Everyone Irish on St. Patricks Day right??? Well what are you having for dinner tomorrow? I'm going to try a new recipe~Reuben Casserole. Anyone ever have it? Sounds pretty good. Just not sure what to have for dessert. Any ideas?
 
Each year my sister makes a wonderful St. Patrick's dinner. She had the dinner this past Saturday and she served (all homemade):

Irish soda bread
Potato soup
Shepard's pie
Beef stew w/Guinness

And she made a cheesecake with Bailey's Irish Cream for dessert.

YUM!!

P.S. Hey OP - I'm originally from Pittsburgh. :)
 
I think I will make shepard's pie with the mashed potato crust on top and Irish soda bread. I will have to have a shot of Bailey's too!!
 

Soda bread (homemade) and sheppards pie. We are also doing Irish cream coffee...my husband likes it and can drink coffee before bed. If I drink it, I'll be up all night from the caffiene...

We are having the ever-popular corned beef, potatoes, and cabbage in the crockpot. It's one of my family's favorite meals, and we eat it once every couple of months.

At least, I THINK we are having it. DH is suddenly in a crunch at work and has had to put in 12 hour shifts yesterday and today. Yesterday, he left for work at 6:30 AM, and didn't get home till almost 8 PM, poor guy. :sad2: If he has to do that again tomorrow, we will put off the corned beef till he can actually be home for dinner.

As for dessert, I have some chocolate chip mint ice cream in the freezer, so will probably use that and some Hershey's chocolate syrup and whipped-cream-from-a-can and make sundaes. :)

I am doing the meat in the crock pot overnight tonight with Guiness, brown sugar and some spices (it didn't come with a spice packet so I'll have to make that up unless I run to the store to get some pickling spices) and then let it cool tomorrow, cover it with more brown sugar and brown in the oven for dinner.
 
Isn't Shepard's Pie really a British dish? I realize there is a Irish version, but I never really associated a Shepard's Pie with Ireland, but then again, I associate Corned Beef and Cabbage with St. Patricks day and it's not originally an Irish dish either (variation of Bacon and Cabbage).

It doesn't have to have the spice packet - in fact I usually leave it off of mine.
The beef is already brined, so the spices do nothing towards that end, they just add an extra flavor... but honestly I don't miss them when i leave them off.

Some recipes I have seen say to substitute dried bay leaf, whole peppercorns, garlic, cloves, and some sort of seasoning salt if you don't have a spice packet.
 
We are having family over tomorrow night and we are having

Corned Beef
Cabbage
Carrots and Potatoes
Rolls and Irish Soda Bread
Cupcakes with shamrock sprinkles for dessert

....and of course a little Irish Beer
 
UH OH, I was planning to make chicken :scared1: ... but maybe I'll make some cabbage and potatoes for side dishes :) ...

If I had time, I would make Ger's Bread and Butter Pudding from Raglan Road. I found the recipe on the DIS after our last trip.

Unfortunately, my daughter's band director thought St. Patrick's Day was the perfect day to add an impromptu benefit concert featuring all of the school bands. Thought about begging off on account of :drinking1. But somehow I don't think that would fly. :shamrock: So our dinner will probably be fast food grabbed between work and going back to the school. Ah, well, any day you're Irish is a good day!
 
I make reuben casserole all the time. We love it. Here is my recipe:

4 pkgs Carl budding Corned beef (the kind in the sealed hanging packages with the lunch meat)

1 large can Sauerkraut-drained

1/3 bottle Thousand Island Dressing

1/2-1 pound Swiss cheese--shreaded

Rye bread cubed

1 stick butter

Chop up the corned beef--put in the bottom of a 9x13 in pan. Put sauerkraut over the top of the meat. Next drizzle the dressing over the kraut--you can use more dressing, but do not use less. Sprinkle the cheese over the dressing. Cover the cheese with the rye bread cubes--1 inch pieces. Drizzle butter over the top of the bread. Bake at 350 for 30 mins.


We are having corned beef in the slow cooker--does anyone know if I can or should add carrots to this?? Or add extra liquid?
 
"We" are not Irish, although DH has some Irish in there somewhere ;)
but we are having Corned beef and squash.
 
Three of my great grandparents came here from Ireland.
I'm having whatever they're serving at the party I'll be attending.

My great grandmother was Irish, but I lean heavily towards my German heritage, which is more. Since my more Irish wife will be at a show rehearsal I'll probably opt for a hot dog or burger.
 
:shamrock:Hey I'm definitely Irish (and this St Paddys Day is cold and damp but who cares-we're all off work/school so it's still fun) and I was thinking of going to TGI Fridays:rotfl2: Only kidding I'm having gammon with a whiskey glaze, spuds(potatoes) and carrots followed by Baileys coffees. That's tonight though-picnic of soup and sandwich for lunch (insane in this weather but traditional for us):shamrock:
 
I'm Irish! My father was half Irish and my mother was 1/4 Irish! My DMIL was 100% Irish so DH is half. I still can't figure out the percentage of our kids... Anyway, we're having corned beef and cabbage tonight!
 
Don't know yet -- it's my son's 5th birthday and he gets to choose what he wants for dinner (so far he says hot dogs :eek:)

Doesn't matter though, we're having our annual St. Patrick's Day party/birthday celebration on Saturday with all the Corned Beef and Cabbage and Guinness stew that we can eat!

I like the reuben cassarole recipe -- may have to add that to the menu too!
