I'm not sure WFD today we are being taken out for lunch (secretary day) so I may not be very hungry. I'll still have to cook something for the kid but he is easy to please.

Well I must start getting myself in the shower. I should smell good if I am going out in public.:laughing:

Tonight I am making chinese stir fried noodles with garlic, ginger, scallions, cilantro, tofu, bok choy, carrots, and shiitake mushrooms.

I never cooked dinner yesterday, Marisa ans Jeff went to a movie and Buddy was late at the farm so I took Kady and her friend to McDonald's and had leftovers myself. Buddy ate sandwiches.

No idea about tonight. My BIL bought his Mom's house years ago and she continued to live there. Well it was too much for her even with Mike taking care of everything so she moved into an apartment complex with a lot of folks her age. She loves it but that left the house empty so Mike has been renovating it to sell. My niece's go to school near there and asked if they could move in so I am supposed to help Gail clean it for them. She has a lot of errands before that so if she gets done we will start and dinner is on your own here. It is going to take a few days becasue there is a lot of construction mess to wash.

Morrocan Fish Tagine

1/4 cup each parsely and cilantro, chopped
1/4 cup olive oil
2 tsp. sweet paprika
8 threads saffron, crumbled (NOTE: I dislike saffron, so instead steeped some annatto seeds in the olive oil, then strained the sees out and continued. The point is just to get that deep red/orange color--you could use tumeric instead, or just leave this step out entirely!)
1 tsp. ground ginger
1 lemon
1 pound fish (I used haddock)
4 tomatoes, peeled, seeded, and chopped (or substitute a 12 ounce can of tomatoes)
2 cloves garlic, minced
1 tsp. cumin
salt and pepper to taste
2 carrots, peeled and sliced on the bias
1 onion, thinly sliced
1 tbsp. preserved lemon pulp
a handful of olives
cilantro to garnish

Mix the parsely, cilantro, olive oil, saffron, and ginger together. Cut the lemon in half and squeeze the juice from one half into the mix. Coat the fish fillets with this spice mix and marinate in the refriegerator for about an hour.

Thinly slice the other half of the lemon and set aside.

Combine the tomatoes, garlic, and cumin in a saucepan and simmer over medium heat until thickened, about 10 minutes. Season with salt and pepper to taste.

Layer the carrots in a single layer in a pot with a lid (I have an actual tagine, but you could use any large pot with a lid). Cover the carrots with the sliced onion, and then layer the tomato sauce on top. Remove the fish from the marinade and place on top of the tomatoes. Divide the preserved lemon pulp among the fish and spread it evenly over the flesh. Pour the marinade around the fish, and top with the lemon slices. Scatter the olives into the pan and cover. Cook over medium heat until the fish is flaky--10-12 minutes.

Gretchen- if you could see my house today you would wonder why I would even go somewhere else to clean :lmao:. Buddy generally would not see a mess if he tripped over it but even he is tiptoeing around her....and at 6'6" that in itself is a sight :rotfl:. I have a list that would choke the Flylady, but that will have to wait. Gail will help anyone and Debbie is my Godchild. She is the most amazing young lady there is so I would do anything for her and still feel that I need to do more. She is a treat!

Laura, The snack shack was clean...thank God. I almost lost it cleaning out the hot dog pots though. Those dang dogs were sitting in that water for hours...yuck!

Becky, pics and recipe looks good. If only my guys would eat fish!

That sounds terrific! The kids, Greg and I went to the aquarium today, but it wasn't quite like seeing the mammals out in the open ocean. Is your beach on the North Shore? We are on the South Shore.
Like I said, we went into Boston today and we had dinner at Summer Shack. Greg and I shared raw oysters from Wellfleet and fried Rhode Island style calamari. I had grilled swordfish with pineapple salsa and jasmine rice and Greg had a scallop dish with fennel slaw. Liam had a cheeseburger, and Caili had the fish and chips. Maybe I will cook tomorrow.
That sounds like such a fun day!!! We ( Greg, my boyfriend not your husband ;) hehee and I ) are planning on doing an aquarium/Boston day for our mother's birthdays next month...if only i could get him to go to Summer Shack!!!

Well last Friday and Saturday I was really bad. :rolleyes1 I had the Chick-fil-A Coffee Caramel Shake with a grilled sandwhich and then later that night had a piece of cheesecake from the Cheesecake Factory. The next morning I had a Sausage, Egg and Cheese Croissant meal from Burger King. :scared:

I made the mistake of looking the calories up for Burger King and all I can say is, OH MY STARS! My Dietician is going to get me. :scared1: I was truthfull in writing that down, I am not telling her about the milkshake and cheesecake the night before. :rolleyes1

I did lose a pound last week! :upsidedow

Awesome on the lb gone!! that food sounds sinfully good though!!

That's what we think, too! Of course, it would be easier to have another girl. We still have all the girl baby clothes. Having another boy would mean more shopping (hmmm, that's not a bad thing, right?)
 
Oh, that funeral sounds so gorgeous and meaningful. I hope it brought comfort to you and the rest of her family. What a loss.

Thanks, Aimee! We think it's pretty cool! When I woke up this morning Mary asked if the new baby was here yet. I told her she's going to have to learn patience. Ugh!

The funeral was so comforting. The most touching moment was when the pallbearers took off their boutenierres and laid them on the casket. One of the pallbearers was Carissa's "boyfriend". Another Down's Syndrome boy who has taken her to prom for the last 3 years. He put his flower down, and then kissed the casket. I really lost it then!

The arroz con pollo I made yesterday came out way too salty. And I'm not really sure why? I used a different brand of chorizo & I think I might have been too genorous with the olives. And wouldn't you know it, but DD & SIL stopped by unexpectedly for dinner. Bob & SIL both had 2nds, so I guess it wasn't too bad. But DD & I were both guzzling water after dinner.

DD & SIL did have a little surprise for us!

Nooo, not news of a Grandbaby, but I do have a new Grand-Corvette! :car: They did let me drive it, & Wow just WOW!

Don't know whats for dinner. I was waiting for Becky's recipe for the Moroccan Fish,(Thanks Becky!) but I think I need to have at least one olive free day. ;)

Welcome! Do you cook in the clay roaster often? I used to use mine but somehow it got pushed to the back of the cabinet.

I don't use it as often as I should. I only use it for pot roast and whole chickens.

Tonight was Greek Stewed Chicken over orzo. This is the first time I have tried this recipe. The recipe called for cinnamon and the aroma while it was cooking was just wonderful!

Recipe, please!!!! Cinnamon is something I'm craving right now, so you've peaked my interest!!!!

We had a Mother/Daughter thing at the school this evening, so a bunch of us Mothers (and daughters) met at Chick Fil-A for dinner.. easy :)

I love Chick Fil-A!!! I always have to stop there on Fridays after bowling!!! I don't know why, but their chicken tastes better than anyone else's!
 
Glynis - CONGRATS!!!!!!! I'm so glad for both of you.

Kathy - I hope you are feeling better tonight. My headaches are finally getting better, probably because I finally broke down and got some decent allergy medication. After a week or so, I realized this is what the rest of the world must feel like. I no longer sleep with the buckwheat pillow over my eyes and the dark circles are lightening up some. Who knew?

Laura - I've missed so much that I didn't even realize Greg was home. I hope you guys are having a great time. I'm sure the kids are over the moon to have Dad home.

Aimee - Fat and carbs, honey. Sounds like a good remedy for a tough couple of days.
