Tell me how you make your Homemade Macaroni & Cheese!

I am thinking of making some homemade macaroni & cheese today, I would to hear all the different ways that all my DIS friends make their's!


So I will start this is how I make mine, this is the way my mother and her sister's made their in West Virginia!

cook 1lb. macaroni (drain and rinse with hot water)

In a Pyrex baking dish
Put some macaroni in the cover the bottom, then add a little butter, raw onions, and slices of Velvetta cheese, repeat this for at least three layer's. The final layer, sprinkle a little cinnamon on the top, poor in some milk.

Bake in oven pre-heated oven at 350 for half hour, then at the end, turn up the oven to 400 to 450 and stay close by as you have to keep a watch on it, when cheese is melted and starting to brown just a little remove from the oven, left stand for 5 minutes!
 
I use Martha Stewarts recipe which is made with white cheddar and romano. The sauce is made seperately from the macaroni and then they're put together to bake in the oven. It's topped with homemade bread crumbs. OK, I think I'm going to be making it this weekend.
 
I make mine by first cooking the elbow macaroni about 6 minutes, not too long because it gets too mushy... I rinse the macaroni in cold water to stop the cooking and set aside. In a saucepan I melt 4 tbsps butter, and stir in 4 tbsps flour to make a roux. You have to wisk it on low heat for a few minutes so you get the "flour" taste out - and be careful not to burn. Then I slowly add in 3 cups milk, and cook a little bit until it is thick, then add 8-10 oz. of shredded chedder cheese, you can add paprika, cayenne, and a little salt. Then add in macaroni, put in baking dish. I melt some more butter, add 1/2 cup or so bread crumbs, mix, and put on top, then bake in the oven 375 degrees for about 25 minutes.

I make mine the same way, except I only add 2 cups of milk. On top, I sprinkle some extra cheddar cheese along with the bread crumbs.

We like sharp cheddar cheese for mac'n cheese. We add ground mustard and a little garlic salt for the spices.

Mac n Cheese:
1lb. Elbow noodles
2 packages Cracker Barrel Cheese(I use extra sharp cheddar, 1 white and 1 yellow)
1/2lb. cubed ham(I buy this already cubed)
Milk


Cook elbows until aldenta, drain, rinse in cold water

Slice the cheese into 1" slices

Rinse the ham in cold water(this gets rid of the juice they package it in)pat dry

Place half the elbows in botton of baking dish, top with cheese and half the ham

Put the rest of elbows on top add more cheese and rest of ham

My baking dish is not real large so I always have cheese left over, I put that around the outside of the elbows, and add milk (I just eyeball the milk, depends on how wet you want it).

Cover with lid and cook on 350 until cheese is melted and bubbly(Stir once half way through).
 
My mom used to make her version of Easy Mac, which is awesome but soooo bad for you.

16 oz (about half the box) of Large Elbow Macaroni - boil a drain
Grate 1 lb of White American Cheese (you get it from the deli counter, ask them for a chunk instead of slices) and layer it in a buttered casserole with the macaroni, dotting generously with butter and salt & pepper, top with a sprinkle of finely shredded cheddar and bake at 375 till brown and bubbly.

I've tried it with other cheeses and the White American from the deli counter is the only one that turns to a sauce when heated with butter. The others separate.
 
I love the stuff but I've tried at least 3 different recipes and every time my kids say they want the Kraft back next time. :(
 
I cook the noodles.

Then I place about 1/3 in the bottom of a 9x13 pan that I have sprayed with pam.

I place a layer of cheese, butter/magarine pieces and a sprinkle of flour over the noodles.

I repeat this 2 more times.

I then add milk to the pan until I start to see it come up the sides of the pan cover and bake at 350 for about 30 mins. I take the foil off and bake until it bubbles.

I have no idea what the amounts are, I just eyeball it.
 
Mine's really simple, but the kids like it a lot.

I boil the macaroni - elbow or shell. I don't like it mushy, so I don't cook it too long. I drain it, then add milk, velveeta cheese & a couple of teaspoons of Knorr powdered chicken boullion for flavor.

Cooks really quickly, and tastes yummy -- but I would like to try some of the ones you all have recommended.
 
This is only good if you like or at least don't mind cooked onion, but we LOVE it.

8 ounces macaroni
4 tablespoons butter
3/4 cup dry bread crumbs
1 small onion, minced
1 tablespoon all-purpose flour
salt and pepper to taste
1/4 teaspoon dry mustard
1 1/2 cups milk
2 cups shredded Cheddar cheese

DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Grease a 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C).
In a small saucepan, melt 2 tablespoons butter. Remove from heat and toss with breadcrumbs. Set aside.
In a medium saucepan, melt remaining 2 tablespoons butter over medium heat. Stir in onions and cook until translucent. Stir in flour, pepper, salt and dry mustard. Add milk, and stir constantly, until thickened. Remove from heat and stir in cheese. Place macaroni in prepared casserole. Pour cheese mixture over macaroni and top with bread crumb mixture.
Bake for 20 minutes, or until top is golden and bubbly.

I use this recipe also, but Martha gives the option to use gruyere instead of romano cheese - my kids like this better as the flavor is a little less "sharp." You can get this recipe on the Food Network web site.
 
I just returned from the grocery store and now I'm going to have to go back to buy the above ingredients. :blush: Right now nothing sounds better than mac & cheese. :sunny:

I knew there was another cheese option. I sometimes use all three. I love cheese! :teeth:
 
I make a white sauce using the recipe on the Wondra container (sort of a nonlumpy flour) and then add cheese (usually some Velveeta and some kind of cheddar or swiss - whatever I have on hand). I like it with cubed ham and baked for a while in the oven with some bread crumbs on top. Yummy.
 
I don't have one, but a friend has a recipe that uses paprika. It's very yummy!

Here's my recipe which is my Grandmother's. A favorite at our house especially during Lent.

2 cups uncooked Creamettes Elbow Macaroni
4 slices American Cheese
Parmesan Cheese
White Sauce
Cook macaroni (boiling water for 8 minutes)

Prepare White Sauce:
Butter (about 2 tablespoons)
Flour (about 2 tablespoons)
Milk (about 3/4 cup)
Blend in small saucepan over medium heat until well blended and starts thickening.

In baking dish layer cooked macaroni, American Cheese (broken up), Parmesan cheese, and white sauce.

Top with Parmesan cheese and white sauce.

Back in 350 degree over for 25 minutes. Switch to broil for an additional 3 minutes or so until top is crisp and starts browning.
 
YUMMM!! Keep them comming! If we do not go out to dinner tonight I must make one of these! hehe
