The All-New What's For Dinner Thread!!(recipe index in OP)

Hi all! I thought I would join. I have heard so many good things from the New Orleans Ladies!

WFD- tonight was tacos ala Stephanie. I take 1 whole onion, chopped, 1 red pepper, chopped, and about 1 c chopped carrots, and a few cloves of minced garlic and cook them over medium heat in 2c water(or beef broth) and a packet of taco seasoning. Cook until the veggies are a little soft but still a little firm.

Then I brown 3/4 lb of ground beef and 3/4 lb ground turkey. Add another packet of taco seasoning and veggies. bring to a simmer.

Serve with taco shells, romaine lettuce, chopped tomatoes, cheese, whatever else you like on tacos.


My DH loves this and so do my kids. It is super easy and great way to sneak veggies into my boys. It has turned a not so healthy meal into a veggie filled treat.

Dinner tonight will be a simple beef and bean pot pie. Nothing fancy, but my kids will eat it and it throws together quickly.

I have been lazy all morning. But I better get dressed and head out to the store, or we'll be eating ice cubes for dinner!!!

Aimee - I know you have been going through some really difficult times at work and I am sincerely sorry. I cannot imagine how emotionally trying all of this has been and how the stress level has impacted you. I hope you know I was just making light trying to give you a smile, not to make light of your situation. :flower3:

Tonight's dinner is going to be simple - chicken with an asiago cheese sauce over pasta with some garlic bread.

Do you have a recipe for the asiago cheese sauce? That sounds divine.

The funeral was so comforting. The most touching moment was when the pallbearers took off their boutenierres and laid them on the casket. One of the pallbearers was Carissa's "boyfriend". Another Down's Syndrome boy who has taken her to prom for the last 3 years. He put his flower down, and then kissed the casket. I really lost it then!

No idea what's for dinner. We've had Taco Cabana the last 3 Wednesdays - DH may beg for that. He could eat Tex Mex everyday if he could.

You got that right! :hug: Tom insists on going out to eat so that is what we are going to do. I may take A out later too. I think I need Mommy & A time...batting cages and lunch.

:sad1: Beautiful moments but oh so sad. My heart breaks just thinking about this lovely girl and the lives she touched.

The arroz con pollo I made yesterday came out way too salty. And I'm not really sure why? I used a different brand of chorizo & I think I might have been too genorous with the olives. And wouldn't you know it, but DD & SIL stopped by unexpectedly for dinner. Bob & SIL both had 2nds, so I guess it wasn't too bad. But DD & I were both guzzling water after dinner.

DD & SIL did have a little surprise for us!

Nooo, not news of a Grandbaby, but I do have a new Grand-Corvette! :car: They did let me drive it, & Wow just WOW!

Thanks. And tell Rick thanks for the chuckle!!! I have a few kids I could send your way if you want some loaners! After the morning I've had, I'm kind of rethinking the whole thing!

Boy oh Boy...gorgeous! Congrats to your daughter and SIL...and you too! BTW, you have a gorgeous driveway and home!


Lauren, That driveway was a total remodeling nightmare!!! We wanted to put in a driveway in the front of the house, because the driveway into the garage is buckling from our oak tree & needs to be redone. Bob needs a smooth surface to get into the house. Anyway, we decided that since it was going to take up so much of the front yard we wanted stamped decorative concrete. We had several bids & of course chose the least expensive. A young guy who had just gone into business for himself. Well he tore up our yard, took off a month, saying he had a death in the family. Finally came back, poured & stamped the concrete. Cover it with a tarp & disappeared again. After a few days I pulled up the tarp & the concrete looked cracked & dry like a creek bed in a drought! We called & called, went to his house. He packed up & was GONE! We had given him a deposit & a progress payment when he poured the concrete. So we were taken for $2000!!! We contacted the BBB & the local dept that handles it, but he couldn't be found!

We then had to hire the more expensive company to do the job, but it also cost even more than the original estimate because the bad concrete had to be totally torn up & removed.

Glynis, that is such a sweet story. I was sitting here reading it with tears in my eyes. I would have been a basket case if I had seen it in person. My heart goes out to your family over the loss of such a special young woman.


Gretchen- if you could see my house today you would wonder why I would even go somewhere else to clean :lmao:. Buddy generally would not see a mess if he tripped over it but even he is tiptoeing around her....and at 6'6" that in itself is a sight :rotfl:. I have a list that would choke the Flylady, but that will have to wait.

:lmao: :lmao: Now I don't feel so bad about my own housekeeping, but I am taking this with a grain of salt since I know for a fact you iron and I honestly could not tell you where my iron is. Kenny uses it sometimes, but I haven't touched that thing in years.

That's what we think, too! Of course, it would be easier to have another girl. We still have all the girl baby clothes. Having another boy would mean more shopping (hmmm, that's not a bad thing, right?)

Not to my way of thinking. ;)

The car is really WOW. I bet you were the envy of the neighborhood driving it. And I agree with Lauren, your driveway is pretty WOW too. Although I cannot imagine the frustration you went through getting it done.


Do you have a recipe for the asiago cheese sauce? That sounds divine.

Aimee, this is a new recipe for me, so I'll post it tonight if it is good.

Don't know whats for dinner. I was waiting for Becky's recipe for the Moroccan Fish,(Thanks Becky!) but I think I need to have at least one olive free day. ;)

Olive oil is good for you, my Dietitian said so! :thumbsup2

Met with her today, she is happy with my progress but wants me to exercise more. :yay: Then I went out to lunch with my boss and two coworkers and had Italian food. :cloud9: I was very good and got a salad and Chicken Marsala. It came with spaghetti and I only ate half of that. I did have Focacia bread with olive oil but stopped after two pieces. I could eat a LOT of that, it is the best I have ever had.
