Hi All,

Well, we LOVED La Nouba and House of Blues. La Nouba was AWESOME!

It is 11:50 and we just got back to the room and enjoyed some cake...

We had to bring Andrew to the Pediatric ER...He was having trouble closing his one eye and giving us a one sided smile...he has Bells Palsy which I guess is pretty common and will go away on his own.

We are still hoping to get to the parks...but not sure if we can enjoy the rides since he has trouble closing the one eye...but he is OK and that is all that matters...my little man!

Lori, The Sultry Seahorse is yummy....can't remember all that is in it...have the menu on the camera...amaretto, banana liquor and I am not sure what else...

Tonight is leftover chili. I went to Panera Bread yesterday and got us bread bowls to eat it in. Boy was it good!

WFD- I have boneless chicken breast marinating not sure what the end results will be. I am thinking either salads topped with grilled chicken and swiss or grilled chicken wraps.

My DH is working tonight so something easy for him between jobs and he is dieting...and doing wonderful I may add! I am really missing me some carbs!

Lauren- Poor A :hug:. My cousin had Bells Palsy and it was not fun. Poor little guy. On a positive note, glad that you enjoyed La Nouba! It sound like you are vacation plan does not include a vacation when you get home. That is how we do Disney- and we have never regretted that we do not maximize our park time and tickets. My Sis IL has a friend who will not even let her kids watch parades because they take away from attraction time. No one in her party gets a vote. Have fun!

Merle- I would be sulking.

I think we will have meatloaf and some sort of potato. I need to be at the farm this evening and the girls are going to the gym so dinner is on the run. Last night Buddy and Jeff picked up a fish bucket. I had a little bite and it was good, but ate a salad and pasta with my veg. sauce.

Oh well, back to cleaning!
 
We did not end up getting home until about 8 PM last night due to severe thunderstorms here that disrupted the trains. We ended up having a picnic in the living room--leftover cold chicken, some sliced tomatoes and basil, some baguette with emmenthaler and plurga, olives, and devilled eggs. I have a picture but I need to reboot my internet connection after the storms and did not have time before coming to work.

Tonight I will make the tomato tart I mentioned yesterday. We'll have a spinach salad too, but not the one I was thinking of yesterday. I don't want eggs two days in a row. I am going to see if I can find a recipe for a wilted warm spinach salad instead.

Last night Alan had to work late due to the primary elections here. So, the kids voted against the chicken salad and opted for mac and cheese with tuna fish.

So, tonight is chicken salad, rolls, watermelon and anything else cool I can think of. It's going to be a scorcher here!

The creamy watermelon pie was wonderful!!! Here's the recipe. It's so EASY!!!

Creamy Watermelon Pie

1 pkg. (3 oz) watermelon gelatin
1/4 cup boiling water
1 carton (12 oz) Cool Whip, thawed
2 C. cubed seedless watermelon
1 graham cracker crust (9 inches)

Mix the gelatin with the boiling water until dissolved. Let cool to room temperature. Fold in the Cool Whip. Mix in the watermelon. Spoon into crust. Let chill 2 hours or until set. Serve and enjoy!!!
 
Glynis -- It's a good thing Flake bars aren't readily available around here or I would be in trouble. When Beck and I lived in Boston, there was a shop in Cambridge that carried them, and I would buy an entire box at a time.

Lauren -- I hope Andrew is feeling better.

Liam has baseball practice tonight (and so it begins AGAIN...) so unless the kids object, I am planning burgers for dinner.

We had a cheese plate tonight with salad, local strawberries, bread and crackers. Here's a picture of everything in serving dishes before the kids attacked it.

The tortilla bake last night was a HUGE HIT!! I was so happy to have found a WW recipe that greg liked as much as me..

I made a few substitutions though, Ground Turkey instead of the beef and reg. canned tomatoes not the ones with basil and flour instead of corn tortillas :)

1 pound VERY lean ground beef
1 can dark red kidney beans, drained & rinsed
1 can (28 oz) Italian Classics Kitchen Cut Roma Tomatoes with Basil
(if you can't find this substitute with any other kind)
1 can (4 oz) chopped green chiles (mild)
1 pkg (1.25 oz) McCormicks 30% less sodium Taco Seasoning
1 pkg (10 oz) corn tortillas (12, 6-inch tortillas) -
Try Diane's Corn Tortilla's Thin (1 PT for 2)
1 cup (4 oz) shredded low fat cheddar cheese

Recipe


Preheat oven to 350 degrees. Brown ground beef in large nonstick skillet;
drain well. Mix in beans, tomatoes, chiles and taco seasoning mix. Reduce heat;
simmer 5 min. Spray 9 x 13 " baking dish with nonstick cooking spray. Cut
tortillas in half; place half of them in bottom of baking dish, overlapping.
Spoon half of beef mixture evenly over tortillas. Cover with remaining
tortillas and then remaining beef mixture. Top with cheese. Cover; bake 25 min.

SERVINGS: 8
POINTS: 5.5

PER SERVING: 280 Calories, 9 g Fat, 6 g Dietary Fiber

Freezer Tip: Use two 8" x 8" baking pans. (cut tortillas into 4ths so
they fit better). Cover with foil and freeze. Place in 350 degree oven
straight from freezer. Bake 1 hour or until internal temperature reaches 160 degrees.

Tonight: probably ff hot dogs or soemthing boring but diet friendly..greg is working tonight. I had the leftovers from dinner at lunch though..super yummy even heated up!

Lauren, Prayers that Andrew will recover quickly! :hug: Weird this is the 3rd person in the last month, that I "know" that has Bell's Palsy. DD's best friend who's pregnant has it, & a friend that just had a baby has it. They both are improving quickly & I'm sure Andrew will come back even quicker!

Isn't that the truth? I brought home one for each of the kids, and they fell in love! I also brought home a ton of Thornton's toffee. I could live on that stuff!

Glynis I am soo glad your back. Thanks for posting that pie recipe I've added it to list of what I'm making for saturday.

I'm making a Truffle pie, peanut better and fudge pie, cupcakes little individual pies apple and cherry. regular brownies and zebra brownies. Of the watermelon pie too. Of course it is going to be in the 90's for the next couple of days. Oh well my friend does a lot for us what is a little sweat :laughing:

Today was a lazy day. Only thing productive I did was find a great Lane Bryant sale on the budget board and shop online. It was a great deal, so that makes it okay right?

Dinner was really good. I marinated chicken in balsamic dressing allday then grilled it. We had it on toasted bulky rolls with melted cheddar, romaine and mayo. I bought an Edamame bean salad at Stop & Shop, so we had that on the side.

Tonight we had sirloin filets that I pan seared and finished with a beef stock/cream sauce. I made roasted broccoli and pasta to go with. I think the sauce would have been much better had I used the heavy cream, but in the interest of my waistline, I used fat free half-and-half. It was still good, but I kept dreaming of the cream while eating it. We have enough left that it will be dinner tomorrow night too.
 
KFC here tonight. Left work late and didn't feel like cooking. My brother, SIL and nephew will be here tomorrow night so we are going to grill chicken.

Really??? It's all in the lighting!! ;) :lmao: I sort of had a hard time with those. They were already sliced & not very evenly! So I had to cut & pound on them to get them somewhat even! Whew! The only change I made was I marinated the chops in the mustard, garlic & little evoo. Other than that I followed your recipe to a tee! I think I should have been a bit more genorous with the brie, but the chops were so uneven & the brie was falling off. And if there is one thing I won't waste... it's good cheese.:confused3
