WFD - Some of my boy's favorites, a roast cooked medium rare (Becky & Laura's Mom's recipe), smothered potatoes & onions and prosciutto wrapped asparagus. Can't wait to see my son!!:yay:

the egplant casserole...my Mom made this and it was excellent.

Would you be able to share that recipe? We love eggplant but I am not creative with it so I rely on the imagination of others.;)

Kyle just called, their journey has ended. They lost 8-6 and are headed home tomorrow morning. He said he is so tired and ready to come home and y'all know I'm ready for him to come home so all is good. They had a great week and he had a week he'll never forget!:thumbsup2

I keep thinking of all the experiences he is getting this summer. I don't know if you have seen the thread on sports commitments but every time I read it or post (yes, I have been like a toothache on that one) I have to wonder about those folks who begrudge kids this opportunity. Your boy is the responsible considerate young man in part because of the lessons he learned while playing ball. Anyway, I am so happy for him.

:lmao: Marisa brought me over to visit Jeff's sister whose twins were about 2 months old. OMG! One cried....the other cried. One wet.....the other wet. and then cried. I guess my stamina went down as my age when up because I was exhausted and all I did was hold them :rotfl:

Well we had a blast at the carnival last night. Marisa and Jeff left after the parade and we kept Kady. She went on the rides, played the games, got her face and arms painted and ate and ate and ate

Marisa now has the stomach bug so I think I am taking Kady to Sylvan, I'll make something for dinner for the rest of us when I get home.
 
Do you ladies have a fish batter recipe you use on your fried fish? I always buy it, but would love a good recipe instead. Thanks.

WFD- old-fashion pan fried haddock (dredged in flour, S & P, onion powder and paprika then pan fried in half butter & oil.) green beans with a little sundried tomato pesto, leftover corn on the cob.

Nan - ITA, sports and being part of a "team" has played such a huge role in shaping Kyle and his teammates into the young men they are today. I haven't seen that thread, do I want to go there?:rolleyes:

I just got in from the grocery store and I overdid it, everything I saw that Kyle likes went into the basket.:sad2:

No. It is back and forth and I know that I need to stay away. It is not nasty or anything but I am finding out that I am not a tolerant person, best that only one of us has that revelation today ;)

Afternoon Y'all,

Thanks for all the kudos on the salmon & blueberry galette. DD came by yesterday & had a piece. She was totally shocked that I actually baked!

Here's the recipe I used with any changes. It was really easy.
Blueberry and Blackberry Galette with Cornmeal Crust


The rich, buttery pastry dough is easy and forgiving. Simply roll it out onto parchment paper with a lightly floured rolling pin, and then use the parchment to transfer it to a baking sheet. If you're lucky enough to find wild blueberries like the ones that grow in Maine, use them in this rustic summer tart.


PASTRY:
1 3/4 cups all-purpose flour (about 7 3/4 ounces)
1/3 cup granulated sugar
1/4 cup cornmeal
1/4 teaspoon salt
1/2 cup cold butter, cut into small pieces
1/3 cup fat-free buttermilk

FILLING:
4 cups blueberries
2 cups blackberries (I used strawberries)
1/2 cup granulated sugar (only used about ¼ cup berries were sweet)
3 tablespoons all-purpose flour
2 tablespoons lemon juice
2 tablespoons fat-free milk
1 large egg white
1 1/2 tablespoons turbinado sugar ( used less)

1. To prepare pastry, lightly spoon flour into dry measuring cups, and level with a knife. Combine flour and next 3 ingredients (through salt) in a food processor; pulse two times. Add butter to flour mixture; pulse 4 to 5 times or until mixture resembles coarse meal. With processor on, slowly add buttermilk through food chute; process just until dough forms a ball. Gently press dough into a 4-inch circle on plastic wrap; cover. Chill 30 minutes.
2. Preheat oven to 350°.
3. Unwrap and place dough on a sheet of parchment paper. Roll dough into a 15-inch circle. Place dough and parchment on a baking sheet.
4. To prepare filling, combine berries and next 3 ingredients (through juice) in a medium bowl; toss gently to coat. Arrange berry mixture in center of dough, leaving a 2-inch border. Fold edges of dough toward center, pressing gently to seal (dough will only partially cover berry mixture).
5. Combine fat-free milk and egg white in a small bowl, stirring well with a whisk. Brush dough with milk mixture; sprinkle turbinado sugar evenly over dough. Bake at 350° for 1 hour or until pastry is golden brown. Let stand 30 minutes; cut into wedges.

Yield: 10 servings (serving size: 1 wedge)

I'm stressing about our ADR's now that we are flying. I booked Artist Point for our 1st night there, we are checking in to All Star for that day only. I'm thinking now that we will probably be sick of being on a bus that day. We haven't used the bus system much lately, now I'm trying to figure out how many busses it will take to get from point A to point B.

Just so y'all know we are not pigging out ALL the time, here's a pic of yesterday's lunch. Although Becky's pic of tomatoes & mozzarella, had me putting a little bit of mozzarella in there!:confused3 ;)

Yes you can freeze it, it will get limp & soggy, but tastes the same. I have also dried the mint to use for tea.

I don't know about freezing it, although you can freeze basil. I would dry it and then put it in airtight containers. I am one of those slugs who does not keep the herbs. Iuse them and the wait until the next year :sad2:

I wish I knew about the buses from All Stars. It would be a shame to miss AP because of the travel time.

We do use the buses and I generally had no problem with the time but my clock is shut off while on vacation. I know that it sure was easy when Dan drove us to WL from the Poly and the bus was way longer IIFC.

Lauren & I were talking about Sangria and she said to try Fresca & Wine (I think). All I had was Diet Sprite so I used that with red wine. I really like it! Now that I'm dieting instead of wine with a splash of Sprite I'm doing Sprite with a splash of white or red wine, whatever I have on hand, there you have Redneck Sangria!:rotfl:
 
They're on different nap schedules?? Do parents of twins do that intentionally?

Not this parent of twins!!! I worked very hard to keep them on the same eating/sleeping schedule. It was much better for me! Of course, they do start to show some individuality, and then what mom wants flies out of the window!

Twins aren't so bad.....when they are your own twins! I was terrified when I found out we were going to have twins (with all the infertility drugs Alan and I had to use, it's amazing we only have one set of multiples!), but I quickly adjusted. You read everything you can get your hands on, and then you just leap in blind.

It was actually kind of fun, once I got used to them.

DH left the A/C going all night long, so I kept really cool. He also got Sunday dinner going in the crockpot. Lucky for all of us that my pot roast recipe is easy and foolproof. It smells so good! I'm starving. Luckily, he keeps bringing me cheese sticks and water. I've got me a good man! I'm living it up today. Don't know what tomorrow will bring once he goes back to work!

Dessert tonight will be raspberry sherbet. Nice and cool!!!

The heat is really ruining my herbs this year. Right now I barely have enough to cook with, I guess I won't have any during the winter either.

So I'm now thinking maybe we should forego AP this time & do something at one of the monorail resorts that night. I know a lot of people will do cabs for resort dining but that's not an option for us (with Bob's WC) either.

I have to be honest, I was one of those people who was okay with the kids in my family but I would be exhausted with the others. I still watched them and played with them but I was tired when they went home. I still have so much respect for Mom's of multiples. You just take it in stride but you really have to be special to manage the way that you do.

Sounds more feasible to me. We did not take cabs either, Marisa would not put Kady in without a seat and she did not pack it. You are used to driving where you want to go so the bus system is going to be a little bit of a crimp I'm afraid.
