WFD- portobella and swiss burgers, cole slaw, & salad with feta tomato and cuke.

I found a new product I love to make cole slaw with Cole Farms Cole Slaw Dressing. It make a nice vinegar based slaw no mayo. It says on the site it is only available in New England and Northern NY. I found it in Stop & Shops refrig. section. I add some grated onion, celery seed and a table spoon more white vinegar...Yummo!

Laurie I feel so bad for your dog. He must be more selective in his playmates. My uncle's dog is forever getting skunked. You'd think after 5x he would learn.

Wow, you would think he would begin to make the connection after the 3rd time or so. Poor dog. Maybe he's just a glutton for punishment (kinda how I feel some times).

Glad to hear that Glynis is okay. I was wondering where she was as well. I can't wait to hear about her trip!

I did actually feel nice last night. He ran an errand for me on the way home in an absolute deluge! He was soaked when he got home so I figured he deserved a pan of cornbread. He loves it, especially when I make honey butter (which I did).

I'm anxious to hear about Glynis's trip too. I'm sure she is swamped since coming home, but I bet she had a great time and has lots of stories to share. I'm hoping she has some pictures for us too.

Lindsay that is very sweet of you, but I'm not computer savvy enough to have a Facebook page or whatever it is called. I also think I'm probably way too old. Don't they kick you off after you are officially older than dirt? (That's what my children think anyway).

Dinner tonight is the leftover pork chops, etc from last night.

Dinner last night was pretty good. I made the pasta with garlic, capers, etc that I posted here. I took shrimp and tossed them with lime zest, salt and pepper, then sauted them in olive oil with garlic. I also had roasted beets and Vidalia onions. I took pictures for you all but my computer was soooooo slow last night and I didn't have the patience to download, then upload. :headache:

I really need to get a detachable/portable hard drive for my computer. I have over 5,000 pictures on there and it is at 85% capacity. It moves so slowly and one of these days I am afraid it is going to crash and I will lose everything. :worried:

WFD tonight; I am trying a new ( to me ) WW recipe for Mexican Tortilla Bake..if its any good I will certainly post it!

Hey, y'all! I'm baaaaack!!!! Boy did I miss you guys!!! Katie and I actually got home on the evening of the 10th of June, and I had planned on checking in with you all on the 11th. However, during the drive home from the airport my hubby informed me that the job he had lined up for the 16th through the 20th, had extended, and we needed to leave on the 11th!!! So, I got home at about 9:00 p.m. on the 10th, did a few loads of laundry so Katie and I had clean clothes, and repacked for all 6 of us, and we hit the road by 7:00 a.m. on the 11th. Luckily, the job Alan had to do was to film for my father's Shakespeare festival, so I could suffer from jet lag with my mom to look after me and the kids. Thank heaven for moms!

Anyway, we got home on Sunday afternoon, and I have been buried under a mountain of laundry that Alan never did while I was in England. I think I've seen the light at the end of the tunnel, but you never know! Luckily, all my kids were busy with friends yesterday, so I had a quiet house to spread out all the laundry in and get it done! I just have a couple more loads to do today, and I'll be all caught up!

London was spectacular! I'm spending some time today uploading my photos and I will then share my stories and pictures with you! We had so much fun, saw some wonderful shows, and ate some wonderful food!!! Katie is now begging me to learn how to make Cornish pasties. So, I'll be experimenting with recipes for that this summer.

Just wanted to pop in and say, thanks for worrying about me! I really missed talking to all of you on a daily basis. It's comforting to know that things went on while I was gone. If there's anything I need to know, could someone PM me? Thanks.

Dinner tonight will be chicken salad with a lemon dijon dressing and creamy watermelon pie for dessert!

Tonight I am going to have Eggplant Parmesan. I got breaded eggplant cutlets from Trader Joe's and will put their marinara on it with some fresh grated parmesan and a little mozzarella. And I am going to try my hand at making an Asian inspired red cabbage. Rachel Ray had something on her show with it and I thought I would make my own version and saute the cabbage with some green onion and add Rice Wine Vinegar and soy sauce. I might even add some bok choy to it too.

Today for lunch I made an Asian chicken salad

Per person

2 oz grilled chicken cut into bite size pieces
1/2 C diced water chesnuts
1/2 C chopped Chinese pea pods
1/2 C diced mango
2 T Hoisin sauce

Mix, serve on lettuce.

