Aimee, the chicken was delicious. I served it with a rice pilaf done with some orzo and toasted pine nuts. And canned green beans :rolleyes1 since I didn't make it to the store on my lunch hour.

Korean Roasted Chicken Thighs

8 chicken thighs, skin on
½ cup soy sauce
½ cup minced green onions
3 tablespoons sesame oil
3 tablespoons honey
2 teaspoons minced garlic
¼ teaspoon ground ginger
¼ teaspoon black pepper
½ teaspoon cayenne pepper

Place chicken thighs in a baking dish, skin side down. Mix remaining ingredients in a bowl and pour on top of chicken. Bake uncovered at 375 degrees for 45 minutes. Turn chicken over and bake an additional 15 minutes.

I made this last night and let the chicken sit in the fridge overnight in the marinade. Then I let the chicken come to room temperature and baked as above.

Had King Crab legs for dinner tonight. Went to pick up tortilla's and sour cream unded up with crab legs, imitation crab to add to a salad, Hebrew National FF hot dogs, yogurt, bread, bananas, limeaid, and plum tomatoes in addition to what I went to the store for.:sad2:

The hot dogs were on sale for $2.49. :woohoo: I bought some week before last at TJ's for almost $4.

I didn't get out of work until 745 so I knew we'd be eating at 9pm if I cooked once I got in so I caved and went to Sonic. They had chili cheese coney combo's for $2.99 so dinner was just $6 - not too bad. I'll make the chicken tomorrow night.

The closest Sonic to me is up near the PA border. My friends DH LOVES Sonic but of course that is too far to drive to pick up dinner.

The day has been super busy....Kris' dad had to go to the emergency room for what they thought was kidney stones, after a CT scan it is thought to just be a pulled back muscle that is having spasms. He is loopy as hell on percocet, flexeril and the morphine that they gave him via IV. I find it amusing that he is driving my mil insane......(honest I am not a bad person....this is just a karma moment)

I am thrilled that David Cook won!!! I just watched AI on dvr!! I had to avoid the dis until I had time to watch it so it wasn't spoiled!

Kat--I am sooo sorry that you are sick, I think that Gretchen is right, you were just to emotionally drained to fight the germs! Hope after some sleep you feel much better! hugs

I had a WW frozen meal and 2 glasses of wine, and Kris just ate apple jacks and popcorn......somehow I think we have failed the food pyramid test......

Sorry I didn't post yesterday. My husband was, again, working from home and I had to use the laptop. Like I mentioned last time, it has been reconfigured (or something) and forgot my DIS password and I never could get it right so I could log in. Argh!

Anyway, tonight I am making Rachael Ray's Vegetable Not-sagna. I can't wait! Comfort food!!!!

DH loves DM pulled pork she made a huge pan and sent us home with a ton.
All I have to do is warm it up.

Hope everyone is doing okay. We have a little drama we are dealing with with my DSD....uggggggggggggh, kids!

DBF is leaving in the morning to go on a weekend long fishing (ha-ha they have yet to bring any home) trip with a bunch of friends. YIPEE!!! It's not that I don't love him right to death but a weekend by myself is gonna be great! I have a whole list of things that I am going to try and accomplish, invites for the grad party, quilting,working in the yard, cleaning, and thanks to you guys I might have to try some of these yummy recipes or it's gonna be takeout all weekend.
Tonight I have 2 softball games to go to so am not sure what dinner is going to be as I won't be home til 8pm or after. Something wonderful like grilled cheese or cearel.

Hope all is well with everyone

Hey guys! Long time no see! Sorry I have been absent for a bit. I've had one day off in the past two weeks and tomorrow we're leaving for a wedding in Ohio. It's been extremely busy. So that also means, not much good cooking around here--it's been convience meals or take out! Hope to keep up better in June!

Those are my step daughter's favorite. However, her Dad doesn't like them much, so she gets them rarely. Personally, I think he's just to lazy to want to eat them. I'm sure it isn't a flavor thing, he normally loves seafood.


Dinner tonight was a big hit! As I mentioned earlier we had this dish at one of the Cooking demos at F&W Fest last year. I've been wanting to fix this, but kept forgetting to buy dried cherries. Bob said it tasted just like he remembered! So even with the cherry & my momentary disaster of not being able to find unsalted smoked almonds it came out great. ( I actually bought salted smoked almonds & washed the salt off. :upsidedow Probably also washing away the smoke flavor too. Next time I'd just use raw or roasted almonds!)

Thanks for the compliments on the meal! It really wasn't hard to do, just took a little prep time.

Wendie, I ended up adding a little bit of the reserved sherry to the sauce, a whole stick of butter was pretty rich! Then when I was cleaning up, I had the reserved sherry in a tupperware dish & instead of getting another one out, I just dumped the cherry sauce in there! So I might have to call that sauce Cherries El Drunko!! :laughing: Sorry you're FIL is sick, but yeah that is a "What goes around-Comes around Moment"!

