I don't mention him much as his entire life is a disaster and I try and keep my distance. He has a sixth grade education as does his girlfriend (the stripper). They've both been in and out of jail since they were pre-teens, need I say more?:sad2:

It was a scary screwup, since they had cancelled our original flight and neglected to inform us. Alan was just checking flight times, and noticed that the flight wasn't popping up on the website. He called and was told it was cancelled. They weren't going to do anything for us, but Alan got really angry and eventually got them to find us another flight for the same times, and compensate us with the first class. Let's just say we are being very vigilant about checking the website daily. So far, so good!

Ditto for Kyle! What a great opportunity for a great young man!
 
Hi all! One day to the weekend. :woohoo:

tongiht we are having burgers mine with mushrroms and cheddar and just cheddar for Mr A,fries and some fruit. I went overboard at the store. I bought blackberries, apples, bananas,grapes and kiwi. Good thing I drew the line on strawberris (I didn't like the price)

Kathy I hope Kyle stays well and you get well.

Glynis I check on our flights frequently too. Our flights only changed time by 10-15 minutes but they are still there so all is good :thumbsup2

I got our ME vouchers today boy Disney is on the ball this year. I sure love ME I hope they don't do away with it.

We are finally going to get into the high 70's maybe 80's this weekend I am so excited to maybe being warm.:yay:

Kyle leaves tomorrow morning for his first road trip to Jackson, MS with the Louisiana Knights baseball team!!! I'm praying he doesn't come down with what I have while he's there.

He also has his "first client".....he was approached by a couple of Little League coaches and asked if he'd have time to give private pitching lessons to some 12 yr old boys.

You have got to be so excited for him! Kathy, the doors opening for your son are going to be impressive.

Now could the coaching be his calling?

Buddy did not go out to eat tonight. He generally does when he sees Stacy so I never thought to fix anything. There is also nothing in the house that can turn into dinner without any effort, and I ma not making any effort. The poor guy was going to just have an egg (or 8) so I called Marisa and she is bringing him home a grinder from out favorite shop. I am having my jello.

I'm jealous! We got up to 49 degrees today! Brrr. I can't believe I was complaining about the heat just 2 days ago. I'd like to go back to that now, please.
 
I would also add the Little House on the Prairie series to your list.\

Those are Caili's favorite books. She is a strong reader too...she is in K and they stopped testing her at reading at the fourth grade level. I just thought Rogue's daughter had probably already read them. If not...she should! Secret Garden, Anne of Green Gables and Black Beauty are some others that Caili has enjoyed.

LAURA, Don't be jealous of the tank. It really is alot of work (although they have been neglected since the remodel - a few babies were also born during this time)..

I guess I will need to consult you if I ever do get a big fish tank. Beck wants one too.

She loves the Magic Tree house books, but has been reading them since she was 4, she just needs a push to branch out.

Maybe she would like the Ramona books by Beverly Cleary? It's not difficult reading, but it is engaging.

Is there any way to find out what other pitching coaches make in your area? He definitely does not want to undercharge, because then parents will think he is not good enough to coach. However, he shouldn't charge as much as a pro.

The recorder concert was all I expected to be, and more. I never expected that "Hot Cross Buns" would be paired with a synthesized recording of jungle rhythms and parrot screeching, for example. I also never anticipated a jazz number that featured synthesized music and all one note playing by the third graders. Who Knew? I also didn't anticipate tearing up at the end when the class played "Ode to Joy." I didn't know it was coming, and all of a sudden, all these third graders playing their little recorders in a song of hope and happiness, had me swallowing tears.

I'm still hiding the recorder tomorrow. ;)
 
Penny has been renamed P.C. I used to call Penny "P.C.", short for "Penny Cat." Now it's just P.C. He hasn't complained.

We seemed to have fallen into a routine this week. Between 6:30-7:30 he shows up on my back porch and stares through the door. He comes back between 3:30-4:30 and does the same. Usually after his evening feeding he will stretch up against the house and nap.

Ahem, I think a cat officially has us. :lmao:

My husband had to run to the store yesterday. I had him pick up a bag of Meow Mix and a 2-sided feeding dish. I think P.C. prefers the wet cat food over the dry, but he's eating it.

Cats do need wet food in order to be healthier; they don't drink enough water so wet food boosts them in the water dept. BUT, you're already a saint to take care of him and I know $ is not growing on trees so if dry is in the cards, dry is what he'll eat. Cats live on dry, it's just not the best thing for them and can extend their life some.

If you want to make the dry more appealing, you can buy a bottle of the cat gravy they sell it mush it up some for him. Even nuking it with some water and mushing it up will make it a little more appealing and get more water into him.

The turkey burger/meatloaf recipe was fabulous!!! The cranberry chutney was so yummy with it! Next time, I'm doubling the amount of the chutney though. It needed a bit more in the meat mixture. It worked really well as a meatloaf, and I got no complaints from the kids. Well, they weren't too sure about the apple chunks, but once they tasted it, they were hooked! This one is a keeper, for sure!

Kathy- It is kinda nice knowing you relate to my pain. DS was born an uncle. I am a step-nanny to a 2 1/2 year old. This recent drama has subsided for now anyway. Minor in the comparsion to other things I guess, :sad2: but sometimes it seems like drama never stops and we are always picking up the pieces. DH and I are only hoping our little guy turns out as well as your Kyle and we will be proud.:hug:

Now I kinda wish Ron & I were escaping this weekend but we will make the most of it anyhow. I can't wait just for DH to be home tomorrow and start our lonnnnnnnnnnnnng weekeend!:banana:

I am going to try to persuade Luke to sleep now.