The mixture is good on it's own too, you can just cut down on the Hoisin sauce. I used 2 tablespoons so there would be enough "dressing" for the lettuce.

He sure can. You show up in front of Jiko a little before the start of the tour and then one of the ambassadors takes you into the restaurant where your tour begins. Honestly, I enjoyed the Boma portion of the tour when two chefs came out and described their food. You do not get a tour of the kitchens, which is what I would have really enjoyed but it is fun. I wish I had taken the art tour. The collection of African art is amazing and if I had taken a tour I would have gotten more than when I read the captions.
I think that A will also enjoy talking with the ambassadors who are everywhere throughout the resort. They love to talk about their homelands. Buddy and I were out near the Savanna and one of the animal keepers heard us talking. he stopped working, we did not see him there, and took the time to explain to us whatever we had been wondering. I loved staying here.

Nancy, That sounds fun, is it only for AK guests? The ambassadors at AK are the best. After a trip to Jiko, we walked out to view the savannah, there were 2 amb. with night view glasses. The glasses were fun, but even better was chatting with the two young men about the foods of Africa & New Orleans.

Thanks everyone for all the good wishes! I'm feeling a little better each day. Getting in the pool yesterday, actually helped more than the ice & drugs!

I've taken out a pork loin to thaw, but I'm not sure how I'm going to fix it. Something that goes with asparagus, I bought 2 bunches last week, have to use them quick!

I think it is open to anyone. There was nothing that indicated you had to be a resort guest. I loved AKL. Can you tell I kind of wanted to stay there?


I am up in the air about dinner again. Marisa and I are going to see my DN at her health club. I am thinking of signing up for the 8 week free trial to see if I would use it. (Kat, you are inspiring me) I am also trying to clean but really don't have the heart. I hate digging through stuff and sorting git. I did two closets yesterday and wanted to quit!
 
Since my pork tenderloin, was actually sliced filets of tenderloin, I am going to try Gretchen's "stuffed" mustard and brie topped chops!

We have not done a park yet but the crowds seem OK. We were at Typhoon this am about 9:30 and did everything by noon.

I am making beef and rice enchiladas tonight with black beans on the side. We got 3 new releases today (Spiderwick, 3000 BC or whatever it's called, and Definitely Maybe) so it's a movie marathon at our house!

I was tied up in meetings all day and have gotten NOTHING done :badpc:

WFD tonight....I have some leftovers to use up, so I am either going to make sandwiches, or else a big salad with the leftover chicken and steak sliced onto them.

I think I finally narrowed down our dates for Disney-October 25-November 3. The house we like is available and according to touringplans the parks should not be too crowded. Plus the food and wine festival will be happening.

We'll Be down Oct 24-27, like Sheryl said for F&WF. We'll have to see if we can get together!

OK, I'll bite.....what's in a Sultry Seahorse?!?

Has anyone ever made Monkey Munch? I was watching John & Kate Plus 8
last night and she makes it all the time. I googgled the recipe and found this:

Monkey Munch (aka Chex Mix Puppy Chow)

Ingredients
9 cup Chex
1 cup chocolate chips
1/2 cup peanut butter
1/4 cup butter
1/4 teaspoon vanilla
1 1/2 cup powdered sugar

Directions
Put cereal in large bowl. Melt chocolate chips, peanut butter, and butter.
Remove from heat and stir in vanilla. (She did it in the microwave)
Pour over Chex cereal, put into a large plastic bag with powdered sugar and shake well to coat.
Spread mixture evenly on wax paper and allow to cool.
Store in frig.

I love this! I always make it at the holidays to go with the cookies and banana bread.
 
Ended up not making my cabbage tonight, had squash that needed to be used before it gets bad.

Man all this talk of resorts makes me sad! :sad1: My sister and her family are leaving tomorrow morning for WDW. This will be the first summer in several years that she and I and my nieces won't be going.
 
Hi All,

Well, we LOVED La Nouba and House of Blues. La Nouba was AWESOME!

It is 11:50 and we just got back to the room and enjoyed some cake...

We had to bring Andrew to the Pediatric ER...He was having trouble closing his one eye and giving us a one sided smile...he has Bells Palsy which I guess is pretty common and will go away on his own.

We are still hoping to get to the parks...but not sure if we can enjoy the rides since he has trouble closing the one eye...but he is OK and that is all that matters...my little man!

Lori, The Sultry Seahorse is yummy....can't remember all that is in it...have the menu on the camera...amaretto, banana liquor and I am not sure what else...
