip, thawed

Mix cake according to box directions, and bake.
While cake is baking, mix jello according to directions and set aside. (do not refrigerate)
When cake is done let cool, then poke holes all over cake. Pour jello over top of cake and let cool completely.
In a large bowl mix pudding according to directions, then fold in cool whip. Spread pudding/cool whip on top of cake and refrigerate until ready to serve.

My mother used to make something similar with pound cake and strawberry jello. She'd then put some strawberries on top. Delicious. I just may have to make this for myself. We just then used the cool whip on top.

I kinda figured that is how everyone makes it. Also decided why make it, whenever I want it John takes me out for dinner.

Me, Me, Me!!!!! That's exactly how I cook mine! Sometimes I'll throw some mushrooms in, too!

Unfortunately, my family hates it, so I don't get to make it too often!

Thanks Vicki, good idea to put on top, since you really couldn't decorate the cake.

Well, I just got home about a half hour ago. The roads are getting bad. Passed one wipe-out and heard on the radio that there are vehicles in ditches all over the place. Can someone explain to me why, when we have known for 2 days that this was coming, none of the roads that I traveled today were treated? And believe it or not, xh called to ask how the roads are. When I told him he said he would be getting the kids ready to bring home soon. Miracles never cease!!