Update on Alexis's family trip, I am so flat out jealous! I chatted with Chris this morning, while she was sitting on her patio at SSR. Sipping her coffee & looking out on the lake!!!
They ate at Flying Fish last night, Chris ordered the cheese tray & my DBIL tasted the blue cheese just for me, he said to tell me it was still yucky! :lmao: And he much preferred the Calamari he ordered over the cheese!
This morning they are off to have breakfast with the Princesses at Akershus!

I'm not sure WFD, I have a little bit of salmon leftover, if I can keep from eating it for lunch. I have a lot of sauce leftover too. I'm going get a haircut today, which is just down the street from Whole Foods, so of course, I must need something from there! So who knows what I'll come home with.

John's is getting back from London in time for a (late) dinner tonight, so dinner is by his request: pasta with red sauce and basil, cheesy garlic bread and a salad.

He's been sending me daily emails on the food he's been eating over there and making me SOOOO jealous. I never though the food would be London's main attraction, but he has been eating all kinds of super fresh fish that we can't get over here: irish salmon, sea bream, monkfish on the bone, periwinkles, dover sole...I already told him that on his next business trip to London, I'M COMING TOO!! :rotfl:
 
Good morning everyone! Another rainy day here! After our summerlike temps the last little while, it seems odd to have the heat back on.

Last night's dinner was a huge success! The kids loved the chicken. Here's the recipe if anyone's interested.

Pecan Chicken with Chutney

3/4 C. all-purpose flour
1/8 tsp. Salt
1/8 tsp. Pepper
2 eggs
1/3 C. buttermilk
1/8 tsp. Hot pepper sauce
1 C. finely chopped pecans
3/4 C. dry bread crumbs
6 boneless skinless chicken breast halves
2 Tbs. Butter
2 Tbs. Vegetable oil

Peach Mango Chutney

2 C. sliced peeled fresh or frozen peaches, thawed
1 C. mango chutney

In a shallow bowl, combine the flour, salt and pepper. In another shallow bowl, whisk the eggs, buttermilk and hot pepper sauce. In a third bowl, combine pecans and bread crumbs. Flatten chicken to 1/4 inch thickness. Coat the chicken with flour mixture, then dip in egg mixture and coat with pecan mixture.

In a large skillet over medium heat, cook chicken in butter and oil for 8-10 minutes on each side or until juices run clear.

Meanwhile, in a small saucepan, combine peaches and chutney. Bring to a boil. Rerduce heat; simmer, uncovered, for 15-20 minutes or until heated through. Serve with chicken.

Yield: 6 servings (1 3/4 cups chutney)


I served it with fresh cucumber slices and tomato wedges. Yummy!

We watched AI last night, too. I knew that David Cook was going to win, but my Katie was really rooting for David A. Personally, I think either would have been a great choice, so I wasn't too disappointed. I think that David A. will have a great career no matter what, so no worries.

They held a big party in our sports arena in SLC for him, and it was filled to capacity! They broadcast the finale on the Jumbotron, and I guess it was something else! Luckily, Alan didn't have to be there! That would have been crazy!

Well, I have to get ready for some heavy duty grocery shopping. I'm going to try to put together some freezer meals for while Katie and I are in London. Otherwise, Alan will serve the kids bologna and cheese at every meal. Hopefully, if I have some casseroles frozen, he can just pull something out each morning. We'll see!
 
I just went and added sesame oil to my grocery list, that korean chicken looks so good. I have some chicken legs in the freezer so I think we will have that this weekend. I start working full time soon, so my plan is to freeze some chicken in the marinade so it's ready to go when I get home. We will see how that works, I don't know why it wouldn't.

Laura- I thought Harry Potter would be a little to old for her. She's a strong reader so it's hard to find books to challenge her, just because she is capable of reading something doesn't mean she should.

Becky- I have a friend who is a scallop fisherman and he brought up a monkfish once, have you ever seen a whole one. It's not the prettiest fish.

Tigerkat- Glad your family liked the chicken, nothing fancy but the ingredients are almost always in our house if I'm out of ideas.

Last night I really cheated. Trader Joe made dinner. Orange chicken, veg. fried rice, and some really bad dumplings. I think I had enough salt last night to last a long time. Have to come up with something better for tonight.

We are having our floors done today so of course we had some last minute straightening up down stairs. We had this guy do the floors for us several years ago...what a great guy!

We had to move the 90 gallon fish tank across the room. We drained 3/4 of the water and it was still heavy...good thing Tom is built like a line backer! ;) He pushed the thing where I thought I wanted it then had to move it again when I didn't like it where it went.

We are having some london broil tonight (marinated in Louisiana Red Pepper and Lemon marinade in honor of my NOLA friends!)....I have not decided on sides yet. Maybe some mashed taters and salad or maybe roasted potatoes...Princess Alexis potatoes maybe! :)

Rogue, I've frozen chicken & other things in marinades, it works really well.

Becky, I was wondering how long it was going to take you to invite yourself along?! Sad your not with him, but glad that at least he's enjoying the food this time around!

Lauren, You must really be sick of remodeling by now! Happy that your floors are going in, that must mean you're getting close to finishing. That marinade you're using, is that a recipe or a packaged product?