Hmmm, cat gravy, eh? I will definitely look into that. Since we are now feeding him twice a day, I wanted to stretch that cat food so that's what I bought the dry. Do you happen to know if I can find the gravy at Target, or do I have to go to Petco or somewhere like that?

Vegetable Not-sagna Pasta Toss

1 pound curly pasta (recommended: campanelle or cavatappi by Barilla)
Coarse salt
1 10-ounce box frozen chopped spinach
3 tablespoons extra-virgin olive oil, divided
1 medium zucchini
12 cremini or baby portobello mushrooms, sliced
1 medium onion, thinly sliced
3 cloves garlic, chopped
Salt and pepper
1 roasted red pepper, drained, pat dry, quartered lengthwise then thinly sliced
2 tablespoons butter
2 rounded tablespoons all-purpose flour
1 cup vegetable or chicken stock
1 cup milk
1/4 teaspoon grated fresh nutmeg, eyeball it
1 1/2 cups part skim ricotta cheese
1/2 cup grated Parmesan, a couple of handfuls, plus some to pass at the table
1 cup fresh basil leaves, about 20 leaves

Heat a pot of water to a boil for pasta. Salt boiling water and cook pasta to al dente. Heads up: reserve a ladle of the hot cooking water just before you drain pasta.

Place the frozen spinach on a plate and microwave to defrost it according to your microwave's directions. Place defrosted spinach in a clean kitchen towel and wring out the liquid.


Heat a deep skillet over medium-high heat. Add 2 tablespoons extra-virgin olive oil. Halve the zucchini lengthwise then thinly slice into half moons and add to the pan along with the mushrooms. Cook 2 to 3 minutes then add onions and garlic to the pan. Season the vegetables with salt and pepper. When the onions are tender, about 5 minutes, add defrosted spinach, separating into small bits as you handle it, and the roasted red peppers and toss to heat through. Transfer veggies to a dish and return skillet to stove top. Add remaining 1 tablespoon of extra-virgin olive oil and the butter. When the butter melts into extra-virgin olive oil, add 2 rounded tablespoons of flour and cook a minute or so, then whisk in stock and milk. Bring to a bubble and thicken the sauce, reducing it 2 to 3 minutes. Season the sauce with salt, pepper and nutmeg. Slide vegetables back into sauce.
Place the part-skim ricotta in a large shallow bowl and combine with a ladle of boiling, starchy pasta cooking water. Stir to combine then add in a couple of handfuls of grated cheese.



Drain pasta and toss with cheeses. Add half the vegetables and sauce to pasta and toss to combine. Tear or shred basil and toss into pasta. Adjust seasonings. Top bowlfuls of Vegetable Not-sagna with remaining veggies in sauce and pass extra grated cheese at the table.



Two points:
1. I know this looks like a lot of work, but it really isn't.

2. It will look like a LOT of cheese sauce, but once you get it tossed, it's just right :)

Most pitching coaches around here (suburbs of DFW) charge $30 per half hour, up to around $60 in the more aflluent areas. I sure wish we were closer so Andrew and Jake could benefit from his experience. I hope he does well on the road trip.

It was great as a meatloaf! If you can find the cranberry chutney, I highly recommend it with the ground turkey. I'm sure mango would work, but my kids don't like Major Gray's mango chutney, as it's a bit spicy for their tastes. The cranberry was not so spicy, but added a nice sweetness. Very good!

I also have to say, the chipotle tabasco was awesome! I halved the recipe to make one loaf, and so it was only 1 teaspoon of the tabasco, but you could really taste it! Not really hot, but very smoky and flavorful!
 
Lots to do this weekend! I can't believe our trip is almost here!

Dinner tonight will be soup and sandwiches. I think I'll make bean and bacon soup. Don't be impressed; it involves opening a can, adding water and Worcestershire sauce and heating. I will be making grilled tuna fish sandwiches, though, as that sounds good to me!

Today I'm running errands, picking up all the little things Katie and I will need for our trip, then picking her up from school to go get her new glasses.

Tomorrow, we have my nephews wedding in the morning, and setting up for the reception in the afternoon. His Bridzilla wants a chocolate fountain, so we get to cut up fruit, pound cake, etc. along with winding Christmas lights in trees, setting up arches, tables and chairs, etc. I'll be glad when it's over, as she's really shown her true colors through this whole thing. Hopefully the marriage will work!

Sunday my little family will be decorating some graves around us. We have Alan's father and grandparents buried close to us, as well as our niece Carissa, and my aunt Martha. We'll deliver flowers to their graves, clean the headstones, and then have a barbecue at a park. We like to do this each year, so Alan has a chance to tell stories about his father and grandparents. His dad died when Katie was 2 so none of our kids really have any memories of him. This is one way to help them feel closer to him.

On Monday, we are getting up early and driving to Brigham city where my mom's parents are buried. It's about 2 hours away, so we make it a full day trip. Top that off with the fact that Monday is also our 18th anniversary, so we'll try to do something to celebrate that. Don't know what, though. Hopefully, we can talk some friends into watching the kids so we can at least go out to eat. We'll see!

That is quite an improvement in Recorder concerts, since my days of having to grin & bear it! Who knew is right! Glad it wasn't as bad as expected, but yeah, I'd still hide the recorder! ;)

Laura, My DD was an early reader, she also loved the Green Gables & Little House series. Those are good books!. I had gotten them for her, and when she was finished, I ended up reading them all myself!! :laughing:
