Indeed you can! I won't even attempt candy that calls for a thermometer, but this one was something I felt pretty confident about. My biggest recommendation: If you have a glass measuring cup (1 quart) use that! The handle makes it so much easier to pour onto a buttered cookie sheet! I ended up making 3 batches today. I'll probably spend some time making more next week for my neighbors. What I made today is going to my bowling Christmas party. Hope they like it as much as my kids do!

Microwave Peanut Brittle
1 C. sugar
1/2 C. light corn syrup
1 C. raw (spanish) peanuts
1 tsp. butter or margarine
1 tsp. vanilla
1 tsp. baking soda
Butter a cookie sheet. Combine sugar and corn syrup in a microwaveable bowl. Microwave 4 minutes on High. Stir in peanuts. Microwave on High 3-5 minutes or until light brown (my microwave does this in 4 and a half minutes). Stir in butter and vanilla; blend well. Microwave on high 1-2 minutes (peanuts should be lightly browned). Add baking soday and stir gently until light and foamy. Pour onto buttered cookie sheet. Let cool 30 minutes. Break into pieces to serve.

Yes, I've had them too. But I thought butter was a no-no as it holds in the sting. I would think vaseline does the same thing. I hope it heals quickly.Glynis said:Has anyone every had a steam burn? Last night I was cooking crockpot chicken and dumplings (faboo recipe, by the way!). I had forgotten that the handle on the lid was broken, so I kind of had to wedge a spoon under the lid to lift if off the crockpot. As I was doing that, I got a horrible burn on my thumb from the steam! Oh my goodness, can we say PAINFUL!!!!!!! I put it under cold water, I slathered it with butter, I put Vaseline on it, but nothing helped! I finally just wrapped ice in a towel and held it on the burn. It helped for a while. After dinner, I found a can of Solarcaine in the bathroom from last summer's boating trip where Katie forgot to put on any sunscreen (can we say LOBSTER???), and sprayed that on my thumb. It worked for about 30 minutes and then I had to respray! That went on throughout the night. At about 2:00 I woke up and realized that my thumb didn't hurt anymore, so I was able to sleep soundly after that.
Anyway, steam burns, OUCH!!!!!

Glynis - In the future if you burn your self do not put butter or Vaseline on it. That seals in the heat and causes the burn to go deeper into the tissue. Just put cool water on it, then cover it with some loose gauze. There is some reason not to use ice, though I can't recall exactly what that reason is. An OTC burn ointment or cream would probably be good for the pain, along with some Tylenol. I am glad the Solarcaine helped! Be careful with that peanut brittle - sugar burns are REALLY painful.
Theresa - So maybe Abi deserves a little slack this time around.Bullies never respond to those lame lectures on bullying. There was a documentary on Cinemax a couple of years ago about young teens. One of the features was about a little boy who was completely ostracized by his peers when they went to middle school. He was suicidal because he couldn't figure out how to make them like him again. They had a "bully lecture" and of course some of the worst offenders were the ones piping up in class about how bullying is wrong and they would stick up for someone being bullied.
I hope you and Abi can figure things out! The other features were about gay teens and how hard it is for them to be "out", how young teen girls are absolutely relentless in their pursuit of the boys and their really careless attitudes about sex, lots of truly terrifying stuff. DS seems so innocent. I don't know how we are going to face the issues that 6th grade will bring!
