How was the corned beef and cabbage? And have you got a recipe?
Oh Corned Beef and Cabbage was YUM as usual! I never made it until Fran and I got together, in fact I had never had it until then. She introduced me to all kinds of "american ethnic foods". My parents we were very highbrow in their cuisine and I had never eaten a casserole until I met my first finacee (who I never married), but we never ate traditional American food at home except for Spaghetti and Meat sauce. Other than that we ate very different food than most americans, which I didn't know until I left home. I mean most people didn't eat fondue every week, but that was a staple in our house, along with curried chicken and other things I can't remember now, but were weird for most people in the 70s.
I just make it how Fran told me, or is on the package. You buy the corned beef and it has a package of spices. Put the beef in the cold water so it is covered (I have a special pan with a strainer and a steaming bucket, we got it at Costco) and bring it to a boil. Add the spices and boil for about 2 hours. Add some red potatoes, cut into 2-3 pieces and carrots and cook for 10-15 minutes. Add the steamer tray with cut up cabbage and onions for another 10 minutes.
Serve immediately. I like to dip my meat in a mix of Dijon mustard, whole grain mustard and horseradish, and put a little butter on the cabbage and onions and potatoes.
For the next night we have reuben sandwiches with hash browned potates and cole slaw, they were extra nummy!
